- In a medium bowl, add the oatmeal, peanut butter, honey, flax seed and chocolate chips.
- Mix all ingredients well
- Take approximately 1 1/2 Tablespoons of batter and roll into a ball
- Put the balls on a plate and let sit in the fridge for 1 hour or overnight. You can eat it immediately but it tastes best after it sits.

- Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
- Make 1 inch balls and freeze for about 20 minutes or until firm.
- Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
- Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.

- Beat peanut butter and sugar in large bowl with mixer until blended. Add 1/2 cup wafer crumbs; mix well.
- Drop tablespoonfuls of peanut butter mixture into 28 mounds onto waxed paper-covered baking sheet. Top each with 1 marshmallow; shape peanut mixture into ball around marshmallow to completely enclose marshmallow. Roll in remaining wafer crumbs until evenly coated, gently pressing crumbs onto balls to secure.

The origins of this recipe are still a matter of open and often heated debate among my sisters and me, but there is one thing on which we can all agree: It is a favorite of my sister Elizabeth who has special needs. This recipe allows her to come into the kitchen with the rest of us and make something truly delicious. Salted peanuts are best; either cocktail or dry-roasted works well.

- In a medium mixing bowl, place the peanut butter, honey, and powdered sugar. Stir until well blended and smooth.
- Place the crushed peanuts in a shallow dish. Wet your hands and shake off the excess water. Scoop out a heaping teaspoon of the peanut butter mixture and roll it into a 1-inch ball. Place the ball in the crushed peanuts and gently roll until coated. Place the ball in a candy cup and continue with the remaining peanut mixture and peanuts. When all the balls are formed, refrigerate them until firm, about 1 hour. Serve.
- Store in a tightly covered container in the refrigerator for up to 2 weeks.
- When hand-rolling sticky doughs like this one, rinsing your hands in cool running water helps keep the mixture from sticking to them. Rinse several times as you work, and shake off the excess water each time.

- In the bowl of an electric mixer, add the peanut butter, ½ cup softened butter, vanilla, salt, and cinnamon. Beat on high until the mixture is very smooth. Scrape the bowl with a rubber spatula. Then turn the mixer on low and slowly add in the powdered sugar. If the mixture seems too sticky to roll after adding 3 ½ cups, add another ½ cup of powdered sugar. Beat until smooth.
- Set out a large baking sheet lined with parchment paper or wax paper. Scoop the peanut butter ball batter with a spoon and roll into 1 inch balls. Try to make them all the same size. Place on the baking sheet.
- Once the balls are very cold and stiff, place the chocolate chips and remaining 1 tablespoon butter, in a microwave-safe bowl. Microwave in one-minute increments, stirring in between, until the chocolate is melted and smooth. (You can also melt the chocolate in a small sauce pan over low heat.)
