NASHVILLE HOT CHICKEN MEATBALL SLIDERS
Steps:
- For the meatballs: Preheat the oven to 375 degrees F.
- Place the ground chicken, hot sauce, brown sugar, smoked paprika, salt, black pepper, cayenne and garlic in a bowl. Gently mix with your hands.
- Divide the meatball mixture into 12 portions, then form into 1 1/2-inch meatballs using wet hands (meat sticks to dry hands).
- Push a piece of cheese into each meatball and pinch to seal.
- Heat the butter and vegetable oil in a large saute pan over medium heat. Add the meatballs and brown on all sides, 5 to 8 minutes.
- Transfer the pan to the oven for 10 minutes to finish cooking.
- For the sauce: While the meatballs are cooking, combine the butter, hot sauce, honey and brown sugar in a small saucepot over high heat. Stirring constantly, bring to a boil and cook until the mixture comes together, 2 to 3 minutes.
- Remove from the heat, mix in the garlic powder, salt and pepper, and stir until smooth.
- Pour the sauce over the cooked meatballs and toss to coat. Sprinkle with the chopped parsley.
- For the sliders: Add a pickle chip to each bun, then set a meatball on top. Skewer with a toothpick. Serve warm.
NASHVILLE-STYLE HOT CHICKEN SANDWICH

- In a large heat-resistant bowl, whisk together the cayenne, brown sugar, chile powder, granulated garlic, paprika, 1 tablespoon salt and 1 teaspoon black pepper. Sprinkle the spice mixture on all sides of the chicken. Transfer the chicken to a container and refrigerate at least 1 hour and up to 3 hours. Leave the remaining spice mixture in the bowl.
- In a large Dutch oven, heat the oil until a deep-fry thermometer inserted in the oil registers 350 degrees F. Position a wire rack on a baking sheet.
- Whisk together the buttermilk, hot sauce and eggs in a shallow bowl. Put the flour in a second bowl and season with salt and pepper. Dunk the chicken first in the buttermilk mixture, then dredge in the seasoned flour and coat thoroughly. Gently drop the chicken into the oil, in batches if necessary, and fry until golden brown, 10 to 12 minutes. Transfer the cooked chicken to the wire rack.
- Carefully add about 1 large ladleful (6 to 8 ounces) of the frying oil to the reserved spice mixture to let it bloom. Be careful, as it will bubble aggressively. Whisk until smooth. Brush the fried chicken with the bloomed spiced oil as desired.
- For the sandwich build: Meanwhile, halve the Hawaiian rolls, spread with butter and toast on a griddle. Put the hot chicken on the griddled buns, top with pickles, lettuce and a schmear of mayo.
LADD'S CHICKEN BACON SLIDERS

- For the marinade: Combine the honey, Dijon mustard, lemon juice, paprika, salt, pepper and crushed red pepper flakes in a large bowl.
- Add the chicken cutlets and toss to coat. You can the cook the cutlets straight away or cover and marinate in the fridge for a couple of hours or overnight.
- For the rolls: Preheat the oven to 350 degrees F. Heat a grill or grill pan over medium-high heat.
- Place the rolls on a sheet pan. Brush the tops of the rolls with the melted butter and sprinkle over the seasoning. Bake to warm through and toast slightly, 5 to 6 minutes, then set aside.
- For the filling: Meanwhile, grill the chicken pieces for 3 to 4 minutes on the first side. Flip and top each with a halved piece of bacon and a halved piece of Cheddar. Continue to cook until the cheese is melted and the chicken is cooked through, 3 to 4 more minutes. Remove.
- Separate the rolls and slice in half horizontally. Place the bottoms on a platter and top each one with a tablespoon of ranch dressing, a lettuce leaf and a chicken piece. Add a slice of tomato, some fried onions and pickled jalapeños to each. Add the tops of the rolls and place a decorative toothpick through each slider. Serve.
CHEF JOHN'S NASHVILLE HOT CHICKEN
If you've never had Nashville Hot Chicken, we're talking about an ultra-crispy fried chicken doused with a cayenne-infused glaze, and by 'glaze' I mean melted butter and lard. For the record, I've never been to Nashville, so I can't tell you how authentic this is, but it works for me, and is fairly easy to pull off.

