Creamy and delicious--melts in your mouth. This pie is a real crowd-pleaser and it can be made with reduced-fat ingredients.

1 (8 ounce) package cream cheese
1 ½ cups confectioners' sugar
1 cup peanut butter
1 cup milk
1 (16 ounce) package frozen whipped topping, thawed
2 (9 inch) prepared graham cracker crusts

Steps:

  • Beat together cream cheese and confectioners' sugar. Mix in peanut butter and milk. Beat until smooth. Fold in whipped topping.
  • Spoon into two 9 inch graham cracker pie shells; cover, and freeze until firm.

This is sooo good, but not for someone who is watching their calories. The original recipe said it makes a 9 inch pie, but I found the filling was way too much for that size and made it in a spring form pan. Bigger slices in the end, but not so much filling. You could of course make it in a pie plate if you wish too. Adapted from the back of Borden's sweetened condensed milk.

1/3 cup butter or 1/3 cup margarine
1 (6 ounce) bag semi-sweet chocolate chips
2 1/2 cups crispy rice cereal
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
3/4 cup crunchy peanut butter
3 tablespoons lemon juice
1 teaspoon vanilla extract
1 cup whipping cream, whipped

Steps:

  • For the crust:.
  • Melt butter or margarine in saucepan along with the chips.
  • Add the rice cereal and mix to coat.
  • Press in a 11" spring form pan which has been sprayed with release coating.
  • Chill until firm.
  • Meanwhile:.
  • In a large mixing bowl, whip cream cheese until fluffy.
  • Beat in peanut butter and condensed milk until smooth.
  • Stir in vanilla and lemon juice.
  • Fold in whipped cream.
  • Turn into crust and chill until set, approximately 4 hours.
  • Refrigerate any leftovers.

  • Preheat oven to 180°C (350°F). Using a pastry brush, brush some melted coconut oil all over a 9-inch round pie pan with removable bottom (this makes it easier to unmold the crust, especially if you bake it!). Set aside.
  • In a large mixing bowl, add almond flour, unsweetened cocoa powder, melted coconut oil, maple syrup, and vanilla extract.
  • Use your hands to knead the ingredients together for about 90 seconds. Squeeze well all ingredients to bring them in contact and create a sticky pie dough. You don't have to form a ball as it's a press-in crust but make sure the dough is consistent and sticky.
  • Bring the dough into the pan and press in the dough to cover the entire pan. Make sure you don't leave holes, or it will crack in those areas when baked. Use the back of a spoon to smooth the surface. I recommend watching my recipe video below to see my technique to get the crust pretty in a second.

  • Lightly oil a 9″ tart pan or 8″ pie dish with coconut oil or olive oil. Set aside. In a large food processor, pulse together the oats, cookie crumbs, and cacao powder. Add in the soaked dates and vegan butter, and pulse again until a sticky dough forms. Press the dough into the tart pan or pie dish, pressing it gently up the sides of the dish. Place the tart pan in the freezer to chill while you make the peanut butter filling.
  • In a large food processor, pulse the cashews and coconut cream until smooth. There should be no bits of cashew left, just a smooth and thick cream. Add in the peanut butter and coconut sugar, and pulse again until smooth.
  • Pour the peanut butter filling into the pie crust. You might have some extra. You can save the peanut butter filling and serve as a peanut butter mousse. Smooth the filling, and carefully place the peanut butter pie back into the freezer to chill for 3 hours.
  • After 3 hours, prepare the vegan chocolate ganache. Remove the peanut butter pie from the freezer and carefully pour the ganache over the top of the peanut butter pie. Carefully place the peanut butter pie into the fridge to set for 15 minutes.
