This Thai chili dipping sauce or nam jim jaew is sweet, sour, a little spicy and has got that smoky flavor from a secret ingredient. It's very quick and easy to make and great with any type of grilled or fried meat, sticky rice and fresh vegetables. If you're a fan of Thai food, you're definitely going to love this flavorful jaew sauce!

2 shallots
1 green onion
2 tablespoons fish sauce
2 1/2 tablespoons lime juice
1 1/2 tablespoons granulated sugar
1 tablespoon Thai chili flakes
1 tablespoon toasted rice powder

Steps:

  • Remove the root of the green onion and finely chop the rest.
  • Peel the shallots and thinly slice them.
  • Pour the fish sauce, lime juice, and granulated sugar into a bowl and stir until the sugar is fully dissolved.
  • Add the chili flakes, toasted rice powder, chopped green onion, and sliced shallots and mix with a spoon. Enjoy the sauce with your main dish!

2 stalks green onion, thinly sliced
¼ cup cilantro chopped small
¼ cup shallot, thinly sliced
3 ½ Tbsp fish sauce
2 ½ Tbsp lime juice, fresh squeezed
4 Tbsp honey
2 tbsp tamarind concentrate
¼ cup toasted rice powder
1-3 Tbsp dried chili flakes (as needed)
1-2 Tbsp water (as needed)

Steps:

  • Start with uncooked rice. On medium-low heat on the stovetop, toast the uncooked rice in a dry pan until the rice is golden brown. Be careful with the heat level for this step, as the rice tends to cook fast after it browns. Let the rice cool to room temperature. Use a spice grinder to grind the rice into a coarse powder. Set aside for a minute. More detailed instructions on how to make Toasted rice powder.
  • Finely chop all the fresh herbs and place them in a small bowl.
  • Warm the honey in the microwave for 20-30 seconds until it turns runny. Let cool, then pour the honey into the bowl with fresh herbs. Stir well.
  • Add fish sauce, lime juice, water, tamarind puree, and chili flakes.
  • Stir everything together, taste, and adjust the flavor with more lime juice, fish sauce, or water.
  • Lastly, add the star ingredient and the toasted rice powder, and mix all the ingredients in a bowl. You can add 1-2 Tbsp of water if the sauce is too thick.
  • Place the sauce in a serving cup, and that's it. So quick and easy and so delicious! Enjoy!
