OLIVE AND ONION BREAD



Olive and Onion Bread image

A rustic loaf with a variety of olives, red onions and fresh herbs

1 medium red onion
3/4 cup mixed pitted olives in oil
1/3 cup fresh chopped herbs
2 Tbsp extra virgin olive oil (plus more for drizzling)
2 tsp course salt
3 1/2 cups bread flour, up to 4 cups if necessary (plus more for kneading, increase slightly if using all purpose flour)
2 tsp yeast
1 cup fairly warm water (110 degrees fahrenheit)

Steps:

  • Cut onion in half and slice thinly. Saute in olive oil over medium-low heat until just softened.
  • Coursley chop olives and add to onion mixture. Remove from heat and allow to cool slightly. Stir in fresh chopped herbs.
  • In bowl of stand mixer with a dough hook, combine flour, salt and yeast. Add olive and onion mixture and combine. Add warm water all at once and start mixer at speed 2 and knead for about 3 minutes. If the dough continues to be sticky and is not coming away from the bowl clean, add more flour in small amounts until dough holds its shape and bowl edges are clean.
  • Continue to knead for about 1-2 more minutes until dough looks smooth.
  • Remove dough hook and drizzle olive oil over dough and roll around until dough is the shape of a ball and covered with oil. Cover the bowl with plastic wrap and a towel. Leave to rise in a warm place until dough has doubled in size.
  • Remove plastic wrap. Reserve wrap to cover the shaped dough. Punch dough down to remove air bubbles and gently knead on a lightly floured surface to form a ball. Cover with the reserved plastic wrap that has been sprayed or wiped with oil.
  • When dough is almost doubled in size again, place an oven safe pan of water in the bottom of the oven, below the bottom rack. Place a baking stone on the lowest rack of the oven and preheat to 400 degrees. When oven is ready, carefully remove the plastic wrap and slash the dough across the top in 2 or 3 lines with a very sharp knife.
  • Very carefully lift the dough and place on the hot stone. If you aren't using a stone, bake on an oiled baking sheet that has NOT been preheated.
  • Bake for approximately 35-40 minutes. Using a stone my reduce cooking time slightly. Bread is ready with well browned and makes a hollow sound when tapped.
  • Remove bread from stone or baking sheet to cool on a rack.

3 cups bread flour
1/2 teaspoon Redstar Platinum instant yeast
1 1/2 teaspoon kosher salt
1 1/2 cups water (room temp)
1 1/2 teaspoon granulated onion
2 tablespoon plus 2 teaspoon dried, minced onions, divided
2 teaspoon hot water

Steps:

  • In a large bowl add in the flour, yeast, granulated onion and 2 tablespoon of dried onions, and salt. You need to make sure the bowl is at least 2 times the size as this will easily double in volume. Whisk to combine. Add in the water and mix with a wooden spoon - do NOT use a stand mixer. Mix it until it's combined and forms a 'shaggy' dough. Just make sure that all the flour is incorporated. It will not be a smooth dough - that's how it's supposed to be.
  • Cover with plastic wrap and set in a warm place overnight for at least 12 hours but no more than 24.
  • When you're ready to bake, preheat your oven. Put the rack in the middle and preheat to 450F. Let this heat up for about 45 minutes.
  • Mix the remaining 2 teaspoon of dried, minced onions with 2 teaspoon of hot water. Gently stir and set aside. Place the dough out a lightly floured board and gently shape it into a rectangle ~12×8". Fold one third over and the other third on top (like an envelope). Gently start to roll it with your hands into a log that's ~12×4". Pinch the seams together. For the ends just tuck them under and pinch to seal. *See note if you're not using the Emile Henry Italian Loaf Bread Baker about shaping and baking in a Dutch oven.
  • To the Emile Henry Italian Loaf Bread Baker, sprinkle in a tablespoon or two of flour in the bottom to help the dough remove easily after baking. Place the loaf in the baker. Take the re-hydrated dried onion mixture and sprinkle on top of the loaf. Cover and set aside while the oven heats up.
  • 425F, put the loaf pan into the oven (covered) and bake for 40 minutes, remove the lid and bake for another 15 or until golden brown and the internal temp reaches 200F.
  • Remove from the oven and carefully empty the loaf onto a cooling rack. Allow to cool before slicing.
  • Store the bread in the Emile Henry Bread Box. It will stay fresh for ~3-5 days.

