NEW SOUTH JALAPENO PIMIENTO CHEESE
Just found this recipe in my new Southern Living Magazine. It was sent in my Jim Early from Winston-Salem, NC. He says this recipe can easily be cut in half.

Steps:
- Process first 2 ingredients, in batches in food processor for 45 seconds or until well blended.
- Add pimento and next 4 ingredients and pulse 5 to 6 times or to desired consistency.
- Cover and chill up to1 day.
- Serve with crackers or bread slices.
- Note: You may want to start with just one jar and see if you feel you need to add the second one.

A decidedly Southern spread with Northern roots, pimento cheese is a simple mix of Cheddar, red bell pepper and mayonnaise that can be found on sandwiches from work sites to garden parties across the 16 states below the Mason-Dixon line. This recipe came to The Times from the Charleston, S.C.-bred cookbook authors and occasional contributors to The Times Matt Lee and Ted Lee.

- In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chile flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes.
- Transfer the pimento cheese to a plastic container or bowl, cover tightly, and store in the refrigerator. Pimento cheese keeps in the refrigerator for 1 week.

ROASTED-JALAPENO PIMIENTO CHEESE TOASTS

- Roast bell pepper and jalapeno over a gas flame, turning often, until skin is blistered and charred all over, 5-10 minutes. (Alternatively, broil on a rimmed baking sheet.) Transfer to a medium bowl and cover with plastic wrap; let steam 10 minutes.
- Peel and seed peppers, then finely chop. Mix mayonnaise, Worcestershire sauce, cayenne, and paprika in a medium bowl. Fold in cheddar and chopped peppers; season with salt and black pepper. Spread on ciabatta and slice crosswise into pieces. Serve with pickles.
- Do Ahead
- Pimiento cheese can be made 5 days ahead. Cover and chill.

- First off, decide how spicy you'd like your pimento cheese. The cayenne pepper will determine the spice as well as how many jalapeños you add and you add any jalapeño seeds to the dip. I always add 2 medium jalapenos to mine (most of the seeds removed) as well as 1/4-1/2 tsp cayenne for some extra kick. For a more mild dip you can use sweet paprika in place of cayenne.
- Remove stems from jalapeños and cut in half. Scoop out the seeds with a spoon. Finely dice or mince.
- Soften cream cheese and combine with mayo, garlic powder, cayenne pepper, and salt. Whip using an electric hand mixer (my method of choice) or mash well with a fork until well blended.
- Add diced/minced jalapeño and diced pimentos. Freshly grate sharp cheddar cheese and add to the bowl. Blend with a hand mixer on lowest setting or mix well with a fork.
