My Mom's recipe and one of my favorites. Spicy and chewy, they store well and can be frozen. Great for gift giving or shipping.

¾ cup margarine, melted
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground ginger
½ cup white sugar

Steps:

  • In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks.

1/2 cup shortening
1/2 cup sugar
1 egg yolk
1/2 cup water
1/2 cup molasses
3-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
ICING:
3/4 cup sugar
1 egg white
1/3 cup water
1/8 teaspoon cream of tartar

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg yolk, water and molasses. Combine the flour, baking soda, salt, ginger, cinnamon and cloves; gradually add to creamed mixture and mix well. Cover and refrigerate for 2 hours or until easy to handle. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with floured 2-1/2-in. Nativity-themed cookie cutters. Place 1 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until edges are firm. Remove to wire racks to cool completely., In a heavy saucepan over low heat, combine the icing ingredients. With a portable mixer, beat on low speed for 1 minute. Continue beating over low heat until frosting reaches 160°, about 8-10 minutes. Pour into a small bowl. Beat on high speed until icing forms stiff peaks, about 7 minutes. Spread over cookies; let dry completely.

3/4 cup sugar
2/3 cup butter, softened
1/4 cup orange juice
1/2 cup dark corn syrup
1/2 cup dark molasses
4-1/2 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice

Steps:

  • In a bowl, cream sugar and butter. Blend in orange juice, corn syrup and molasses. Combine dry ingredients; add to creamed mixture and mix well. Chill 3-4 hours or overnight. Roll dough, a portion at a time, on a lightly floured surface to 1/4-in. thickness. Cut into desired shapes. Place 2 in. apart on greased baking sheets. Bake at 350° for 12-14 minutes. Cookies will be soft and chewy if baked 12 minutes; crunchy if baked longer.

A real old fashioned molasses cookie for you to sink your teeth into. These cookies are cut out into circles and each one has a decorative raisin in the middle. To make sour milk, just add 1 teaspoon of vinegar to a cup of milk and let it stand for 5 minutes.

1 cup shortening
1 cup molasses
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons ground cinnamon
4 teaspoons baking soda

1 cup sour milk
½ cup raisins for decorating

Steps:

  • In a large bowl, cream together the sugar and shortening until smooth. Stir in the molasses and vanilla. Combine the flour, cinnamon, baking soda and salt; stir into the mixture alternately with the sour milk. Cover the dough and chill for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C).Grease cookie sheets. On a lightly floured surface, roll out about 1/3 of the dough to 1/4 inch in thickness. Cut into circles about 3 inches in diameter using a cookie cutter or drinking glass. Place cookies 2 inches apart onto the prepared cookies sheets. Place a raisin onto the center of each cookie.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

This old-fashioned filled molasses cookie is my great Aunt Clara's recipe which continues to be passed down through the family.

1 cup raisins
1 teaspoon all-purpose flour
¼ cup sugar
1 teaspoon vanilla extract
½ teaspoon lemon juice
1 cup boiling water
2 ¾ cups all-purpose flour
¾ cup sugar
¾ teaspoon salt
½ cup shortening, melted
½ cup molasses
1 teaspoon vanilla extract
1 teaspoon baking soda
⅓ cup boiling water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss raisins and 1 teaspoon flour together in a saucepan until raisins are coated in flour. Stir 1/4 cup sugar, 1 teaspoon vanilla extract, and lemon juice into raisins. Pour 1 cup boiling water over raisin mixture; bring mixture to a boil. Cook, stirring constantly, until raisins start to break down and mixture thickens, 5 to 10 minutes. Remove from heat and cool to room temperature.
  • Stir 2 3/4 cups flour, 3/4 cup sugar, and salt together in a bowl.
  • Whisk melted shortening and molasses together in another bowl; stir in remaining vanilla extract. Dissolve baking soda in 1/3 cup boiling water. Stir soda water into molasses mixture until mixture foams and is well-combined. Stir flour mixture and molasses mixture together in a large bowl until a stiff dough forms.
  • Divide dough into 2 balls; 1 dough ball for the bottom cookie rounds and 1 ball for the top cookie rounds. Cover 1 dough ball with a damp paper towel; roll remaining dough ball out to 1/8-inch thickness. Cut dough into rounds using the top of a glass or a round cookie cutter. Place these bottom rounds 2-inches apart on a baking sheet. Top each dough round with 1 tablespoon of raisin filling mixture.
  • Roll out remaining dough ball to 1/8-inch thickness and cut into rounds using the same cutter. Moisten fingers slightly with water and carefully work each top round from the center outwards until each is about 1/4-inch larger around than the bottom round. Working from one edge, place top round over bottom round and filling, pressing firmly to seal the cookie. Lightly press down tops of cookies to settle filling in the pocket.
  • Bake in the preheated oven until cookie is set, 10 to 12 minutes. Cool briefly on the baking sheet before transferring to a wire rack to cool completely.

I got this recipe out of one of my mother's cookbooks and tried it one Christmas Eve with her. They were amazing! My brother even loved them, and he is the pickiest person I know. When they were done I threw one to my dog. They are now his favorite treat of all. Hopefully, you will love this recipe as much as we do!

1 ⅓ cups molasses
⅔ cup packed brown sugar
⅔ cup butter, softened
5 ½ cups all-purpose flour
2 eggs
4 teaspoons ground cinnamon
2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon salt

Steps:

  • Beat molasses, brown sugar, and butter together in a bowl until smooth. Mix flour, eggs, cinnamon, baking soda, ginger, and salt into molasses mixture until incorporated. Cover bowl with plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Heavily flour a cloth-covered work surface.
  • Roll dough on the floured cloth into 1/4-inch thick cookies; cut with cookie cutters if desired. Arrange cookies 1-inch apart on the prepared baking sheet.
  • Bake in the preheated oven until cookies are firm to the touch, about 8 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

½ cup shortening
⅓ cup packed brown sugar
2 tablespoons honey
1 egg
1 cup whole wheat pastry flour
½ cup wheat germ
½ cup dry milk powder
2 tablespoons baking powder
½ teaspoon salt
½ cup molasses
¾ teaspoon ground ginger
¾ teaspoon ground nutmeg
1 teaspoon distilled white vinegar
2 tablespoons water
¼ cup milk

Steps:

  • Beat shortening ( or butter ) and sugar until light and fluffy. Beat in molasses, egg and 3 tablespoons of flour.
  • Sift together remaining flour and other dry ingredients. Mix together the vinegar, water and buttermilk. Add alternately to the molasses mixture and beat batter until it is very smooth.
  • Drop teaspoons of the mixture onto greased cookie sheets. Bake at 350 degrees F (175 degrees C) for 12-15 minutes.
