NANCY LINEHAN'S SEAFOOD CHOWDER

2 lobsters, 1 1/4 pounds each
4 bay leaves
3 large onions, diced
8 large red potatoes (about 4 pounds), peeled and cut in 3/4-inch dice
1 tablespoon kosher salt, plus more to taste
2 pints fresh or frozen minced clams, drained, liquid reserved
1 cup bottled clam juice
2 pounds skinned haddock, cut into 3-inch pieces
1 pound bay scallops
8 cups whole milk
2 cups heavy cream
Freshly ground white pepper to taste

Steps:

  • In a large pot, bring 6 quarts of water to a boil over high heat. Place lobsters headfirst into the pot, cover and cook for 10 minutes. Drain. When lobsters are cool enough to handle, crack their shells and remove the meat, along with 2 tablespoons of the green tomalley, found where the tail separates from the body, and if there is any, 1 tablespoon of the pink roe, found in the same place. Cut the meat into 1/2-inch pieces and set aside. Discard the shells.
  • Place the bay leaves, onions, potatoes and salt into a large heavy-bottomed pot. Add all the clam juice and enough water to just cover the vegetables. Bring to a boil. Reduce heat to medium, cover and cook until the potatoes are still firm but can be pierced with a fork, about 15 minutes.
  • Add the lobster meat, tomalley, roe, clams, haddock and scallops to the pot and stir to combine. Lower the heat and simmer, covered, for 25 minutes.
  • Add the milk and cream and continue to simmer, uncovered, for 25 minutes. Season to taste with salt and white pepper. Remove the bay leaves and serve, with oyster crackers if desired.

1 pound large shrimp (32 to 36 per pound), peeled and deveined (save shells for stock)
1/2 pound scallops
1/2 pound monkfish
1/2 pound fresh lump crabmeat, picked over to remove shells
1/4 pound unsalted butter
1 cup peeled and medium-diced carrots (4 carrots)
1/2 cup medium-diced yellow onion (1 onion)
1 cup medium-diced celery (3 stalks)
1 cup medium-diced small white or red potatoes
1/2 cup corn kernels, fresh or frozen
1/4 cup all-purpose flour
1 recipe Seafood Stock, recipe follows
1 1/2 tablespoons heavy cream (optional)
2 tablespoons minced parsley
Salt and freshly ground black pepper to taste
2 tablespoons good olive oil
Shells from 1 pound large shrimp
2 cups chopped yellow onions (2 onions)
2 carrots, unpeeled and chopped
3 stalks celery, chopped
2 garlic cloves, minced
1/2 cup good white wine
1/3 cup tomato paste
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
10 sprigs fresh thyme, including stems

Steps:

  • Cut the shrimp, scallops, and monkfish into bite-sized pieces and place them in a bowl with the crabmeat.
  • In a heavy-bottomed pot, melt the butter; add the carrots, onions, celery, potatoes, and corn and saute over medium-low heat for 15 minutes, or until the potatoes are barely cooked, stirring occasionally. Add the flour; reduce the heat to low and cook, stirring often, for 3 minutes. Add the Seafood Stock and bring to a boil. Add the seafood; reduce the heat and simmer, uncovered, for 7 to 10 minutes, until the fish is just cooked. Add the heavy cream, if desired, and the parsley. Add salt and pepper to taste, and serve.
  • Warm the oil in a stockpot over medium heat. Add the shrimp shells, onions, carrots, and celery and saute for 15 minutes, or until lightly browned. Add the garlic and cook 2 more minutes. Add 1 1/2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour. Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. You can make up the difference with water or wine if you need to.

2 (15 1/2 ounce) cans of loaded baked cream of potato soup
1 cup milk
1 teaspoon dill
1 teaspoon black pepper
bacon, to crumble into if desired
1/4 cup butter
3 sticks celery, chopped less if desired

Steps:

  • In a roaster cooker place seafood and butter along with the celery let cook at 350 degrees for about 20 mins stirring occasionaly.
  • add the soup, milk, and seasonings lower temp to about 150 cook till hot serve with bread. enjoy!

