This recipe for beef stock is more flavorful than store-bought and not difficult to make. The time and effort spent cooking is well worth it.

5 to 6 pounds beef bones and trimmings
2 medium onions, peeled, quartered
2 large carrots, cut into 2-inch pieces
2 ribs celery, with leaves, cut into 2-inch pieces
2 tablespoons extra-virgin olive oil
1 tablespoon tomato paste
3 1/2 quarts water , divided
1 large bay leaf, or 2 small bay leaves
3 to 4 sprigs parsley
1/2 teaspoon black peppercorns
1/4 teaspoon dried thyme, or 1 to 2 sprigs fresh thyme

Steps:

  • Gather the ingredients.
  • Trim larger pieces of beef from the bones and cut into 1-inch pieces. Heat the oven to 400 F.
  • Put the bones and beef pieces in a large roasting pan with the onions, carrots, and celery. Toss with the olive oil.
  • Roast for 45 minutes, turning a few times so the beef browns evenly.
  • Transfer the beef and vegetables to a stockpot and set aside.
  • Pour off any excess grease from the roasting pan and place over medium heat. Add the tomato paste and cook, stirring, for 2 minutes.
  • Add 2 cups of the water and bring to a simmer.
  • Add the tomato paste mixture to the stockpot, along with the remaining 3 quarts of water. If the liquid doesn't quite cover the bones, add a little more water.
  • Add the bay leaf, parsley sprigs, peppercorns, and thyme.
  • Put the stockpot over medium-high heat and bring to a boil. Skim off any foamy scum from the top.
  • Reduce the heat to the lowest setting, partially cover, and simmer for 3 to 4 hours. The stock should be flavorful and reduced slightly. If you want a richer, more concentrated flavor, cook longer to reduce more.
  • Strain through a cheesecloth-lined strainer into a large bowl. Cover and refrigerate until chilled.
  • Remove the solid fat from the surface.
  • Ladle into 1-, 2-, or 4-cup freezer containers or jars, leaving about an inch of headspace.
  • Refrigerate and use within four days or freeze for up to three months.

Roasting/browning the turkey bones and vegetables firstly in the oven will create a more intense deep rich stock I would not even think of making stock without using this method and you will see the difference for yourself after you try this stock --- I use this stock in so many recipes I even make gravy with it and you will use this for so many things also, it is wonderful to have handy in the freezer, to thaw just microwave for a couple of minutes or refrigerate overnight -- serving amounts are listed for a 12-13 pound turkey and about 4 quarts of water, you may use a larger turkey with more water just make certain to use enough water to cover the carcass and veggies --- if possible don't discard all the extra bones from the legs, thighs and wings and add into the pot along with the carcass the more bones the better!

1 large turkey carcass (with some meat left on if possible)
2 medium onions, quartered
1 large celery rib, coarsley chopped
2 large carrots, peeled
4 quarts cold water (or use enough water to cover)
1 large bulb of garlic (separated into whole cloves, can omit if desired)
6 peppercorns
1 large bay leaf
salt (optional and to taste)

Steps:

  • Set oven to 400 degrees F.
  • Break up the carcass into smaller pieces then place on a greased baking sheet along with the onions, celery, and carrots,.
  • Roast for about 40 minutes turning once through cooking time.
  • Place the bones and vegetables in a large stock pot along with the garlic cloves, peppercorns and bay leaf (you do not have to peel the cloves).
  • Pour the water over; bring to a boil over medium-high heat.
  • Reduce heat to low then cover and simmer for about 3-1/2 hours.
  • Carefully strain through a sieve over a large bowl and discard the solids.
  • Cool to room temperature then refrigerate overnight.
  • The following day skim any excess fat from the top of the broth.
  • Refrigerate for up to 3 days or separate into plastic containers and freeze for up to 6 months.

I have two favorite pot roast recipes posted on this site this one requires just a little more effort as the onions and garlic are sauteed in the pot before hand --- this will also work well using a pork shoulder roast, the veggies are optional but I most always add them about the last 1-1/2 hours of cooking time, cooking time is only estimated depending on the size of your roast.

1 (4 lb) beef, blade or 1 (4 lb) chuck roast
seasoning salt
pepper
1/4 cup olive oil
2 large onions, chopped
2 tablespoons fresh minced garlic
2 tablespoons dried thyme
1 teaspoon dried basil
1 teaspoon dried chili pepper flakes (optional)
2 bay leaves
2 tablespoons tomato paste (use tablespoons!)
2 cups dry red wine (can use more red wine)
1 (10 ounce) can beef broth, undiluted
1 (10 ounce) can consomme, undiluted (or use all broth or all consomme)
1 (2 ounce) package Lipton Onion Soup Mix
1 lb fresh small button mushroom
1 small potato, peeled
1 carrot, chopped

Steps:

