Steps:
- Lightly salt and pepper both sides of the flank steak.
- Spread one side with mustard.
- To prepare stuffing, heat vegetable oil in a frypan, add onion and cook for 3 minutes until lightly browned.
- Add mushroom pieces and cook for 5 minutes.
- Stir in parsley, chives, tomato paste, and bread crumbs, then season with salt and pepper and paprika.
- Spread stuffing on mustard side of the flank steak, roll up jelly-roll fashion and tie with thread or string.
- To prepare gravy, saute bacon in a Dutch oven until partially done.
- Add the meat roll and brown on all sides, approximately 10 minutes.
- Add the finely chopped onions and saute for 5 minutes.
- Pour in the beef broth, cover Dutch oven, and simmer for 1 hour.
- Transfer meat to a preheated platter.
- Season pan juices in the Dutch oven with mustard, then salt and pepper to taste; stir in catsup.
- Serve the gravy separately.

- Butterfly the flank steak. To do this, lie the flank steak on a flat surface on a cutting board. Slice through the flank steak lengthwise, making sure not to cut all the way through when you get to the end of the steak. You want one long flank steak - twice as long and half as thin as when you bought it. Once cut, open the flank steak up like a book. Season the side facing you with salt & pepper.
- In a medium skillet, add 2 tbsp of olive oil and let it heat up. Once its hot, add the chopped onion and minced garlic. Let it cook for about a minute and then add the sliced mushrooms. Cook until the mushrooms are soft.
- Add the Marsala or red wine and let it cook down for just a minute or so. Once it has cooked down, add the spinach to the pan and cook until it is wilted. Remove from heat.

- Prepare the filling. Over medium heat, saute the onion and mushrooms for a few minutes. Add baby spinach, salt, and pepper, and saute until the spinach wilts. Remove from heat, add the roasted red peppers, and let cool. You may need to place it in the refrigerator for awhile to cool it off.
- Take the flank steak and carefully butterfly it, slicing in the middle with a sharp knife. Lay it open on a cutting board. Season both sides with salt and pepper (to taste), and drizzle with olive oil.
- When the filling is cooled off, strain some of the liquid off, and then combine with the goat cheese. Mix with your hands. Spread the filling all over the flank steak, leaving about an inch from the ends. Then roll the steak up carefully, and try to avoid squeezing the filling out. Use some kitchen twine around the rolled up steak, securing it in about four places.
- ** When rolling the steak up, be sure to watch the direction you are rolling so that when you slice it, you are cutting AGAINST the grain. This is very important to get a tender piece of meat.

- If you haven’t done so already, butterfly the steak by lining your knife up parallel to the cutting board and slicing through the center of the steak, stopping just before cutting it all the way through. Open up the flank steak up on the fold, doubling the original length.
- Even out the thinness of the steak using a meat tenderizer so it’s about 1/2 inch thick. A little less thick is okay. Season with salt and pepper on both sides. Set aside on a large cutting board.
- In a large, oven-safe skillet, like a cast-iron skillet, heat 1-2 tablespoons of olive oil over medium heat. Add the mushrooms and cook, stirring occasionally, for 5-7 minutes until softened and slightly browned. Add the garlic and cook for another 2 minutes until fragrant. Stir in the spinach then quickly remove from the heat. Spread mushroom and spinach mixture eevenly over the seasoned beef. Sprinkle with coat cheese if using.
