I make rice a roni quite a bit and I kept adding to it and finally came up with this.

2 tablespoons olive oil
2 tablespoons tomato paste
1 pound boneless sirloin steak, trimmed of fat, cut into 1-inch cubes
2 dozen (51 to 60 count) frozen shrimp, thawed, shelled and deveined
1 (6.8-ounce) box beef flavor rice preparation (recommended: Rice a Roni)
2 1/2 cups hot water
2 tablespoons butter
1 small onion, sliced
1/4 cup peas, frozen
1/2 cup sliced baby carrots
1/2 medium red bell pepper, diced
1 (3.5-ounce) can mushrooms, drained
1/4 cup pitted, sliced black olives such as kalamata
2 tablespoons grated Parmesan

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil, tomato paste and beef. Brown the steak; transfer to a bowl and set aside.
  • Make the rice a roni in a large skillet, according to manufacturer's instructions. Just before you put on the lid, add all of the remaining ingredients, except the beef mixture. Simmer for 20 to 25 minutes. Add the beef the last 10 minutes of cooking to warm through.

1-1/4 pounds boneless skinless chicken breasts, thinly sliced
2 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, minced
2-1/4 cups chicken broth
1 cup uncooked long grain rice
1 teaspoon dried oregano
1/2 teaspoon ground turmeric
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
1 pound cooked medium shrimp, peeled and deveined
1 can (14-1/2 ounces) diced tomatoes, undrained
3/4 cup frozen peas, thawed
1/2 cup sliced pimiento-stuffed olives

Steps:

  • In a large skillet, saute chicken in oil until no longer pink. Remove and keep warm. In the same skillet, saute onion until tender. Add garlic; cook 1 minute longer. Stir in the broth, rice and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until rice is tender., Stir in the shrimp, tomatoes, peas, olives and chicken; cover and cook for 3-4 minutes or until heated through.

1/4 cup olive oil
3 lbs chicken, cut-up, bone-in
1/4 cup water
1 teaspoon oregano
1 large onion, chopped
2 garlic cloves, minced
1/2 tablespoon parsley, minced
1 seeded jalapeno, minced (optional)
2 cups long-grain rice
1/2 teaspoon turmeric
3 tablespoons butter
4 cups chicken broth
scant 1/2 teaspoon salt
1 lb shrimp, cooked and cleaned (can cook in microwave, see note below)
1/2 lb smoked sausage, sliced thin
1/4 lb ham, diced small
salt and pepper

Steps:

  • Season cut-up chicken with salt and pepper to taste. (I cut breasts into smaller pieces).
  • Heat olive oil; add chicken and brown on all sides.
  • Add 1/4 cup water and oregano; cover and cook until chicken is tender, about 30 minutes.
  • Remove chicken and set aside.
  • Saute onion and garlic in pan drippings until tender. Stir in parsley and jalapeno.
  • In another pot with tight fitting lid, melt butter; add rice and turmeric; saute over low heat for 5 minutes.
  • Add chicken broth and salt; bring to a boil; cover and cook over low heat 20 minutes.
  • Add onion and garlic; mix together.
  • Arrange in layers in a 4 quart casserole the rice, chicken, shrimp, sausage and ham.
  • Bake 350 degree oven about 30 minutes.
  • Note: Shelled raw shrimp can be cooked in the microwave. Place shrimp in a microwavable bowl, uncovered and microwave full power for approximately 4 minutes; stirring half way inbetween just until they turn pink. Let stand for 2 minutes. Do not over cook.

Easy Paella image

You may not think of paella as a weeknight dish, but this half-hour recipe might change your mind. The trick is to start it on the stove and finish it in a superhot oven so you get a nice, crisp crust on the bottom. The name "paella" refers not to a combination of rice, seafood, sausage and other meats, but rather to the paellera, a large pan that looks like a flat wok. But you don't need one to make a good paella. A cast-iron skillet will do just fine. Shrimp is called for here, but you can use chicken, sausage, vegetables, scallops, pork or firm tofu in its place.

4 cups chicken stock (see text)
Pinch saffron
3 tablespoons olive oil
1 medium onion, minced
2 cups short- or medium-grain rice
Salt and fresh black pepper to taste
2 cups raw peeled shrimp, cut into 1/2-inch chunks
Minced parsley for garnish

Steps:

  • Preheat the oven to 500 degrees, or as near as you can. Warm the stock in a saucepan with the saffron. Place a 10- or 12-inch skillet over medium-high heat and add the oil. One minute later, add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  • Add the rice, and cook, stirring occasionally, until glossy -- just a minute or two. Season liberally with salt and pepper, and add the warmed stock, taking care to avoid the rising steam. Stir in the shrimp, and transfer the pan to the oven.
  • Bake about 25 minutes, until all the liquid is absorbed and the rice is dry on top. Garnish, and serve immediately.