  • Season the roast all over generously with seasoning salt and pepper.
  • Heat oil in a small roasting pan that has a lid.
  • Brown the roast well on ALL sides, this should take about 20 minutes; remove to a plate (make certain to really brown the roast well, it will add to the flavor of the gravy).
  • To the same roaster pan add in onions, garlic, dried thyme, basil and dried chili peppers (if using) and the bay leaf; saute, stirring with a wooden spoon for about 5 minutes.
  • Add in tomato paste and stir with a wooden spoon for 2 minutes, scraping any browned bits from the bottom of the pan.
  • Add in the wine, consumme, broth and onion soup mix (do not add in any salt as yet!) bring to a boil and simmer on top of the stove for 5 minutes.
  • Set oven to 350 degrees.
  • Place the roast fat-side up in the broth mix and cover the roaster.
  • Cook in the oven for about 1 hour.
  • Remove from oven and turn the roast onto the other side.
  • At this point, add in small potatoes, chopped carrots and/or small fresh button mushrooms if desired, and season the gravy with salt if needed.
  • Place back in the oven to cook for another 1-1/2 hours, or until roast is tender (if the roast is not tender yet, turn over yet again and place back in the oven , cook until tender).
  • Remove the roast to a cutting board and let rest for 20 minutes before slicing.
  • Remove any fat from on top of the gravy and serve with roast.
  • **NOTE** If you prefer a thick gravy, mix 2-3 tablespoons COLD water with 2 tablespoons flour to make a paste add to the simmering gravy and stir until thickened.
  • Delicious!

Brushing the bones with tomato paste then browning in the oven firstly then combined with the slow cooking crockpot method will produce the most flavorful richest beef broth --- I usually prepare the ingredients early in the morning, by late evening you will have a wonderful rich beef broth, or you may cook overnight --- the stock may be frozen after cooling, if you don't have a crock pot you may certainly simmer this over very low heat on top of the stove, it will still be delicious! The more bones you use the richer your stock will be, so use lots!

7 -10 beef bones with marrow (or use any beef bones with a little meat left on them)
6 ounces tomato paste
2 onions, chopped (leave the skin on onions)
2 carrots, peeled and chopped
2 tablespoons dried parsley flakes (optional)
8 -10 black peppercorns
2 teaspoons salt (or to taste)
cold water (enough to cover the bones)

Steps:

  • Place the bones on a greased baking sheet and brush liberally with tomato paste (use only tomato paste not tomato sauce).
  • Bake at 350 degrees F turning once during baking.
  • Bake for about 25 minutes on each side or until browned.
  • Place in the crock pot or large stock pot along with remaining ingredients, then add in enough water to cover.
  • Cover and cook on low for 12-24 hours OR on HIGH for 6 hours (if cooked on high setting the stock will be lighter in color and less concentrated) or if cooking on the stove top simmer on lowest heat for about 4-6 hours.
  • Remove from crock pot or stock pot; strain and refrigerate.
  • The stock will keep well for 4-5 days or may be frozen.
  • Note: veal bones may be replaced for beef bones.
  • **Note** you may certainly use more than the amount stated for beef bones, the more used then the richer the stock.

KITTENCAL'S PEA SOUP WITH HAM BONE (CROCK POT OR STOVE TOP)

This soup is hearty and extremely flavorful and one that I have made many times in the past and even served to my guests with rave reviews all around! --- I make this soup using all chicken broth but if you are using the canned chicken broth, it is best to use only 4 cans and the rest water, also I suggest not to add any salt into this soup until the end of cooking --- if desired you may puree the soup after cooking and then return it to the saucepan and if you should decide to do so heat the soup again in the saucepan then ladle hot soup into serving dishes, and for a nice presentation drizzle about 1 tablespoon whipping cream in the soup but do not mix in --- you will love this soup!

1 large onion, finely chopped
1 -2 tablespoon minced fresh garlic (or to taste)
3 tablespoons oil (not olive oil)
1 (16 ounce) bag dried split green peas
1 ham bone (make certain that the bone has a fair amount of meat on it)
4 (14 ounce) cans chicken broth
3 cups water (for a very thick soup use only 2 cups water, you can always add in more water during cooking)
salt & freshly ground black pepper (I use seasoned salt)
2 -3 medium carrots, peeled and finely diced
1 large bay leaf
1 cup frozen peas (optional, add in towards the end of cooking and heat through)
1 cup cooked rice (or to taste)
whipping cream (optional)

Steps:

  • In a large Dutch oven or saucepan saute the onion and garlic in oil until soft (about 5-6 minutes).
  • Add in broth, dried split peas, water, ham bone and bay leaf; bring to a boil, reduce heat to medium-low, and simmer for about 2 hours, or until the soup thickens (add in the diced carrots the last hour of cooking).
  • Add in pepper to taste.
  • Remove the ham bone and bay leaf.
  • At this point the soup can be pureed if desired.
  • When the ham is cool, pull the meat from the bone and shred it into bite-size pieces, then return to the saucepan, or serve on the side.
  • Add in rice and stir until heated through.
  • Ladle into serving bowls, and drizzle with whipped cream if desired.

