~ New Years Eve Shrimp Chowder ~ Cass's image

This New Years all but my daughter wanted shrimp. So, I decided to make a chowder ( my recipe ) for starters and we'll have scampi later. I'm making my daughter a turkey wedgie sandwich as she loves them. Her loss as this soup was awesome! So comforting and so easy! Happy New Year! More photos later as having difficulties downloading to the site.

Number Of Ingredients 15

3 cup(s) water
4 cup(s) peeled and cubed potatoes
2 stalk(s) celery, sliced
1 medium onion, chopped
1 large carrot, shredded
2 teaspoon(s) better than buillion chicken soup base
1 teaspoon(s) salt or to taste
1 teaspoon(s) garlic powder
1 teaspoon(s) parsley paste
1 teaspoon(s) old bay seasoning
1 pound(s) jumbo shrimp, peel and devein - rinsed
2 tablespoon(s) flour mixed with 1/2 cup water
1 can(s) evaporated milk
1 cup(s) frozen corn,. thawed
1 cup(s) shredded velveeta cheese

Steps:

  • Peel, de-vein and rinse shrimp. Set aside. In a dutch oven, place potato cubes, carrots, celery, onion, water, bouillon paste, old bay, salt and pepper. Bring to a boil, then reduce to simmer and cover. Simmer for 20 - 25 minutes or until potatoes are tender.
  • Mix water and flour. Once potatoes are tender, stir into the potato mixture. Simmer another 2 minutes, then add the shrimp, evaporated milk, corn and cheese. Stir until cheese is melted, then just heat through until shrimp is pink.
  • Taste and re season if need be. Ladle into serving bowls, sprinkle with some chives if desire and serve with a good crusty bread or oyster crackers. We just loved how this turned out. Happy New Year!

1 pound precooked cold large shrimp
2 tablespoons toasted sesame seed oil
2 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon grated garlic
1 Fresno chile, finely chopped
1 small handful fresh cilantro leaves

Steps:

  • Place the shrimp in a large bowl. In a separate bowl, mix the oil, soy sauce, vinegar and garlic together. Pour the sauce over the shrimp. Add the red chiles and mix well. Chill for 20 minutes. Before serving, transfer to a serving plate and garnish with cilantro leaves.

2 cups sliced fresh mushrooms
2 tablespoons finely chopped green onion
1-1/2 teaspoons minced garlic, divided
5 tablespoons olive oil, divided
5 tablespoons butter, divided
1/2 cup dry red wine or beef broth
2 tablespoons minced fresh parsley
2 tablespoons minced fresh basil
1/2 teaspoon browning sauce, optional
8 beef tenderloin steaks (1-1/2 to 2 inches and 8 ounces each)
24 uncooked medium shrimp, peeled and deveined

Steps:

  • In a large skillet, saute the mushrooms, onion and 1 teaspoon garlic in 2 tablespoons oil and 2 tablespoons butter until tender. Add wine or broth; cook and stir for 1 minute. Stir in the parsley, basil and browning sauce if desired. Remove from the skillet; keep warm., In the same skillet, cook steaks in 2 tablespoons oil and 2 tablespoons butter over medium heat for 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Return mushroom mixture to the pan; heat through., Meanwhile, in another skillet, combine the remaining butter and oil. Add the shrimp and remaining garlic; cook and stir until shrimp turn pink. Serve with the steaks.