3 teaspoons baking powder
2 tablespoons butter ((cold))
1 teaspoons salt
5 ounces onion ((chopped))
1 1/2 tablespoons bacon flavoured olive oil
1 egg ((beaten))
1/2 cup milk

Steps:

  • Dice onion and set aside.
  • Heat bacon flavoured olive oil in a small pan over medium-high heat.
  • Cook the onions until nicely browned. Set aside to cool.
  • Heat the oven to 375º F.
  • Grease a loaf pan or, an 8 inch round or square baking pan and line with parchment. Set aside.
  • In a large bowl combine the flour, baking powder and salt.
  • Add in the COLD butter. Using a knife, or pastry mixer, cut in the butter until crumbly.
  • Place the egg in a small bowl and beat with a fork or whisk.
  • Add the milk to the egg and mix.
  • Pour the milk and egg mixture into the cooled and cooked onions.
  • Make a well in the flour mixture, and pour in the wet ingredients.
  • Mix with a spatula to combine.
  • Scrape dough into the prepared baking dish.
  • Bake in oven until baked. Apaproximately 25 minutes.Bread will be golden. You can use a cake tester to ensure it is baked.
  • Remove the bread from the pan. Place on cooling rack.

1/2 cup shredded asiago cheese

Steps:

  • In a large bowl, combine flour, salt, and yeast. Drizzle in water, and honey and stir dough with a wooden spoon until a slightly-sticky dough forms. Cover bowl with plastic wrap and let sit at room temperature overnight or 18-24 hours.
  • The next day, preheat oven to 425F. Lightly grease a baking sheet and set aside. In a medium skillet, caramelize onions in butter over medium heat, stirring occasionally until onions are a deep golden brown. Remove from heat and cool completely.
  • Punch risen dough down and gently knead caramelized onions into dough. Gather dough into a smooth ball and place on prepared pan. With a sharp knife, cut a few slits in the top and brush with beaten egg and sprinkle with asiago cheese. Let rise 30 minutes until doubled in size.

1 tbsp brown sugar
2 tsp garlic granules (or powder)

a good grinding of black pepper
330 ml /1.4 cups beer

Steps:

  • Preheat your oven to 190c/170c fan/375f/gas mark 5.
  • Grease a 2 lb / 900g loaf tin.
  • Add the flour, sugar, dried onions, garlic granules, salt and pepper to a mixing bowl and mix well.
  • Pour the beer into the dried ingredients and fold in until just combined. Try not to over mix.
  • Bake in your pre-heated oven for 45 minutes.
  • Remove from the tin.
  • Turn the loaf upside down and tap the bottom, if it sounds hollow it is ready, if not pop it in for a little longer.

1 large onion (, chopped or thinly sliced)
1 bunch green onion bulbs (, chopped)
2 tbsp olive oil
salt
4 cups (500g) flour
1 tsp (5g) salt
25 g fresh yeast (2 1/4 tsp active dry yeast)
1 bunch green onion leaves (, finely chopped)
1 ⅓ cup (320 ml) warm water

Steps:

