LINDA'S NEW ENGLAND FRIED CLAMS
This is a really TASTY Fried Clam recipe. Try it and see for yourself... It's a WINNER! You can also use this same recipe for scallops, oysters, and any other fish...

Steps:
- Preheat oven to its lowest setting.
- Line a lg. cookie sheet with double thickness of paper towels, and place it in the oven.
- Pour vegetable oil into a deep fryer, or a lg. heavy saucepan, to a depth of about 3".
- Heat oil to 375°F.
- In a bowl, beat the eggs until well blended, then stir in the milk and salt.
- Spread the flour on a lg. strip of wax paper.
- Drop the clams into the egg-milk mixture, and let them soak for 1 minute.
- Pick up a handful of the soaked clams, and roll them in the flour until well coated. Shake off any excess flour before dropping in the oil.
- Immediately drop the floured clams into the hot oil, and deep-fry for 1-2 mins., until golden brown.
- As they brown, transfer them to the towel-lined pan, and keep them warm in the oven, while the rest are cooking.
- Serve with lemon wedges, tarter sauce, and ketchup.

FRIED FISH
Steps:
- Combine flour, cornstarch, baking soda, baking powder, Old Bay, salt, and pepper. Add beer and stir. Let rest for 10 minutes. Dredge fish through mixture.
- Preheat a deep-fryer or a deep pot filled halfway with oil to 350 degrees F. Gently immerse the fish in the oil, making sure it is fully submerged and deep-fry until it is golden brown and cooked through, about 4 minutes, turning to ensure even browning.
CLASSIC FISH AND CHIPS
Steps:
- Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
- Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
- Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
- Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
- Fry the potatoes again for 1 to 2 minutes for added crispness.

BOSTON BATTERED FRIED FISH
Growing up in Boston, we love fried fish! There I said it....and hope you enjoy the way I created this very easy recipe for delicious "FRIED FISH". I use Tilapia but any white fillet would work. You can also use this recipe to make Fried Calamari. Yum!

Steps:
- Heat oil in a large sauce pan to frying temperature.
- In a small bowl mix dry ingredients.
- Add water and cider vinegar to make a thick batter.
- Dip fish pieces into batter then into hot oil.
- Fry for 3-4 minutes, depending on the thickness of the fish.
- Drain on paper towels.
- Serve immediately with your favorite tartar sauce.

NEW ENGLAND CODFISH CAKES
Steps:
- Season fillets well with salt and pepper. Place on the rack of a steamer over boiling water. Cover and steam for 5 minutes. Remove rack and fish and let fillets cool.
- Peel potatoes and cut them into 1 1/2-inch cubes. Cover with cold water in a saucepan. Add sliced onions, salt and pepper. Bring to a boil and simmer for 15 minutes or until potatoes are tender.
- Drain potatoes well and mash them coarsely.
- When fish is cool enough to handle, flake it with a fork.
- Place potatoes in a mixing bowl. Add egg, mustard, Worcestershire sauce and grated onion. Blend very well and add fish, folding it in lightly without overmixing. Put mixture in a baking dish and chill in refrigerator.
- When mixture is thoroughly cool, shape it into 12 hamburger-size patties. Put flour in a shallow dish and dredge fish cakes in it. Shake off excess flour.
- Heat 2 tablespoons of oil in a large nonstick skillet. Fry patties for about 2 1/2 minutes on each side or until golden brown. Drain on paper towels and serve immediately. Use remaining 2 tablespoons oil if necessary. Serve with tartar sauce (see recipe).