- Toss chicken pieces with 1 tablespoon kosher salt. Transfer chicken to a bowl; cover and refrigerate overnight.
- Whisk buttermilk, pickle brine, hot sauce, and egg together in a mixing bowl. Pour marinade over chicken and stir to ensure each piece is thoroughly coated. Cover and let chicken marinate in refrigerator 2 to 4 hours.
- Mix flour and salt together in a shallow flat dish. Remove chicken from marinade and blot with paper towels. Reserve marinade. Toss chicken in flour until thoroughly coated. Return chicken to marinade, coating all sides; remove chicken from marinade allowing excess to drip back into the bowl. Coat the chicken once again in flour mixture. Place on a rack. Repeat with all chicken pieces. Allow to sit out about 15 minutes to allow coating to dry out a bit.
- Place butter and lard in a large pot. Add cayenne pepper, brown sugar, paprika, garlic powder, kosher salt, and black pepper. Place over medium-high heat. Cook and stir until fats melt. Remove from heat; keep sauce warm.
- Fill cast iron skillet about 1/3 of the way with vegetable oil. Heat oil to 350 degrees F over medium-high heat. Carefully place chicken into hot oil, skin side down. Maintain an oil temperature of 325 degrees F, adjusting heat as need. Fry until instant read thermometer reads 160 degrees F, 8 to 10 minutes per side.
- Transfer chicken to a rack to drain. Brush with the sauce on both sides.

- Bake waffle fries and chicken nuggets as directed on packages. Meanwhile, mix barbecue sauce, ketchup and red pepper in small bowl until blended.

- Mix water, 1/4 cup salt, 1/4 cup sugar, and hot sauce together in a large bowl until sugar and salt are dissolved into the brine. Place chicken pieces in the brine and refrigerate, 30 minutes to 1 hour. Pour brine from the bowl.
- Preheat oven to 350 degrees F (175 degrees C). Place a baking rack onto a baking sheet and coat rack with cooking spray.
- Combine flour, 1/2 teaspoon cayenne pepper, 1/2 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon garlic powder, and black pepper in a shallow bowl until coating is well mixed. Press chicken pieces into the coating until both sides are evenly coated; place on the prepared rack.
- Bake in the preheated oven for 20 minutes. Spray each chicken piece with cooking spray; flip and spray the other side. Continue baking until chicken is no longer pink in the center, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Heat oil in a small pan over medium heat until shimmering. Mix 1 tablespoon cayenne pepper, 1/2 teaspoon paprika, 1/2 teaspoon salt, 1/2 teaspoon sugar, and 1/4 teaspoon garlic powder together in a bowl; add to oil and cook for 30 seconds. Brush oil mixture onto cooked chicken, adding more layers for extra heat.

NASHVILLE-STYLE HOT TOFU SLIDERS
Nashville hot chicken is seasoned with a bold dose of ground cayenne and hot sauce, deep fried then brushed with a final coat of spicy oil. In these vegetarian sliders, hot butter imparts mild tofu with an extra-spicy kick reminiscent of the chicken that inspired them. Tofu has a high water content, but a quick dredge in rice flour and a dip in batter creates a barrier that prevents excess splattering during frying. The carbonation in seltzer keeps the batter light and airy, perfect for delicate tofu. (This is also a great trick for frying vegetables and shrimp.) The result is a golden sandwich filling with a crispy exterior and soft center. For larger sandwiches, stuff standard hamburger buns with two pieces of the fried tofu and finish with the toppings.

- Make the hot butter: In a small bowl, combine all ingredients and whisk until well blended. Set aside.
- Make the tofu: With a hand on top of the tofu, cut parallel to the cutting board so that you have two equal rectangles. Quarter each of those rectangles, so you have eight pieces. Arrange sliced tofu on a paper towel-lined plate and top with another layer of paper towels; press to remove excess water.
- Place milk and rice flour in 2 separate shallow bowls. In a medium bowl whisk all-purpose flour, cornstarch and baking powder, and season with salt; add seltzer and gently whisk just to combine. Do not overmix; a few lumps in the batter are OK.
- Heat 1/2 inch of oil in a large cast-iron skillet over medium to 375 degrees. Working with 4 pieces of tofu at a time, dredge in milk, then in the rice flour, pressing all sides of tofu into the rice flour. (The tofu should be completely coated with flour.) Dip in the batter, allowing excess to drip off, and add to oil. Fry undisturbed until batter sets, about 2 minutes. Continue to fry, turning gently, until golden and crisp, about 3 minutes longer, adjusting heat as necessary to stay close to 375 degrees. Transfer to a paper towel-lined plate, and season with salt. Repeat dredging and frying with the remaining tofu.
- Spread mayonnaise on the insides of buns. (If using sliced bread, cut into quarters for slider-size portions.) Arrange lettuce on bottom buns. Gently turn each piece of tofu in the hot butter to evenly coat, then place on top of lettuce. Drizzle with more hot butter, top with pickles and finish with bun tops. Serve warm.