This is one of my favorite recipes to serve on a cold, rainy day in Ireland. It is the most requested recipe that I have. It is flexible and you can use various seafood ingredients depending on availability and preference. Very nice with Irish brown bread.

½ cup chopped onion
½ cup chopped celery
4 ½ cups milk
1 (10.75 ounce) can condensed cream of celery soup
1 ½ cups diced potatoes
1 tablespoon dried dill weed

¼ teaspoon ground black pepper
¼ teaspoon caraway seeds
3 dashes hot pepper sauce (such as Tabasco®)
salt to taste
1 (8 ounce) salmon fillet, cut into cubes

Steps:

  • Melt butter in a skillet over medium-high heat. Saute onion and celery until tender, 3 to 5 minutes. Add milk, canned soup, potatoes, dill, red pepper flakes, black pepper, caraway seeds, hot pepper sauce, and salt. Bring to a boil. Simmer until potatoes are slightly tender, about 15 minutes. Add salmon and shrimp. Cook until opaque, about 3 minutes.

⅓ cup butter
1 teaspoon olive oil
1 onion, minced
⅓ cup all-purpose flour
1 quart half-and-half, or as needed
2 cups bar clams, drained with juice reserved
⅓ cup grated Parmigiano-Reggiano cheese
2 potatoes, cubed
2 cups cream-style corn
1 large ear corn, kernels cut from the cob
1 cup sliced cherry tomatoes
1 ½ cups water, or as needed
sea salt and coarsely ground black pepper to taste
1 fresh haddock fillet, cut into 1-inch pieces
2 cups large shrimp, peeled and deveined
1 cup canned lobster meat, with juice

Steps:

  • Melt butter with olive oil in a large pot over medium-low heat; stir in onion and sauté until translucent, about 5 minutes. Whisk flour into butter mixture; whisk in half-and-half and juice from drained clams.
  • Stir Parmigiano-Reggiano cheese into onion mixture until melted, about 2 minutes; stir in potatoes, cream-style corn, corn kernels, and cherry tomatoes. If soup is very thick, stir in water, about 1/2 cup at a time, as desired; bring soup to a simmer and cook until potatoes are tender, about 15 minutes. Season with sea salt and pepper.
  • Stir drained clams, haddock, and shrimp into soup; simmer until haddock and shrimp are fully cooked for 5 minutes. Stir in lobster and its juice; cook just until heated through.

This is an outstanding fish chowder - I make it every Christmas Eve. It is rich and delicious, and great for company. It takes more time and effort than a regular meal, but cooks in one pot, so it is pretty easy to execute. It actually tastes better if you make it a few hours in advance and let it sit. It is adapted from an old HP recipe book, but I have tinkered with it over the past twenty years. Serve with fresh bread and a salad.

4 slices thick cut bacon, diced into 1/4 inch pieces
1 medium onion, chopped
3 -4 stalks celery, chopped
1 garlic clove, minced
1 bay leaf
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
2 tablespoons all-purpose flour
3 medium potatoes, peeled & cut into 3/4 inch cubes
2 (8 ounce) bottles clam juice
2 cups water
1 lb firm white fish (like halibut)
1 lb fresh seafood (I prefer shrimp and scallops)
2 cups half-and-half (1 pint)
salt and black pepper, to taste
cayenne pepper
chopped fresh parsley

Steps:

  • Saute bacon pieces in a large kettle or dutch oven until it starts to brown.
  • Add onion and celery, saute until soft & translucent.
  • Add garlic, bay leaf, thyme & sage. Stir frequently for about 1 minute.
  • Stir in flour and cook for another minute or two stirring constantly. Do not let flour burn!
  • Add water and clam juice. Bring to a boil and add potatoes. Cover and simmer until potatoes are tender, about 20 minutes.
  • While cooking, wash and prepare seafood by cutting into bite size pieces. I usually cut fish into 1 inch cubes, and halve scallops and peel/devein shrimp.
  • When potatoes are done, add fish to stock mixture & simmer for five minutes. Add other seafood and cook for two more minutes.
  • Stir in half and half plus salt, pepper, and cayenne to taste. Heat through and it's ready to serve. Garnish each bowl with chopped parsley.
  • Enjoy!
