HEALTHY MARINADE FOR CHICKEN - 5 RECIPES
Say no to boring chicken with these 5 Healthy Chicken Marinades! Made with minimal ingredients, paleo, keto and Whole30 - they're perfect for meal prepping.

Steps:
- In separate bowls, whisk together marinades. Pour into individual ziploc bags. Place 1 large chicken breast (about 6-8oz chicken) with each marinade. Carefully try to squeeze out air from the bag.
- If cooking immediately: Allow the chicken a minimum of 30 minutes to marinate (overnight is best for maximum flavor). Preheat oven to 425 + prepare a lined baking sheet. Lay chicken on the sheet side by side. Bake for 20 minutes. Allow chicken to rest for 5 minutes + store in containers with veggies/side for meal prepping
- If grilling: Allow the chicken a minimum of 30 minutes to marinate (overnight is best for maximum flavor). Heat grill over medium high heat (about 400 degrees). Cook chicken for about 7-8 minutes on each side. Transfer to a plate, allow the chicken to rest for 5 minutes + store in containers with veggies/side for meal prepping.
- If freezing: Transfer the individual bags to the freezer. Lay flat in freezer. To defrost, remove from freezer 24 hours in advance + place in refrigerator. Allow to defrost + cook per directions above.

NIF'S GRILLED HAWAIIAN CHICKEN SKEWERS
This is a dish that I made up as I went along! It's easy and uses ingredients that most of us have on hand. There is probably enough marinade for twice the amount of chicken. I wasn't going to have a chance to stir the chicken so I wanted to make sure that it covered all of the chicken. I served this over brown basmati rice. The marinating time is not included. ****NOTE: I do not recommend marinating this for more than 2 hours. I find it gets a grainy texture if marinated too long. Enjoy!

Steps:
- Mix all marinade ingredients and add chicken. Marinate for 1 to 2 hours, no more.
- If you are using wooden skewers, be sure to soak them in water for 2 hours.
- Heat grill to medium-high.
- Alternate chicken, pineapple and pepper pieces on skewers. Place on grill until chicken is cooked through, about 5 minutes on each side.

NIF'S HONEY GRILLED CHICKEN THIGHS
A sweet, but not too sweet, marinade with an Asian twist. This marinade would work with any chicken pieces and probably pork or salmon, but I had the thighs in the fridge! Easy to put together and great with rice and veggies. Enjoy!

Steps:
- Mix all ingredients for the marinade.
- Cover chicken with marinade and refrigerate for at least 1 hour.
- Cook chicken over a medium hot grill until cooked through. You could cook it in the oven at 350F for about a half hour.

- Combine all marinade ingredients in a large mixing bowl and whisk together. Remove a half a cup of marinade and reserve for basting the chicken later.
- Place chicken in a large resealable bag and pour marinade over the top. Gently massage chicken breasts and be sure to close bag securely. (If you have less time, consider poking holes in the chicken with a fork to allow the marinade to penetrate quickly.)
- Refrigerate chicken and marinate for at least 30 minutes and up to 24 hours. I find 4 to 6 hours to be perfect.
