RED POSOLE (POZOLE ROJO)

Number Of Ingredients 20

1 pound dried posole or 2 (29-ounce) cans white hominy
2 tablespoons lard, bacon grease, or canola oil
1 medium yellow onion, diced
2 pounds pork shoulder, cubed
8 cloves garlic, minced
8 cups water
1 smoked ham hock
1 tablespoon Kosher salt
1 tablespoon Mexican oregano
1 tablespoon ground cumin
1/2 teaspoon ground cloves
2 tablespoons ancho chile powder
9 New Mexico chiles, stems and seeds removed
2 tablespoons freshly squeezed lime juice
1/4 cup chopped cilantro
1 avocado, peeled, pitted, and sliced, for serving
1 lime cut into wedges, for serving
Chopped cilantro, for serving
Diced onion, for serving
Tortillas and tortilla chips, for serving

Steps:

  • If using dried hominy, soak the hominy a gallon of water for at least 8 hours until it's doubled in size. (If using canned, wait until later to add it to the stew.)
  • In a large pot, heat up the lard and cook the onion for 5-7 minutes or until soft and beginning to brown. Add the pork and brown on each side for a couple of minutes. Throw in the garlic and cook for 30 more seconds.
  • Pour the water into the pot and add the ham hock, salt, oregano, cumin, ground cloves, and ancho-chile powder. Bring to a boil and then turn down to a low simmer.
  • Meanwhile, take the New Mexican chiles and cook on high in a dry cast-iron skillet until the pop, a couple of minutes. Turn off the heat, add water to the skillet and let the chiles soak until hydrated, about half an hour.
  • Drain the chile-soaking liquid, and place the chiles in a blender. Add 1 cup of water and blend on high until a smooth puree has formed. Stir the chile puree into the soup pot.
  • After a couple of hours, add the hominy to the pot along with the juice of one lime and the chopped cilantro. At this point, taste and adjust seasonings, adding more salt if desired. Continue to cook on low for a couple more hours until pork and hominy are tender and fragrant.
  • Pour into bowls and serve with diced onions, lime wedges, chopped cilantro, avocado slices and tortillas or tortilla chips.

16 cups water
1 tablespoon olive oil
2 29 ounce cans hominy (drained or 1 lb dried hominy)
1 1/2 lbs lean pork shoulder (cut into 3/4" cubes)
2 tablespoons kosher salt
1 tablespoon garlic powder
1 tablespoon ground cumin (Jim's note: Use caution with the cumin, it can easily ruin the dish.)
1 tablespoons ground oregano
1/2 tablespoon black pepper
For serving: diced yellow or white onion and red chile sauce

Steps:

  • DIRECTIONS for using canned hominy: Bring the water to a boil and add all ingredients. Reduce to a low simmer and allow the soup to simmer for one hour.
  • DIRECTIONS for using dried hominy: Bring the water to a simmer and add the hominy. Let it simmer for 45 minutes, until the kernels have softened and are bursting open. Add the meat and all of the spices. Simmer for one hour.
  • Ladle into bowls and add onions and red chile to taste. I added a couple tablespoons of sauce to each bowl. Enjoy!

Made with hominy, large kernels of puffed white corn (posole just means "dried corn" and hominy means "cooked posole"), for body and traditionally made with pork shoulder for flavor. Our ground chile powder blend of New Mexican chili peppers, ancho and guajillo chiles and arbol chiles provide fruity, peppery depth with a bit of heat. The beauty of this dish is the ability to swap in vegetables, chicken or beef for pork and garbanzo beans for the hominy (if you can't find it locally) to suit your tastes. 2 lbs pork shoulder
2 onions
6 garlic cloves

Steps:

  • Brown the meat:.
  • 1. Bring meat to room temperature. Pat meat dry to remove all excess liquid, generously salt.
  • 2. Heat vegetable oil in a Dutch oven or pot over medium high heat, until the oil is near smoking. Add and sear the meat, until well browned on each side. Try not to move the meat while it's searing. Remove meat from pot and set aside.
  • Layer the aromatics:.
  • 1. Add 1 tablespoon vegetable oil to dutch oven over medium heat.
  • 2. Add chopped onions, scraping up the brown bits into the mix. Allow onions to begin to brown, about 10 minutes.
  • 3. Add minced garlic and cook until fragrant, about 3 minutes. Add RawspiceBar's Ground Chiles and Posole Spices in thirds until fragrant, about 5 minutes.
  • 4. Increase heat to medium. Add chopped tomatoes (juice removed) and let brown, about 5 minutes. Add vegetable oil as needed to keep contents moist.
  • 5. Add reserved tomato juice and sugar (or honey) & combine. Reduce heat to medium-low and simmer.
  • Braise & simmer:.
  • 1. Add seared meat back to pot. Cover and put in conventional oven at 275 degrees Fahrenheit. Allow to braise for 2 hours until meat is fork tender.
  • 2. When tender, remove posole from Dutch oven and temporarily remove meat. Chop meat into bite size pieces, about 1 inch each, set aside.
  • 3. Puree pot contents into a sauce with an immersion blender (or leave chunky, if preferred).
  • 4. Add chicken stock and bring to a simmer. Add canned hominy (or garbanzo beans) and chopped meat back to the pot and allow to cook for another 40-50 minutes on stovetop over medium-low heat until hominy is softened (if using dried hominy or garbanzo beans, soak over night first).

"This is the culmination of all the numerous Pozole recipes I've tried. A little involved, but WELL worth the effort. Hope you like it. Not bad for a guero."

4 -5 lbs pork shoulder or 4 -5 lbs country-style pork ribs
3 large smoked pork shanks
3 -4 celery ribs
3 large onions
6 -8 dried guajillo chilies
8 -10 dried New Mexico chiles
1 bunch mint
1 bunch cilantro
30 garlic cloves, Whole
1 tablespoon dried oregano
3 (30 ounce) cans hominy, Drained
2 (49 1/2 ounce) cans chicken broth
1 tablespoon cumin
salt & pepper
2 tablespoons vegetable oil
1 bunch green onion, Sliced
shredded cabbage
tortilla chips
radish, Sliced
dried oregano

Steps:

  • Trim fat from ribs. Add ribs, shanks, celery, 2-onions quartered (skins & all) mint, cilantro, 20 cloves garlic, peppercorns, oregano, both cans chicken broth, cumin, 1-tbsp and enough water to cover all ingredients. Bring to a boil; cover and simmer for 2-hours. Remove meat, and allow to cool thoroughly before removing from bones. Skim fat from broth.
  • Stem and seed Chiles.
  • Roast chilies in dry cast iron skillet for approximately 2-minutes. Place chilies into bowl and cover with hot water and cover bowl. Let steep for approximately 30-minutes. In food processor, place 1-chopped onion and 10-cloves garlic. Process until minced. When chiles are done, put them and 1-1/2 cups of liquid from chiles in the processor, salt and pepper to taste. Process until puree is smooth. Heat cast iron skillet with 2 tbsp vegetable oil, and add chile puree. Cook for approximately 5 minutes or until puree has thickened. Turn off and remove heat.
  • Once shanks and pork have cooled, shred meat. Add remaining ingredients: stock, meat, hominy and chile puree back into pot and bring to a boil. Turn down heat and simmer for 1-hour. Serve with condiments: sliced green onions, cabbage, radishes, dried oregano and tortilla chips. Enjoy!
