2 cups navy beans
8 cups water
4 carrots, sliced
3 tablespoons balsamic vinegar
2 onions, chopped
5 cloves garlic, minced
1 cup celery leaves, chopped fine (and tender inner stalks)
1 bell pepper, chopped
2 bay leaves
1 (15 ounce) can tomato sauce
1/4 teaspoon ground cloves
1/2 teaspoon mustard powder
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 tablespoon parsley flakes
1/2 teaspoon salt
1 dash Tabasco sauce
2 tablespoons barley
1 teaspoon miso

Steps:

  • Wash and pick over beans.
  • Cover with water and soak overnight (or boil for 10 minutes and let sit for an hour).
  • Discard soaking water, rinse beans and put in a large soup pot.
  • Add the 8 cups of water and bring to a boil.
  • Cover tightly and reduce heat to a low simmer.
  • Add carrots.
  • In a non-stick pan saute onion in balsamic vinegar until it carmelizes (this takes a while on low heat).
  • Add garlic, celery leaves, and bell pepper.
  • Continue sauteing, adding more liquid as necessary.
  • When the mixture has cooked down somewhat, add it to the beans.
  • Add the remaining ingredients except the miso.
  • Stir in the miso and simmer from 1 to 2 more hours (depending on when you're ready to eat and if you can resist the aroma).
  • Remove bay leaves.

1 (1 lb) bag dried navy beans
1 -2 chopped onion
1 clove garlic
2 -3 smoked ham hocks (Best results if you tie them into a large piece of cheesecloth)

Steps:

  • Pick over the beans, removing any small stones or beans that just don't look "right".
  • Cover the beans with water in a crockpot (this is usually 2-3 cups of water).
  • Now put the remaining ingredients in a soup pot or crockpot and simmer for another few hours.
  • Mom usually mashes a cup or two of the beans to thicken the soup, but you don't need to do this if you prefer a clear broth.
  • Remove the ham hocks and carefully pick apart, removing the tiny bits of meat from the bones.
  • Return the meat to the soup.
  • Throw out the bones, gristle and skin from the ham hocks.
  • If you've put the hocks in cheesecloth, it helps to keep the little bones that can resemble beans from making their way into the soup as the hocks tend to disintegrate during cooking.
  • If the soup has cooled considerably, get the heat back up and serve.

This is a wonderful hearty soup, great for using leftover ham from the holidays. Note 1: For a richer-tasting stock, take half of the cooked beans and puree them with the metal blade of your food processor and then add them back to the soup. Note 2: You can soak the beans overnight to speed up the preparation process and omit cooking in the first step of the directions. This soup is comfort food at its best. You will love it. Don't let the number of Steps in the Directions divert you: I always try to make my preparation directions explicit and detailed...to make preparation easier, not more difficult!

1 lb dried navy beans (white peas, about 2 cups)
3 large carrots, trimmed, peeled and cut into 3 inch lengths
2 stalks celery, washed, de-veined, and cut into 3 inch lengths
1 large yellow onion, quartered
6 cups water
8 ounces sliced ham (or cooked bacon)
2 tablespoons granulated sugar
1 teaspoon salt
1 teaspoon white pepper
1 pinch ground nutmeg
4 teaspoons sour cream (optional)
sherry wine (optional)

Steps:

  • Wash beans in a colander.
  • Sort beans, discarding stones and blemished beans.
  • Place beans in a large saucepan and cover with cold water by 1 inch.
  • Bring to a boil over high heat.
  • Boil for 2 minutes.
  • Remove from heat, cover and let stand for 1 hour.
  • Drain beans and return to saucepan.
  • In food processor bowl fitted with slicing blade, slice carrots, celery and onion.
  • Add carrot-vegetable mixture to beans in saucepan.
  • Add 6 cups water.
  • Bring mixture to a simmer over high heat.
  • Replace slicing food processor blade with metal blade.
  • Add ham (or bacon) and pulse until chopped.
  • Add ham or bacon to saucepan.
  • Reduce heat and simmer, covered, stirring occasionally, until beans are very tender, about 1 and 1/2 hours.
  • Add sugar, to taste.
  • Add salt, white pepper, and pinch of ground nutmeg.
  • Serve soup in heated bowls.
  • If desired, add 1/2 t sour cream or creme fraice to top each serving, or.
  • add dollop of sherry to each serving.
  • Enjoy.

