EASY CRUSTY VEGAN BREAD



Easy Crusty Vegan Bread image

Easy crusty Vegan Bread made with only 3 ingredients: flour, water and instant yeast. Homemade, plant based, no knead recipe!

3.25 cups all purpose flour (+ more for sprinkling (organic non-gmo))
1.5 cups warm water
2 tsp instant dry yeast
1 tsp sea salt

Steps:

  • Add the all purpose flour, yeast and sea salt to a large mixing bowl or your kitchen aid mixer. Mix in the water and stir well until incorporated. Cover the bowl loosely with a kitchen towel or plastic wrap and let it rest at room temperature for 2 to 3 hours. ( you may leave it overnight as well but it is not necessary )
  • After about 2 hours check the dough and you should notice the surface dotted with bubbles. Turn the dough onto a floured surface and sprinkle it with a little flour. Shape it into a round loaf by folding it over on itself a few times. NO KNEADING Allowed!
  • Meanwhile preheat your oven to 450"F with a pizza stone inside. I If you don't have a pizza stone preheat a cast iron dutch oven with the lid on instead). Place a baking dish with a couple of inches of water in it on the bottom rack to help create steam inside the oven for a crispy crust.
  • Sprinkle a pizza peel or a cardboard box with some flour and place the bread loaf on top. Allow it to rest for 45 minutes while the oven warms up. Using a serrated knife make a few slits on top of the loaf.
  • Sprinkle the pizza stone with a little bit of the semolina flour then gently slide the bread dough onto it just like you would do with a pizza. Cook for about 30 minutes until golden brown. Transfer to a cooling rack and allow to cool down before slicing. For an even crispier crust allow to bread to cool inside of the oven with the door slightly open.

  • In a large bowl or in a stand mixer add the flour, yeast and salt. Mix them together so they are distributed evenly, then add the milk, water and maple syrup. Mix until all the flour is combined and you have a sticky dough, making sure you get right into the bottom of the bowl. Then cover with cling wrap.If you wish to leave the dough overnight or all day before baking, put it in the fridge and leave it there for anything between 8 - 10 hours.If you want to make the speedier version, you can put the bowl on the stove top or next to it and set the oven on low so that the residual heat kicks the yeast into action (make sure it isn't in direct contact with the heat though. There should just be gentle warmth. Anything more could kill the yeast). If you do this it will need to be left for 2 hours (although up to 3 will be fine).   • Once the resting time has passed, line an 8 x 8 pan (or similar, it doesn't have to be exact) with parchment paper and preheat the oven to 350°F.
  • Melt the butter gently until liquid. Be sure it is at room temperature before you dip the dough in it or you could kill the yeast and affect how the bread turns out.

  • Proof the yeast in 2 tablespoons warm water. Mix all ingredients. Place in well oiled container, covered for 8-12 hours.
  • The dough will be moist and sticky, for shaping you need to scrape it onto a well- floured surface, and lightly flour the top before patting it down gently. Then use a bench scraper to help lift it for shaping. Latex gloves work wonderfully to keep it from sticking to your fingers if you’re not comfortable with handling super sticky doughs.

  • Bring two cups of water to a boil. Stir in oats and salt, and cook just until it starts to thicken. Remove from heat and allow to cool (it will kill the yeast if added when it's hot).
  • Once the oatmeal mixture has cooled to room temperature, add the remaining 1 1/3 cups of water to the bowl of a mixer, and sprinkle the 1/2 tsp yeast over the surface. While the yeast dissolves, measure out your flour.

  • Put a large bowl on a digital scale and add the sourdough starter and the water, taring the scale in between each addition. Whisk or mix them together really well until the lumps of starter are broken up and the water looks milky and frothy.
  • Add the flour and the salt. Mix it all together really well with a spatula, a wooden spoon or clean hands until you can no longer see any dry flour. Make sure you scrape right down into the bottom of the bowl and along the sides so every little bit is incorporated.   • Now it's time to stretch and fold the dough. Get a spray bottle of water (straight from the tap is fine) or a bowl of water big enough to fit your hands in and have it next to you on the counter.   • SET 1 - Place your bowl of dough in front of you on the counter. Uncover it. Spray the top of the dough with a fine mist of water, or wet your hands and rub them over it quickly, then spray or dip your dominant hand in the water so it is wet (you can use both hands if you prefer - I try to only use one when handling dough so I always have a clean one). With the dough still in the bowl (you don't need to take it out), cup your hand under and grab the dough from the side directly opposite you. Pull the dough up, stretching it gently and slightly out and upwards, then fold it over onto itself towards your body. Then turn the bowl a quarter of a turn, grab the dough on the side farthest from you, stretch it out gently and fold it over on itself.
