This is a down home recipe that I have used for years, and thought I would share it! The buttermilk marinade is terrific and is such a comfort food. However this is not a recipe that can be done quickly, but the wait is WELL worth it!

2 cups buttermilk
1 tablespoon Dijon mustard
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 whole chicken, cut into pieces
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon garlic powder
1 tablespoon onion powder
5 cups vegetable oil for frying

Steps:

  • Whisk together buttermilk, mustard, salt and pepper, and cayenne in a bowl, and pour into a resealable plastic bag. Add the chicken pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 to 8 hours.
  • When you are ready to cook the chicken, combine the flour, baking powder, garlic powder, and onion powder in the other plastic bag. Shake to mix thoroughly. Transfer one marinated chicken piece at a time into the dry ingredient bag, and shake well to ensure complete coverage. After all chicken pieces are coated, repeat the process by dipping them in the buttermilk marinade and shaking in the dry coating again.
  • Heat oil in a large frying pan over medium-high heat, making sure not to burn the oil. When oil is hot, fry chicken in batches until golden brown and juices run clear, turning chicken to brown evenly.

12 ounces buttermilk
1 tablespoons fresh thyme
1 tablespoons fresh rosemary
1 tablespoons flat leaf parsley
1 teaspoon cayenne pepper
Salt and pepper, to taste
All purpose flour, for dressing
Lard, for frying

Steps:

  • In a shallow bowl or baking dish mix together buttermilk, thyme, rosemary, flat leaf parsley, cayenne and salt and pepper. Add chicken and marinate in the refrigerator for 4 to 6 hours. Dredge marinated chicken in flour. Add lard to a heavy skillet, cook chicken over medium heat until golden brown, finish on a baking sheet in preheated 350 degree oven.;

Fried chicken is a Southern staple, and to be a good Southern cook you better know how to make it. I do. I like to use small fresh chickens for frying because the flavor of the meat is better. And speaking of flavor, I like to fry my chicken in pure pork lard, which gives it a richness and down-home essence that vegetable oil just can't replicate. You can buy good high-quality lard-and I'm not talking about the soapy-looking white blocks sold in some supermarkets-from any reputable butcher. What makes my fried chicken special is the mixture of spices I use-note that both chili powder and sugar are involved-and the tangy richness that buttermilk lends.

Number Of Ingredients 12

2 cups all-purpose flour
1 tablespoon salt
2 tablespoons finely ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon sugar
1 teaspoon smoked sweet paprika
2 eggs
4 cups buttermilk
1 small chicken (about 3 pounds), cut into 8 pieces (2 legs, 2 thighs, 2 breasts, 2 wings)
1 to 1 1/2 cups pork lard, vegetable oil, or peanut oil

Steps:

  • In a large bowl, combine all the dry ingredients. Mix together with a fork until thoroughly combined. Set aside.
  • In another large bowl, beat the eggs into the buttermilk. Coat the chicken pieces in the egg-and-buttermilk mixture, and then dredge them in the seasoned flour. Repeat, coating the chicken again with the egg-and-buttermilk mixture and then dredging them again in the seasoned flour mixture, to create a double layer of batter. Set the pieces on a clean platter.
  • Pour the lard or oil to a depth of 1 inch in a large cast-iron skillet, and heat it over medium heat until the temperature reaches 325˚F on a deep-frying thermometer. Add the chicken pieces, in batches, and cook for about 20 minutes, turning them over halfway through cooking. The wings will be done after 10 minutes. Drain the chicken thoroughly on paper towels, and serve immediately.

1 (3 1/2 pound) chicken, cut into 8 pieces
2 cups buttermilk
Salt
Vegetable oil, for frying
1 cup self-rising flour
1/2 teaspoon sweet paprika
Freshly ground pepper
1/4 teaspoon garlic powder

Steps:

  • Toss the chicken, buttermilk and 1 teaspoon salt in a bowl. Cover and refrigerate, 1 hour.
  • Heat 1 inch of vegetable oil in a large deep skillet over medium-high heat until a deep-fry thermometer registers 360.
  • Mix the flour, paprika, 1/4 teaspoon pepper and the garlic powder in a shallow bowl. Remove the dark meat from the buttermilk, shake off the excess and roll in the flour mixture. Shake off the excess flour, place in the hot oil and fry, turning occasionally, until golden brown and cooked through, about 15 minutes (adjust the heat as needed). Drain on paper towels.
  • Reheat the oil to 360 degrees F. Repeat with the chicken breasts and wings, frying for about 15 minutes. Serve hot or at room temperature.

