I finally found the answer to getting my 4 year old daughter to eat broccoli, with my kids you can never go wrong with cheese. This recipe came from Food & family a free magazine from Kraft.

2 teaspoons vegetable oil
4 small boneless skinless chicken breasts
2 cups frozen broccoli florets
1 (10 3/4 ounce) can condensed cream of chicken soup
4 ounces Velveeta cheese, cut up
2 cups prepared cooked rice

Steps:

  • Heat oil in large skillet on med-high heat.
  • Add chicken, cook 7 minutes. turning after 3 1/2 minutes. Add broccoli, stir. Stir in soup and velveeta until well blended. Reduce heat to med low and simmer 7 minutes or until chicken is cooked through. Serve over rice.

2 cups broccoli florets
1 onion, sliced
1 tablespoon margarine
1 (10.75 ounce) can condensed cream of potato soup
1 cup milk
½ cup water
¾ teaspoon chopped fresh basil
¼ teaspoon ground black pepper
⅓ cup shredded Cheddar cheese

Steps:

  • In a large saucepan over medium heat, saut E the broccoli and onion in the butter or margarine, about 5 minutes, or until tender. Stir in the soup, milk, water, basil and pepper. Mix well and heat through, about 15 minutes. Add cheese and stir until melted.

1 (16 fl oz) bottle balsamic vinaigrette salad dressing (such as Kraft®)

Steps:

  • Place broccoli and salad dressing in a large resealable plastic bag, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours, turning bag occasionally.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Drain broccoli.
  • Grill broccoli on preheated grill until vegetables are tender and browned, turning occasionally, 5 to 7 minutes.

  • Steam-It– Some kids like steamed broccoli especially if you add a seasoning to it. My go-to seasoning is a mix of oregano, garlic, onion, salt, and pepper when I make it.
  • Raw– I know several children who only like broccoli raw. Try it cut into small “trees” with a side of their favorite dipping sauce.
  • From Frozen– Frozen broccoli is not my favorite way to eat it, but some kids prefer the mushy texture over a fresh broccoli cooked al dente. Try it mixed with other vegetables you know they like and they my just gobble it up.
  • Spiralize It– This is a new trend where you use a handy spiralizer device to rip the broccoli and other vegetables into shreds that make noodles. You can then sauté the noodles and put them in Italian sauces or Asian stir-fries.
  • Pizza– If you have a pizza loving kid, try adding small bites of broccoli to the pie. While it’s no guarantee they will eat it, when they are demanding it for the fifth night in a row they either get a few pieces of broccoli on top or NO PIZZA.
  • Meatballs– Speaking of shredding, hiding shredded broccoli stems and shredded zucchini in meatballs is one of my favorite tricks. If you child is extremely sensitive, try cooking the shredded vegetables a little bit before adding it to your favorite meatball recipe.
  • Soup – Cream of broccoli soup is delicious and may just be the introduction to get your chid to start eating broccoli. You can also try adding it to loaded baked potato soup, or homemade chicken pot pie.
  • Puree It– I have found if I make a peanut butter and banana smoothie, I can successfully hide quite a few vegetables inside that my child normally would not touch, including broccoli.
  • Roast It– Add a little-granulated garlic and onion, Olive Oil and a sprinkle of lemon juice. Roast at 450 degrees for 10 minutes. Sprinkle with parmesan cheese as it leaves the over.
  • Pasta– Italian red sauce tends to be pretty kid friendly and does a great job of hiding veggies. Chop that broccoli up in tiny bites and mix it right into your favorite pasta sauce or lasagna.
