my mom's apple dumplings are famous in my family and they are really easy to make. my mom makes her own pie crust but i do better with frozen. feel free to use your own crust recipe though!

4 small apples
4 teaspoons sugar
4 teaspoons cinnamon
nutmeg
1/4 cup butter

Steps:

  • roll out pie crust. cut into 4 even sections.
  • peel, core, and quarter apples.
  • place 1 whole apple into 1 section of dough. fill with 1 teaspoons sugar, 1 teaspoons cinnamon, a pinch of nutmeg, and 1 pat of butter. bring up sides of dough to enclose apple. place in greased baking dish.
  • repeat with rest of apples.
  • bake at 350F for 20 minutes or until apples are soft.

1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons butter
3 to 6 drops red food coloring, optional
DUMPLINGS:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup shortening
1/3 cup 2% milk
6 small tart apples, peeled and cored
4 teaspoons sugar, divided
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
6 teaspoons butter, softened
3/4 cup heavy whipping cream

Steps:

  • For syrup, in a small saucepan, bring the water, sugar, cinnamon and nutmeg to a boil, stirring occasionally. Remove from the heat; add butter and food coloring if desired. Stir until butter is melted; set aside. , For dumplings, in a small bowl, combine the flour, baking powder and salt; cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough forms a ball. , On a lightly floured surface, roll dough into an 18x12-in. rectangle. Cut into six squares. Flaky biscuit dough is wrapped around crisp apples and topped with a rich butter sauce to create delicious cinnamon-spiced apple dumplings. My grandmother learned this recipe from her grandmother when canned biscuit dough was first invented. And our family has never stopped making it!

nonstick baking spray
¾ stick unsalted butter, melted
½ cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 large Granny Smith apple - peeled, cored, and diced
2 tablespoons warm water
1 (10 ounce) can refrigerated flaky biscuit dough
½ stick unsalted butter
3 tablespoons all-purpose flour
6 tablespoons water
1 tablespoon white sugar
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a square baking pan with nonstick spray.
  • Pour melted butter into a bowl; add sugar, flour, and cinnamon for dumplings and whisk until fully combined with the butter. Toss apples in mixture to coat; add 2 tablespoons warm water and mix to combine.
  • Gently stretch out the biscuits one at a time until they're large enough to fit 1 tablespoon apple mixture. Be careful not to stretch them too thin, you don't want the dough to break.
  • Add 1 heaping tablespoon apple mixture to the center of each stretched-out biscuit. Gently tuck the dough around the mixture to seal each dumpling into a ball shape.
  • Line up the dumplings with the seal facing down. Use a sharp knife to slice a tiny slit into the top of each dumpling to allow them to vent while cooking.
  • Bake in the preheated oven until nearly golden brown, 15 to 25 minutes.
  • While dumplings are baking, melt butter for sauce in a medium saucepan over medium-low. Slowly sprinkle flour into the butter, whisking the entire time. Add water and stir to combine. Remove from heat. Whisk in sugar and vanilla extract.
  • Remove dumplings from the oven and pour sauce on top. Continue to bake until the edges of the corner dumplings start to brown and pull away from the sides of the pan, 5 to 6 minutes more.

2 ¼ cups all-purpose flour
¾ teaspoon salt
¼ teaspoon ground cinnamon
¾ cup shortening
7 teaspoons ice cold water, or as needed
6 medium apples, peeled and cored
½ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
2 tablespoons unsalted butter
1 cup water
½ cup white sugar
½ cup light corn syrup
2 tablespoons unsalted butter
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

Steps:

  • Whisk together flour, salt, and cinnamon for crust. Cut in shortening until very crumbly. Sprinkle enough water over the mixture to just hold the dry ingredients together; mix together and form into a ball. Wrap with waxed paper and chill in the refrigerator for 20 minutes.
  • Roll dough on a lightly floured surface (1/2 batch at a time) to a 1/8-inch thickness. Cut into six 7-inch squares. Reserve any extra dough for decorative garnish, if desired.
  • Place one apple in the center of each square of dough.
  • Combine brown sugar, cinnamon, nutmeg, and cloves in a small bowl. Divide mixture evenly between the apple cores and dot the top of each apple with 1 teaspoon butter. Bring the opposite corners of each square together at the top of each apple, pressing gently to seal the seams. Transfer to a large baking dish, making sure the dumplings do not touch.
  • Preheat the oven to 500 degrees F (260 degrees C).
  • Combine water, sugar, corn syrup, butter, cinnamon, and nutmeg for syrup in a pan and bring to a boil. Allow to boil for 3 minutes. Pour syrup mixture over the top of all of the dumplings.
  • Bake immediately in the preheated oven until the crust begins to turn light golden brown, 5 to 7 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C) and bake, occasionally spooning hot syrup from the bottom of the pan over the top of the dumplings, until apples are tender, 30 to 35 more minutes.

1 egg white, beaten

Steps:

  • 1. In medium saucepan, combine all sauce ingredients. Bring to a full rolling boil, stirring occasionally. Set aside.2. Heat oven to 375°F. In large bowl, combine flour, baking powder and salt. With pastry blender or fork, cut in shortening until mixture resembles coarse crumbs. Sprinkle flour mixture with milk while tossing and mixing lightly with fork, adding enough milk to form a soft dough. Shape dough into ball.3. My grandmother is famous for this recipe which has been a family favorite for generations. She will only make it during the fall, but I have a hard time sticking to the seasonal stipulation because they are so darn good! Grandma swears that Jonathan apples are the only decent apples to use in this recipe, but any other tart apple would work just as well. Enjoy!

3 cups flour
1 cup shortening (such as Crisco)
1 teaspoon salt
1/2 cup ice cold water
8 johnathan apples, peeled and cored
sugar
butter
cinnamon
1 cup sugar
2 cups water
4 tablespoons butter

Steps:

  • Creating the pie dough:.
  • Blend flour, salt, and shortening together using a pastry cutter until the mixture is about the texture of corn meal.
  • Add 1/2 cup of ice cold water and mix the dough (I find using my hands for this is easiest). If dough is too dry, add a bit more water but sparingly.
  • Roll dough out on a lightly floured surface to 1/8 inch thickness. Cut into eight squares.
  • Filling the dumplings:.
  • Place one apple on a square of pie dough. Fill the apple with sugar, sprinkle with cinnamon, and dot with butter.
  • Bring corners of pie dough to top of apple and pinch shut.
  • Place finished dumplings in a 9x13 greased pan.
  • Syrup:.
  • Bring to boil sugar, water, and butter in a sauce pan. Boil for two minutes.
  • Pour syrup mixture around the dumplings.
  • Bake at 400 degrees for 40 minutes or until golden brown. Baste the dumplings with the syrup from the pan every 5 to 7 minutes.