1 whole chicken, cut into 10 pieces
salt & freshly ground black pepper, to taste
2 cups buttermilk
6 garlic cloves, smashed divided
1 small bunch fresh sage, leaves only divided
1 cup flour
3 tablespoons flour
1 cup cracker crumb, finely crushed (Ritz crackers)
1 teaspoon paprika
1/2 cup lard, 1/2 cup chicken fat or 1/2 cup peanut oil
3 cups chicken stock
hot sauce, to taste (recommend Ardvark Habanero)

Steps:

  • Season chicken pieces with salt and freshly ground black pepper. Combine buttermilk with 3 smashed garlic cloves and half the sage. Add chicken to buttermilk mixture and marinate at least 2 hours or overnight.
  • Preheat oven to 375 degrees F. Combine 1 cup flour, cracker crumbs and paprika. Remove chicken from buttermilk and dredge in flour mixture, shaking off excess. Warm a large cast iron skillet over medium-high heat.
  • When pan is hot, add lard, fat or oil, and then breaded chicken pieces in a single layer (work in batches if necessary; don't crowd pan). Brown chicken on both sides until golden. Transfer chicken to a baking sheet with tongs leaving fat in pan. Bake until cooked through (12 to 15 minutes).
  • While chicken is baking, make gravy. Add remaining 3 cloves garlic and remaining sage to fat in skillet. Cook over medium heat 1 to 2 minutes until sage crisps and garlic becomes aromatic. Add remaining 3 Tbsp flour.
  • Whisk to combine, then cook 1 to 2 minutes. Slowly whisk in 1 cup chicken stock, whisking until there are no lumps, then whisk in remaining stock. Season with salt and freshly ground black pepper and bring to a gentle boil. Reduce heat to maintain a simmer and cook about 15 minutes, stirring occasionally.
  • Strain into a small saucepan and check for seasoning one more time, adding more salt and pepper if necessary. Add a few dashes of your favorite hot sauce, making it as spicy as you'd like.
  • Remove the chicken from the oven and let it rest 5 minutes. Serve with gravy.

Steps:

12 medium skin-on, bone-in chicken thighs
2 cups Jack's Old South Huney Muney Cluck Rub, or 1 recipe Basic Chicken Rub page 20)
3 1/4 cups chicken broth
Salt, to taste
Freshly ground black pepper, to taste
For The Sauce
1 cup Jack's Old South Vinegar Sauce or Basic Vinegar Sauce (page 22)
2 cups Jack's Old South Hickory Sauce or Basic Hickory Sauce (page 22)
1 cup ketchup
1 cup honey
1 cup maple syrup
1 1/4 cups seedless blackberry preserves
8 tablespoons (1 stick) unsalted butter, at room temperature
What You'll Need
Poultry shears
1 silicone cupcake mold, with holes punched through each cup (or an aluminum cupcake pan, also with holes punched through each cup)
1 13 x 9-inch aluminum baking pan
1 aluminum baking sheet

Steps:

  • Heat a smoker to 300˚F.
  • Using poultry shears, remove the knuckle on each end of each chicken thigh bone. Then trim the excess fat off the skin and meat of each thigh until the pieces are 3 to 4 inches wide, leaving about 1/4 inch of excess skin at the edges of the meat. Apply the chicken rub evenly to both sides of the thighs.
  • In the cupcake mold, place each thigh, skin side down, in an individual cup. Sit the mold in the baking pan, and pour the chicken broth into the pan, being careful not to pour it directly on top of the chicken. Place the pan in the smoker and cook, uncovered, for 1 1/2 hours.
  • Remove the baking pan from the smoker. Gently flip the thighs onto the baking sheet. Season the tops of the thighs with salt and pepper. Return the thighs to the mold cups, skin side up, and put the baking pan back in the smoker. Cook for 45 minutes.
  • Meanwhile, make the sauce: Put all the sauce ingredients into a blender and blend until thoroughly combined. In a medium pan over medium heat, warm the sauce until it is hot but not boiling. Set aside.
  • Remove the pan from the smoker, and unmold the chicken thighs onto the baking sheet, skin side up. Brush the thighs lightly with the warm sauce. Place the baking sheet in the smoker and cook for 30 minutes to allow the sauce to caramelize into the chicken skin.
  • Remove the baking sheet from the smoker, and serve the cupcake chicken immediately.

3 lbs broiler-fryer chickens, cut in pieces (I use just legs & thighs)
1 quart buttermilk
2 cups seasoned flour (I prefer Kentucky Kernel)
1 (48 ounce) bottle corn oil (Corn Oil ONLY)

Steps:

  • The night before, place chicken pieces in a large non-metal container or bowl, that has a sealable lid.
  • Pour the quart of buttermilk over the chicken. Place lid on container/bowl & refrigerate overnight, until ready to cook.
  • The next day, drain chicken in a large colander, but do NOT rinse.
  • Dredge chicken in seasoned flour; set aside.
  • Preheat oven to 350°F.
  • Heat corn oil in a large skillet. I use an electric skillet, set at 350-375°F.
  • Brown chicken, on both sides, in batches, but do NOT crowd. Using tongs, turn only once. About 10-15 minutes, each side, until golden brown.
  • Place browned chicken in a roasting pan; cover.
  • Bake for 1 hour.
  • ENJOY!