  • In a frying pan heat oil over medium heat. Cook onion until soft and golden brown. Season with salt. Set aside to cool.
  • In a large bowl, mix flour with green onion leaves. Dissolve the fresh yeast with salt and 1/3 cup (80 ml) water and add to the flour mixture. Add the rest of 1 cup (240 ml) water, mix everything together then add caramelized onion and knead until the dough is smooth and pulls away from the sides of the bowl. Cover it and let it sit for about 1 hour at room temperature to rise until doubled in size.
  • On a floured surface roll the dough into a loaf. Place in a 6×10 inch (15x25cm) baking tray and leave to rise again for 30 minutes. A regular loaf pan should be as good. Optional sprinkle salt and few green onion chopped leaves on top.
  • Preheat oven to 470F (240C). Place a small pot with water at the base of the oven to create steam.
  • Bake for 15 minutes with steam then remove the pot with water from the oven.
  • Reduce oven temperature to 450F (230C) and bake for another 10-15 minutes.
  • Cool on a wire rack. Let the bread cool completely before cutting.

2 tablespoons sugar
2 (1/4 ounce) packages active dry yeast
1 (10 1/2 ounce) can condensed French onion soup
1/4 cup butter or 1/4 cup margarine
1 egg
1 cup grated romano cheese
1 tablespoon water
2 teaspoons sesame seeds

Steps:

  • In a large bowl, combine 1 cup of the flour with the sugar and yeast.
  • In a small saucepan over medium heat, heat the soup and butter until very warm.
  • Butter does not need to completely melt.
  • With mixer at low speed, gradually pour soup mixture into dry ingredients, mixing well.
  • At medium speed, beat 3 minutes or until smooth.
  • Add egg, cheese and 1 cup of the flour.
  • Beat 2 minutes more.
  • With a spoon, stir in enough of the remaining 1 cup flour to make a stiff batter.
  • Cover and let rise in a warm place until doubled; about 1 1/2 hours.

This no-knead sourdough bread with sauerkraut and onion is so easy to make! You just need a few ingredients, an active sourdough starter and some patience to create this delicious loaf of bread.

480 Grams (4 Cups) Bread Flour
360 milliliters (1 1/2 Cups) Cool Water
100 grams Sourdough Starter
10 grams Sea Salt
3 tablespoons dried onion flakes
1/2 cup sauerkraut, drained and chopped

Steps:

  • In a large bowl, combine all of the ingredients and mix with a fork until just combined. The dough should be together in one mass, but it will look shaggy and bumpy.
  • Let the dough rest for an hour.
  • Using a spray bottle filled with water, mist your clean countertop. Wet your hands and wet the top of the dough ball with the spray bottle. Turn the dough out onto the wet counter surface. Scrape out the bowl and rinse the inside of the bowl really well. Leave the bowl wet.
  • Stretch and fold the dough. Stretch the top of the dough over the bottom, side over side, and bottom over top. Place the dough back in the bowl with the seam side down. Let the dough rest for 2 hours.
  • Using a spray bottle filled with water, mist your clean countertop again. Wet your hands and wet the top of the dough ball with the spray bottle. Turn the dough out onto the wet counter surface. Scrape out the bowl and rinse the inside of the bowl really well. Leave the bowl wet.

  • Gently stretch out the dough, and fold it again. Fold side over side and top over bottom. Then flip the dough over so that the seam side is down on the counter. Tuck under any parts of the dough you need to form a nice circular shape. Leave the dough on the counter, sprinkle some flour on the top of the dough, and cover with a clean towel.
  • Let the dough rest for 1 hour.
  • Sprinkle a little more flour on the top of your pre-shaped dough and on the counter around the dough. With your hands coated in flour, flip the dough over so that the seam side is up again.
  • Gently stretch out the dough, and fold it again. Fold side over side and top over bottom. Then flip the dough over so that the seam side is down on the counter. Tuck under any parts of the dough you need to form a nice circular loaf shape. This is the final shaping so take your time with it.
  • Coat a proofing basket with flour. Be generous, as you do not want it to stick. You can also use a bowl lined with a towel and a generous amount of flour.
  • Flour your hands and swiftly pick up and flip your dough into the basket. Smooth side down, seam side up.
  • Cover and place in the fridge overnight for 8-12 hours.
  • After 8-12 hours in the fridge, preheat your dutch oven with the lid, in your oven at 450° F. (see notes on temperature)
  • Once your oven is preheated, carefully remove your dutch oven and place the lid to the side. *Don't forget that the pot and the lid are both very hot!*
  • Cut a large square of parchment paper and place it on the counter. Turn your dough out onto the paper so that the seam side is down and touching the parchment paper.
  • Score the dough using a very sharp knife or a scoring tool.
  • Picking up all four corners of the parchment paper, move your dough into the dutch oven.
  • Place the lid on the dutch oven and bake at 450° F for 30 minutes.
  • After baking covered, remove the lid and bake for another 30 minutes at 450° F.
  • Remove your finished loaf from the dutch oven and allow it to cool for at least 1 hour.

