This is a chicken casserole with a crispy crunchy potato chip topping. It is easy to make and tastes wonderful.

2 cups chopped, cooked chicken meat
1 cup cooked white rice
1 (10.75 ounce) can condensed cream of chicken soup
⅔ cup mayonnaise
2 tablespoons grated onion
½ cup chopped celery
1 (8 ounce) can sliced water chestnuts
1 tablespoon lemon juice
½ cup shredded sharp Cheddar cheese
2 cups crushed potato chips
¼ cup water
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl combine the chicken, rice, soup, mayonnaise, onion, celery, water chestnuts, lemon juice, water, salt and pepper. Mix well. Spread this mixture into a lightly greased 9x13 inch baking dish. Cover with cheese, then potato chips. Bake in the preheated oven for 20 to 25 minutes or until the potato chips are lightly browned.

3 pounds cooked boneless chicken breasts
2 tablespoons finely minced onion
2 tablespoons lemon juice
1 cup chopped celery
1 cup reduced-fat mayonnaise
8 ounces sour cream
1 (8-ounce) can sliced water chestnuts
1 (10.5-ounce) can cream of chicken soup
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Crushed potato chips, for garnish
1 sprinkle paprika

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Butter a 2- to 2 1/2-quart casserole dish.
  • Cut the cooked chicken into bite-sized pieces.
  • In a mixing bowl, combine the chicken, celery, mayonnaise, cream of chicken soup, sour cream, water chestnuts, onion, and lemon juice. Season with salt and pepper, and mix well.
  • Pour the chicken mixture into the prepared casserole dish.
  • Top with crushed potato chips and sprinkle on paprika.

4 pounds medium red potatoes, quartered
3 pounds ground chicken
4 medium carrots, finely chopped
2 medium onions, finely chopped
1/4 cup all-purpose flour
2 tablespoons tomato paste
1-1/2 teaspoons salt
3/4 teaspoon pepper
1/4 teaspoon minced fresh thyme
1-1/4 cups chicken broth
1 cup whole milk
6 tablespoons butter, cubed
1-3/4 cups shredded cheddar cheese

Steps:

  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender., Meanwhile, in a Dutch oven, cook chicken, carrots and onions over medium heat until meat is no longer pink; drain. Stir in flour, tomato paste, salt, pepper and thyme. Add chicken broth; bring to a boil. Reduce heat; simmer, uncovered, 6-8 minutes or until thickened., Preheat oven to 400°. Divide mixture between two greased 13x9-in. baking dishes. Drain potatoes; place in a large bowl. Add milk and butter; mash until smooth. Stir in cheese.
