20 ounces frozen corn
3 tablespoons butter
8 ounces cream cheese, cut in chunks
1/4 teaspoon salt
1/8 teaspoon pepper
parsley

Steps:

  • In medium saucepan, warm corn slightly covered in water to about room temperature.
  • DO NOT OVER COOK.
  • Drain corn, place back in pan.
  • Add butter and cream cheese.
  • Cook, stirring over medium heat only until melted, add salt and pepper.
  • Pour into serving bowl and sprinkle slight amount of parsley for color.

1/3 cup all-purpose flour
1 cup heavy whipping cream
1 cup whole milk
1/4 cup sugar
1 teaspoon salt
Dash white pepper
5 cups frozen corn, thawed
1/4 cup grated Parmesan cheese

Steps:

  • In a saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add cream, milk, sugar, salt and pepper. Bring to a boil; boil and stir for 2 minutes. Add corn; heat through., Transfer to an ungreased 1-1/2-qt. broiler-proof dish. Sprinkle with Parmesan cheese. broil 5 in. from the heat for 3-5 minutes or until lightly browned and bubbly.

My Thanksgiving Cream Cheese Corn image

I saw a lady make this recipe on television one day about 30 years ago and I've been using it ever since for one of my Thanksgiving sides. It takes about 5 minutes to throw it together and it's a big hit with my guests. Since my son grew up and moved away, he gets invited to Thanksgiving at a friend's house and always makes this to take along.

1 - large bag frozen corn, no need to thaw
1 - 8 oz. container whipped cream cheese with or without chives (or one 8 oz. block of cream cheese)
- salt and pepper to taste
- paprika

Steps:

  • Spray large casserole dish. Place frozen corn in casserole and mix together with cream cheese until well mixed. Sprinkle a little salt and pepper to taste. Shake a little paprika over top of entire casserole, cover with a lid and bake at 350 degrees for approximately 35-40 minutes.

1 cup whipping cream
1 cup half-and-half
1 teaspoon salt
1 teaspoon sugar
1 pinch cayenne pepper
2 tablespoons melted butter
2 tablespoons flour

Steps:

  • Combine all ingredients except butter and flour. Bring to a boil and simmer for 5 minutes.
  • Mix together the flour and the butter in small sauce pan. Heat slowly and stir until smooth. Add to simmering corn. Mix well, allowing mixture to simmer for 5 minutes. Remove from heat and serve.
