SIMPLE AND DELICIOUS MEAT SAUCE
A simple and delicious meat sauce recipe!

Steps:
- Heat olive oil over medium heat in pot.
- Add meat and cook until there is no more visible pink.
- Add chopped onion into meat mixture, stirring until semi-translucent, about 3-5 minutes.
- Add minced garlic and cook 1-2 minutes more, being careful not to burn. If heat is too high, turn to low.
- Once onions and garlic are cooked, add crushed tomatoes and diced tomatoes with green chilies.
- Stir well and reduce heat.
- Add tbsp of sugar.
- Stir to combine and let simmer for 10 minutes over low heat.
- Add seasonings.

- Heat oil in a large skillet over medium-high heat. Add onion, garlic, salt, and pepper. Cook until softened, 3 to 5 minutes.
- Add beef and cook, breaking up with a spoon until no longer pink, 4 to 5 minutes. Add tomato paste and cook 1 to 2 minutes.
- Add tomatoes and juice, breaking up tomatoes. Simmer over medium heat until thickened and saucy, 45 to 60 minutes. Season with salt and pepper, to taste.

- In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the pepper flakes and cook for 15 seconds. Add the onion and cook, stirring occasionally, until golden brown, about 15 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the tomato paste and cook, stirring constantly, for 1 minute. Add the tomatoes one at a time, crushing them by hand as you go. Season with 1 teaspoon salt and pepper to taste. Simmer the sauce over low heat, covered. Heat a large skillet over medium-high heat. Add the beef, pork, veal, savory, thyme, oregano, and fennel seeds. Season with 1 teaspoon salt and pepper. Break up the meat with a wooden spoon, and cook until it loses its raw color, about 7 minutes. Add the meat to the sauce, holding back any excess fat. Add the rind of the Parmesan, if using. Simmer the sauce, covered, over low heat, for 1 1/2 hours. (If the sauce gets too thick adjust the consistency with water.) Taste and season with salt and pepper to taste. Just before serving, remove the Parmesan rind and add the grated cheese. Cook's Note: 3 to 4 cups of this sauce will dress 1 pound of pasta, like spaghetti or rigatoni. It is also perfect for lasagna. This sauce freezes very well.

AMERICAN MEAT SAUCE
This sauce is a departure from the Italian version some of us know and love. The American version is slightly sweeter and has a distinct green pepper flavor.

- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook, stirring occasionally, until the onion becomes translucent but does not get any color, about 10 minutes. Increase the heat to medium-high, add the bell pepper, celery, garlic, a generous pinch of salt and a few grinds of pepper and cook, stirring occasionally, until tender, about 10 minutes.
- Add the beef, a generous pinch of salt and a few grinds of pepper to the pot and cook, stirring to break the meat into small bits, until browned, about 10 minutes. Stir in the tomato paste and oregano and cook, stirring, for 3 minutes.
- Add the Worcestershire sauce, tomatoes with their juices, sugar and bay leaf. Bring to a boil, reduce to a simmer and cook, stirring occasionally, until thickened, about 45 minutes.

MY MAMA'S MEAT SAUCE
This is probably the first thing that I ever learned to cook. My mother used to cook it while I took a nap as a child, and the smell would wake me up. It's really garlicky and the wine gives it a nice flavour. It also freezes really well. Enjoy!

- Add the crushed tomatoes, tomato sauce and bay leaves to the pot, stir and bring to a boil. Reduce the heat to a medium-low. Cover the pot and simmer for 2 to 3 hours, stirring occasionally. If your sauce is too thick add some of the beef or chicken broth to thin it out, or even pasta water.
- Taste for seasoning and adjust as necessary. Garnish with fresh parsley or basil and serve over pasta and garnished with Parmesan cheese.