1 tbsp olive oil
1 large onion (roughly chopped)
2 cloves garlic (finely chopped)
1 tsp dried chilli flakes
salt
freshly ground black pepper
300 g strong bread flour (plus extra for dusting)
1 tsp onion seeds or nigella seeds (optional)
100 g mature cheddar cheese (grated)
1 tsp instant dried yeast
220 ml water
40 g lively sourdough starter (approx 40ml by volume)
180 ml water

Steps:

  • Put the olive oil in a frying pan over moderate heat.Add the chopped onion, garlic and dried chillies plus a little salt and pepper.Fry until the onion is soft and golden, stirring often. If necessary, turn down the heat to stop it burning (12-15 min).Take the pan off the heat and leave to cool a little.
  • Put the flour, 1 tsp of salt, plus the onion/nigella seeds if using, into a large bowl.Stir in the contents of the frying pan, including any oil.
  • Using instant yeast:Sprinkle the yeast into the flour mixture and stir in.Pour in the 220ml of water.Using sourdough starter:Dissolve the starter in the 180ml of water.Pour the mixture into the bowl containing the flour etc.
  • Stir to make a wet dough, making sure everything is well combined.Note: different flours absorb different amounts of water. Add more water if the dough seems dry.Cover the bowl and leave overnight or 12-16 hours.
  • The dough, still quite wet, should be well risen and very bubbly. Leave a little longer if necessary.
  • Scrape the dough out of its bowl and onto a worktop well dusted with flour.
  • Fold the dough several times, dusting with flour to prevent sticking, until it comes together into a smooth ball.Flatten out the dough a little then sprinkle over 75g of the grated cheese.Fold it in half to cover the cheese, then keep folding until the cheese is distributed throughout the dough. Add more flour if needed to stop it sticking.Shape the dough to fit a floured proving basket or a bowl lined with a floured tea towel and put it inside.
  • Cover the dough and leave until the depression left by a finger pressed into the dough slowly rather than quickly springs back. If it springs back immediately then leave to prove for longer.Note: proving will take approximately 30 minutes for dough made with instant yeast and 60-90 minutes for sourdough. However, this will vary depending on, among other things, the temperature in your kitchen. It's best to test as above before baking.
  • While the dough is proving: preheat the oven to its highest setting and put inside a cast iron pot or Dutch oven, including its lid.
  • When ready to bake, remove the pot from the oven and take off the lid.Carefully flip the dough from its basket or bowl into the pot.Sprinkle the top with the remaining 25g of grated cheese.Slash the top, replace the lid and put in the oven.Immediately turn the heat down to 240C /220 Fan /Gas 9.Bake for 30 minutes without removing the lid.
  • After 30 minutes, reduce the heat to 220C /200 Fan /Gas 7.Remove the pot from the oven, tip the bread out of it, then return the loaf to sit directly on the oven shelf.Bake for a further 8-15 minutes until the bread is cooked through (it should sound hollow when tapped underneath).If necessary, reduce the oven temperature to stop the crust over browning before the bread is finished baking.
  • Place on a wire rack to cool before eating.Use within 2-3 days, or can be frozen once completely cold.

