NINJA FOODI ITALIAN MEATBALLS

Steps:
- Soak bread crumbs in milk in a small bowl for 20 minutes. This will remove the grainy texture some meatballs have.
- Turn Ninja Foodi to Seart/Sauté on MD:HI. Add oil and onions. Cook onions until translucent.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture. Mix well.
- Form meat mixture into balls about 1 1/2 inches in diameter.
- Turn Ninja Foodi to Sear/Sauté MD:HI. Brown all sides of the meatballs in batches in the Foodi.
- These are not cooked all the way through, but you can add to spaghetti and pressure cook, or throw in the oven for about 15-20 minutes At 425°. Or freeze until you decide how to use them.

- Place all ingredients in Master Prep Bowl. Secure top and pulse for 10-15 seconds, until meat is ground.
- Carefully remove blades from Pitcher, and then scoop outr meatball mixture, one extremely rounded tablespoon at a time. Use your palms to form into perfectly round balls.
- Cook using your favorite method for cooking meatballs, or bake on a greased sheet pan in a 350 degree oven for about 25 minutes; until a meat thermometer registers the internal temperature has reached 160 degrees.
- Serve over pasta with marinara sauce or on hoagie rolls with sauce and provolone cheese.
- BOB'S TIPS: For even moister meatballs, simmer them in marinara sauce for 20-30 minutes until cooked through. If sauce reduces too much , add a little bit of water to thin it out(though, you have to love a hearty tomato sauce).

Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

Steps:
- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

AUTHENTIC ITALIAN MEATBALLS
Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

Steps:
- Mix all ingredients in a large bowl by hand.
- Use your bare hands for best results.
- Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
- Drop raw meatballs into large (I use a stock pot) pot of sauce.
- (I have an incredible sauce recipe {#92096} I use for my meatballs).
- Simmer for about 3 hours.