1 (16 ounce) package dried navy beans
water to cover
7 cups chicken stock
½ cup margarine
4 carrots, chopped
1 onion, chopped
½ pound bacon

Steps:

  • Clean and sort the beans. Place them in a large bowl with water to cover and soak for 3 hours.
  • In a large pot over medium heat, combine the beans and the chicken stock and allow to simmer.
  • Meanwhile, melt the butter or margarine in a large skillet over medium heat. Add the carrots and onion and saute for 10 minutes, or until onion is caramelized. Add this mixture to the pot.
  • In the same skillet over medium high heat, saute the bacon for 10 to 15 minutes, or until it is crisp. Drain the grease and add the bacon to the pot. Continue to simmer the soup over medium heat, stirring frequently, until the beans are tender and the soup has thickened.

3 cups (1-1/2 pounds) dried navy beans
1 can (14-1/2 ounces) diced tomatoes, undrained
1 large onion, chopped
1 meaty ham hock or 1 cup diced cooked ham
2 cups chicken broth
2-1/2 cups water
Salt and pepper to taste
Minced fresh parsley, optional

Steps:

  • Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Place in a Dutch oven. Add the tomatoes with juice, onion, ham hock, broth, water, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until beans are tender, about 1-1/2 hours., Add more water if necessary. Remove ham hock and let it stand until cool enough to handle. Remove meat from bone; discard bone. Cut meat into bite-sized pieces; set aside. (For a thicker soup, cool slightly, then puree beans in a food processor or blender and return to pan.) Return ham to soup and heat through. Garnish with parsley if desired.

2 cups navy beans, soaked overnight
2 smoked pork hocks or 1 ham bone
1 small diced onion
2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons sugar
2 cups sliced carrots
1 cup diced celery
1 cup diced potato
enough water, to cover all ingredients in the pan

Steps:

  • Cook pork hocks or ham bone and the onion for one hour in enough water to cover the bones.
  • Add beans, salt, pepper and sugar and more water to keep all ingredients covered.
  • Cook 1 hour or till beans are soft.
  • Add carrots and celery, cook for 30 minutes.
  • Add potatoes and cook 30 more minutes.
  • Season with more salt and pepper if desired.

SIMPLE "DEPRESSION" NAVY BEAN SOUP



Simple

Being a child of the depression, my mother used to make this very simple soup. I think the catsup makes a nice subtle addition to the flavor, without making it too "tomatoey". You can dress this up as much as you like depending on your ingredients and inclination. Feel free to add more or less of any of the vegetables and seasonings.

2 ham bones or 2 chopped ham
2 packages dried navy beans
1 medium onion (minced)
2 -3 stalks celery (diced)
1 -2 carrot (grated or finely chopped)
2/3 cup catsup (or more)
2 -3 tablespoons Worcestershire sauce (or more)
3 -5 dashes celery salt
3 -5 dashes garlic salt
instant mashed potatoes
1 tablespoon dried celery flakes, if available
salt and pepper
water
ham bouillon cube or chicken bouillon cube (but add before the salt and taste so as not to get too salty--can always add salt later) (optional)
bay leaf (optional)
Tabasco sauce (optional)
Mrs. Dash seasoning mix (optional)

Steps:

  • Soak beans overnight according to package directions.
  • Pour off extra water.
  • Add water to about 2 inches or more over the beans (depending on how"soupy" you want it).
  • Can saute the vegetables first if you want to get fancy or just throw them in the pot with all the other ingredients, except the mashed potatoes.
  • Bring to a boil, then simmer until the beans are tender---the longer the better.
  • Add dried mashed potatoes gradually to bring soup to desired thickness.
  • Serve with crackers (oyster crackers are good).
