NACHOS, COSTA BAJA STYLE



Nachos, Costa Baja style image

Quick and easy nachos - lighter on the cheese than most, but not light on flavour.

Number Of Ingredients 8

about 6 handsful of tortilla chips
200g sharp cheddar, grated
1 cup black beans, drained
1 red onion, finely diced
1/2 cup tomato salsa
1/2 cup finely chopped cilantro
1 avocado, finely diced
1 tomato (I used yellow from our garden), finely diced

Steps:

  • Heat oven broiler (grill) to high.
  • In a baking dish, layer about 1/3 of the tortilla chips and 1/3 of the cheese. Broil for 3-5 minutes until the cheese is melting and bubbling.
  • Meanwhile, take the beans, onion and cilantro and blend with either a fork or an immersion blender until you achieve the texture you want. I like mine a little smooth and a little chunky.
  • Remove the baking dish from the oven and layer on 1/2 the beans and about 1/2 of the salsa, top with some more cheese.
  • Briefly place back under the broiler until the cheese is melted.
  • Layer more nachos, beans and salsa, top with more cheese.
  • Broil again until cheese has melted.
  • Top with more salsa, the tomato and avocado.
  • Sprinkle a little chopped cilantro on top and serve hot with lime quarters.

These were my favorite nachos when I lived in SoCal. Now that I live in a small city in Northern MI I've had to adapt it for locally available ingredients. A touch of Baja California in Northern Michigan...perfect!

- tortilla chips
1 can(s) crab meat, well drained
1 can(s) small shrimp, well drained
1-2 - green onions (scallions), sliced
1 small can(s) sliced black olives, or you can slice your on
8 oz package(s) mexican blend shredded cheese
- chunky salsa
- sour cream

Steps:

  • Pile tortilla chips on dinner-sized plate. Sprinkle with 1/2 the cheese. Top with crab, shrimp, sliced green onions and black olives. Sprinkle remaining cheese over all.
  • Microwave on high for 1.5-2 minutes; until cheese melts.
  • Serve with salsa and sour cream if desired.

Whip up these speedy nachos for a casual get-together with friends. Crispy tortilla chips are loaded with salsa, cheese, spring onions, chilli and other toppings.

175g packet plain tortilla chips
225g jar salsa
a few sliced spring onions
a good chunk of cheese
a pinch of crushed chilli flakes
soured cream or guacamole (optional)

Steps:

  • Tip tortilla chips on to a baking tray, pour over salsa and scatter over a few sliced spring onions.
  • Grate over a good chunk of cheese (fontina is perfect, but cheddar will do). Add a pinch of crushed chilli flakes, then put under a hot grill for about 3 minutes to melt the cheese. Serve with soured cream or guacamole (optional).

  • To prepare the Herdez refried beans, bring 1 ½ cup of water to a boil, on a 1 to 2 qt. pot or frying pan, once the water is boiling, stir in the pouch contents. Cover and simmer on a low heat for 5 minutes, stirring occasionally.
  • Remove from heat, uncover, stir, and let sit 5 minutes before serving. I prefer a creamy texture and add a couple of tablespoon of extra hot water to obtain that kind of consistency. Set aside while you fry the tortillas.
  • Before you start frying the tortillas, cover a large plate with several paper towels to absorb any excess oil.
