Mushroom and Pea Curry image

This Mushroom and Pea Curry is designed to be served as a side with three or four other Indian dishes, but I like it served over rice just as well.

350 g mushrooms, quartered
2 -3 green chilies, sliced and seeded
4 tablespoons olive oil
1/2 teaspoon cumin seed
1 teaspoon garlic, finely chopped
2 teaspoons grated ginger
1 teaspoon ground coriander
1 teaspoon garam masala
1 tablespoon tomato puree
1 teaspoon salt
150 g fresh peas or 150 g frozen peas
2 tablespoons fresh coriander
300 ml chicken stock
2 tablespoons creme fraiche or 2 tablespoons Greek yogurt

Steps:

  • Heat the oil in a large frying pan, until very hot.
  • Add the cumin seeds and sizzle for 10 seconds.
  • Add the garlic, mushrooms, ginger and chillies.
  • Cook, stirring until the mushrooms turn silken.
  • Put in the ground coriander and garam masala and stir for 30 seconds.
  • Now add the tomato purée, salt, peas and fresh coriander, and water or stock.
  • Stir well, bring to a boil.
  • Cover and simmer for five minutes.
  • Stir in the sour cream and cook gently for one more minute.
  • Eat immediately, either over boiled basmati rice or as a side dish with other indian dishes.

This mushroom curry recipe is quick and easy to prepare either on the stovetop or in the Instant Pot or pressure cooker. It is healthy, creamy, and very delish, making a hearty weeknight meal. It's also keto, gluten-free, vegan, and vegetarian.

1 tsp olive oil
1 medium onion (diced)
1 lb mushrooms (sliced)
2 garlic cloves (minced)
1 tbsp grated fresh ginger
2 tbsp curry powder
¼ tsp chili powder
1 ½ cups tomato sauce
2 tbsp tomato puree or paste
¾ cup full-fat coconut milk
¼ cup vegetable stock or broth
1 lime (juiced)
2 tbsp chopped cilantro

Steps:

  • Press the sauté function and let it heat for about 5 minutes. Pour the oil and cook the onion for about 3 minutes, stirring often to keep from browning. Add the mushroom and cook for about 2-3 minutes, stirring every now and then. Add the garlic and ginger and cook for 1 minute.
  • Then stir in both the curry powder and chili powder, the tomato sauce and puree, coconut milk, and stock.
  • Cancel the sauté function, lock the lid, turn the valve, and set on manual high pressure for 3 minutes. If you have a pressure cooker, you may press the stew button and then manually set for 3 minutes. Do a quick release.
  • Then stir in the lime juice and serve with the cilantro on top.

1 1/4 lb medium domestic mushrooms
2 tsp Canary Island Garlic & Herb Splash
1/2 tsp celtic salt
2 slices bread
1/4 cup coarsely chopped fresh cilantro leaves
1 tbsp lemon juice
2-3 cloves garlic, peeled, crushed & finely chopped (1 1/2 tsp)
1/4 tsp freshly ground black pepper

Steps:

  • Just before cooking, wash the mushrooms and drain them well. Place the whole mushrooms in a large skillet with the Splash and salt Set the skillet over a medium heat, cover and cook for about 1 5mintues, or until all the liquid that emerges from the mushrooms as they cook disappears. Meanwhile, toast the bread and cute the slices into 1/2-inch cubes. Uncover the mushrooms and continue cooking them until they are nicely browned on all sides. Then add the cilantro, lemon juice, garlic, and pepper. Saute the mixture for 20 seconds. Add the croutons, toss for a few seconds and serve immediately.

  • Drain and rinse the peas. Put into a saucepan with 2-3 dried shiitake mushrooms and add water to just cover. Bring to a boil and cook covered until just tender, about 20-30 minutes.   • While the tomato is cooking down, drain the black-eyed peas, reserving the broth. Slice the dried shiitakes. Add the cooked black-eyed peas, sliced shiitakes, and ½ cup of the reserved broth or water to the tomatoes.
