Almost No Fat Banana Bread image

This bread is surprising moist and has a wonderful flavor. For a little variation, you can add nuts or raisins.

1 ½ cups all-purpose flour
¾ cup white sugar
1 ¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
2 egg whites
1 cup banana, mashed
¼ cup applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
  • Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

This is the most successful and versatile quick bread recipe I've found! You can also use chunky applesauce or a 15 ounce can of pumpkin for wonderful variations.

½ cup margarine, softened
1 cup white sugar
2 eggs
1 ½ cups mashed banana
2 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.
  • Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.
  • Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

This is a recipe from my 5th grade teacher. She was a wonderful cook who had to feed a table full of ranch hands everyday. It's so simple and fail proof, I'll never use another recipe.

2 cups flour
1/2 cup margarine
3 ripe bananas, mashed
3/4 cup chopped nuts (optional)
1/2 teaspoon salt
1 cup sugar
2 eggs
1 teaspoon baking soda

Steps:

  • Mix sugar and margarine till creamy. Then add eggs and mix well.
  • Add all other ingredients.
  • Bake at 350° for 1 hour .
  • Also makes beautiful muffins (12).

No Fail Banana Bread image

This banana bread is moist, flavourful, and has never failed me yet. I have used it for the past ten years, making it every time I have some bananas to use up. To change it up a bit, try substituting the butter for peanut butter, or add a swirl of cheesecake batter in the middle. You'll find lots of ways to serve up tasty banana bread to your family. Enjoy!

3 very ripe bananas
1 cup sugar
1/2 cup butter, melted
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup walnuts (optional)
1 cup chocolate chips (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, mix the white sugar into your melted butter and stir until fully incorporated.
  • Add the eggs and beat well.
  • Stir in the sour cream and vanilla.
  • Using a fork, mash the bananas and add to the wet ingredients. Mix well.
  • Sift in the dry ingredients and stir well.
  • Add the nuts and chocolate chips last.
  • Pour the batter into a well greased loaf tin.
  • Bake for 60 minutes or until a tooth pick comes out clean.
  • Can make banana muffins instead, adjusting the baking time accordingly (around 20 minutes - depending on the oven).

  • In a large bowl, combine flour, baking soda and cinnamon. In a separate bowl, cream together butter and sugar. Stir in eggs and mashed bananas until well blended, add milk. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  • Bake in preheated oven for 45 to 55 minutes or until a toothpick inserted into center of the loaf comes out clean. The crust should be dark brown and crunchy. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