3 medium onions, finely chopped
0.25 cup plus 1 teaspoon granulated sugar
kosher salt
2 0.25-ounce packages active dry yeast
2 large eggs
6 tablespoons (¾ stick) unsalted butter, melted, plus more, at room temperature, for the pan
6 cups all-purpose flour, spooned and leveled, plus more for shaping the dough

Steps:

  • Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Add the onions, 1 teaspoon of the sugar, and ½ teaspoon salt and cook, stirring occasionally, until golden brown, 15 to 18 minutes.
  • Place 2 cups warm tap water (105° to 115° F) in a large bowl; sprinkle with the yeast and let stand until foamy, 4 to 5 minutes. Whisk in the eggs, 4 tablespoons of the butter, the remaining ¼ cup of sugar, and 1 teaspoon salt. Add the flour and three-quarters of the onions and mix until a sticky dough forms. Brush the top of the dough with the remaining tablespoon of oil. Cover the bowl with plastic wrap and let rise in a warm place until doubled in bulk, about 1 hour.
  • Butter a 9-by-13-inch baking pan. Punch the dough down. With well-floured hands, form the dough into 16 balls and place in the prepared pan, spacing evenly. Sprinkle with the remaining quarter of the onions. Cover the pan loosely with plastic wrap and let rise in a warm place until doubled in bulk, 30 to 40 minutes.
  • Heat oven to 400° F. Remove the plastic wrap and brush the dough with the remaining 2 tablespoons of butter. Bake until the rolls are golden, 18 to 22 minutes (tent with foil if the tops brown too quickly). Cool in the pan for 5 minutes before serving.

1 1/2 cups whole wheat flour
3 1/2 cups all purpose flour
1 1/2 Tbsp rapid rise yeast
2 tsp salt
1 Tbsp granulated sugar
1 cup water
2 cups cottage cheese (500 g container 1 or 2%)
2 Tbsp canola oil
2 Tbsp dried minced onions (1 tsp onion powder)
3 Tbsp fresh chopped dill
1 tsp caraway or dill seed (optional)
2 eggs
1/2 Tbsp cornmeal (optional)

Steps:

  • In large bowl, mix whole wheat and all purpose flour with yeast, salt and sugar. Make well in flour and set aside.
  • In medium sized pot over low heat, whisk together water, cottage cheese, oil, minced onions, dill, caraway or dill seeds and eggs. Heat for 2 to 3 minutes until lukewarm (100°F-110°F/38°C-43°C).
  • Add liquid ingredients to flour mixing until there are no dry patches. Dough will be tough to stir, but too wet to knead.
  • Cover with a clean cloth and let rise at room temperature for 2 hours or doubled in size.
  • After rising, dough can be baked or wrapped in plastic and stored in fridge for up to 2 weeks.

1-1/2 tsp salt

1/4 c finely chopped onion

Steps:

  • 1. IN A MIXING BOWL COMBINE 2-1/2 CUPS FLOUR , SUGAR , YEAST SALT AND PEPPER .
  • 2. IN A SAUCE PAN , HEAT WATER AND BUTTER TO 120°to 130°
  • 3. ADD TO DRY INDGREDIENTS ; BEAT JUST UNTIL MOISTENED , STIR IN 3/4 CUP OF CHEESE , ONION AND REMAINING FLOUR ; BEAT UNTIL SMOOTH .
  • 4. TURN ONTO LIGHTLY FLOURED SURFACE ; SHAPE INTO A BALL ; PLACE INTO A GREASED 2 QT. ROUND BAKING DISH.
  • 5. COVER AND LET RISE IN A WARM PLACE UNTIL DOUBLED ; ABOUT 20 MINUTES .
  • 6. BAKE @ 350° FOR 40-45 MIN.OR UNTIL GOLDEN BROWN.
  • 7. SPRINKLE WITH REMAINING CHEESE ; BAKE 5 MIN. LONGER OR UNTIL CHEESE IS MELTED .
