AWARD WINNING CHILI CON CARNE
This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

Steps:
- Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
- Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
- Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
- In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

CHILI CON CARNE
This recipe is based on Emeril's Chili con Carne recipe. It is my most favorite chili recipe so I thought I would share. The best thing about this recipe is that you don't use beans, but if you must have them, they can easily be added.

Steps:
- Heat the oil in a large, heavy pot over medium-high heat.
- Add the meat and stir to break up the pieces.
- Cook, stirring, until the meat is brown and cooked through, about 5 minutes.
- Add the onion, green bell pepper, garlic, chili powder, Essence, salt, cumin, oregano, and cayenne, and cook, stirring, until soft, about 4 minutes.
- Put the whole tomatoes in a large mixing bowl and squeeze them with your hands to break them into pieces.
- Add the squeezed tomatoes and their juices, the tomato paste, sugar, and water to the pot.
- Stir well and bring to a boil.
- Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally.
- Remove the pot from the heat, ladle into a large bowl and top with the shredded cheese and serve with Crackers or tortilla chips.

WAYNE GRETZKY'S CHILI CON CARNE
This is a recipe printed in our home town newspaper years ago. It stated this was Wayne's favourite recipe for chili con carne. It has a good mix of tastes and textures and the surprise ingredient, pineapple, adds a cool refreshing finish.

Steps:
- Cook beef in a frying pan over low heat until a small amount of melted fat forms.
- Stir in green pepper, celery and onions.
- Raise heat to medium and cook until vegetables are soft and beef has lost its pink color (about 10 min.).
- Stir in tomato paste, tomatoes, beans and seasonings.
- Simmer over low heat 30- 45 min.
- ,stirring often.
- Add drained pineapple chunks just before serving.
- If desired, mixture can be thinned with juice of drained pineapple.
CHILI CON CARNE (COOKS COUNTRY)
This is a pretty simple, but delicious chili that surprised us both and has replaced our prior favorite which was a slightly more labor-intensive chili from Cook's Illustrated. Avocado and cheese are optional garnishes. The chili is really good by itself, but was amazing smothering my favorite food, a baked potato!

- Add the can of tomatoes and the chipotle chiles to a food processor and pulse until smooth.
- Cook the bacon in a large Dutch oven over medium heat until crisp. Transfer the bacon to paper towel-lined plate and reserve 3 tablespoons bacon fat.
- Pat the beef dry with paper towels and season with salt and pepper.
- Heat 1 tablespoon of the reserved bacon fat in empty Dutch oven over medium-high heat until just smoking. Working in batches, brown the beef on all sides (use a second tablespoon of the reserved bacon fat for the second batch). Be sure not to overcrowd the pan or the beef will steam and not brown. Transfer the browned beef to a bowl and set aside.
- Add remaining tablespoon of bacon fat, onion, and jalapeno to empty Dutch oven and cook until softened, about 5 minutes.
- Stir in chili powder, cumin, oregano, and garlic and cook until fragrant, about 30 seconds.
- Stir in water, pureed tomato mixture, bacon, browned beef, and sugar and bring to boil.
- Reduce heat to low and simmer, covered, for 1 hour.
- Remove cover, skim fat from the surface and continue to simmer uncovered until meat is tender, 30 to 45 minutes.
- Ladle 1 cup chili liquid into medium bowl and stir in muffin mix; cover with microwave-safe wrap/waxed paper. Microwave until mixture is thickened, about 1 minute. Slowly whisk mixture into chili and simmer until chili is slightly thickened, 5 to 10 minutes. Season with salt and pepper before serving. Garnish with avocado and cheese if desired.
- The chili can be refrigerated for up to 3 days.
MY FAVORITE CHILI
This is the only chili recipe I've used for the last 8 years or so. I think its pretty outstanding. I vary the hot ingredients depending on who will be eating it and the mood I'm in. I've also used ground venison and it was just as good.

Steps:
- In a large kettle, stir fry the onion, green pepper, celery and garlic in the vegetable oil for about 8 minutes or until tender.
- Add the ground beef and cook until done.
- Drain.
- Return meat to kettle, add remainder of ingredients (and kidney beans) and enough water to come to the top of the chili ingredients.
- Stir til mixed completely.
- Simmer on low heat, uncovered for at least 3 hours.
- Top with cheddar cheese and sour cream if desired.

MY FAVORITE CHILI CON CARNE
I have been making this recipe for so many years (36 plus) that I do not remember where it originated. I just made it (in multiple) for a Super Bowl party and since there was a request for the recipe, thought I would post it for future reference. We like to add cheese on top when we eat it. I hope others of you will enjoy it also.

- Brown the beef, onions and green peppers together, then pour off grease.
- Add the other ingredients, stir, cover and let simmer 1 hour.

- Heat a large Dutch oven on the stove over medium heat. Once hot, add the oil and swirl to coat the bottom of the pot.