2 -3 tablespoons olive oil
2 -3 garlic cloves, minced or pressed
1 1/4 lbs stewing beef, cut into 1 inch cubes
1 large onion, coarsely chopped
1 teaspoon bacon grease, or 1-2 slices cooked crumbled bacon (optional)
1 (16 ounce) can diced tomatoes with basil and oregano
1 (16 ounce) can reduced-sodium beef broth
1 (6 ounce) can V8 vegetable juice (3/4 cup)
1/2 cup dark red wine (cabernet, merlot, etc.)
2 tablespoons red wine vinegar
salt
pepper
oregano
basil
4 medium red potatoes, cut into bitesize cubes (leave skin on)
2 cups sliced carrots
3/4 cup frozen peas, use more or less as desired
2 tablespoons cornstarch

Steps:

  • Heat oil in a large pot (I use my 5qt cast iron dutch oven).
  • Saute garlic and beef until beef is browned on all sides and some of the liquid, if any, has cooked down.
  • Add onions and cook until translucent.
  • You can add a little bacon grease or cooked crumbled bacon at this point if you like, for extra flavor.
  • Add tomatoes, beef broth, V-8 juice, wine, red wine vinegar and seasonings; cover and simmer 1 hour.
  • Add potatoes, peas and carrots and simmer 1/2 hour to 1 hour or until vegetables are tender but not mushy.
  • In a small cup dissolve cornstarch in a little cold water and stir into stew to thicken.
  • Taste and reseason as necessary; serve with biscuits or crusty homemade bread.

Plan ahead this method takes 2 days to create the best most richest flavorful stock, far better and cheaper than any canned broth, once you try this you will never purchase cans of broth again! --- this can be done either on a stove top or in a crock pot but start the stock firstly on the stove top then transfer to a crock pot --- the same method may be used for turkey stock use the carcass and leftover legs, thigh and wing bones from your roasted turkey in place of the chicken pieces, also save your carcass and bones from roasted chickens and freeze them to throw in the pot, roasted bones will produce a richer golden colored stock but uncooked chicken works just as well --- I freeze the cooled cooked broth in 2 or 4-cup plastic freezer containers and store in the freezer until ready to use, you may do a quick defrost in the microwave when needed --- yield depends on size of pot and how much water is used, use this broth to make the best tasting chicken soup, don't remove the skins from onions they add color and taste to the stock adding in another onion won't hurt :)

4 lbs uncooked chicken pieces (bone and skin on, or use 1 large chicken carcass along with chicken pieces)
2 large onions, do not peel the skin off, and cut in large pieces
2 large unpeeled carrots, washed
2 large celery ribs, cut in half
10 -12 peppercorns
1 head garlic, broken into cloves (can leave the skin on)
2 tablespoons salt (or to taste)
cold water, to cover all ingredients

Steps:

  • Place the chicken pieces and/or carcass (or the turkey carcass) in an extra large stock pot, along with all remaining ingredients.
  • Fill with cold water to cover ingredients, and up to almost three quarters of the stock pot.
  • Place on stove element; cover and bring to a full boil.
  • Reduce heat; simmer and remove any fat or scum that is floating on top of the water.
  • At this point you can transfer to a crockpot.
  • Simmer covered with a lid on low heat for about 4-5 hours for stove top (or 9-12 hours on LOW setting for a crockpot).
  • Adjust salt to suit taste.
  • After the 5-6 hours of simmering time turn off heat and allow the pot to sit until room temperature with all ingredients still in the pot, DO NOT REMOVE BONES OR VEGGIES.
  • Transfer the pot to the fridge (with all ingredients still in it) and chill overnight.
  • THE FOLLOWING DAY: Remove the pot from the fridge (mixture will be a jelly consistency).
  • Remove any fat that has gathered on top.
  • Heat again until just to a liquid (this will make it easier to strain).
  • Remove all chicken pieces and strain in a large strainer, if desired you may strain again in a cheesecloth, but it is not necessary.
  • Let cool completely and freeze in containers.

  • Pour both soups and broth over chicken; dump whole box of Stove Top Dressing over that; drizzle melted butter on top.
  • Cook on low about 8 hrs; stir and ENJOY!

2 leeks, white part only,sliced

Steps:

  • Roast the beef bones at 350° Fahrenheit for 40 minutes.
  • Saute the onions in a little oil until they are all turning brown.
  • Combine all ingredients and simmer on low heat for at least 3 hours (may be cooked in a crockpot also).
  • After 3 hours, taste and adjust seasonings if desired.
  • Continue cooking on low heat, if desired – the longer you cook, the stronger the flavour will be.
  • Strain stock.
  • Allow to cool, and skim off any fat.
  • If not used immediately, store covered in refrigerator for up to 10 days, or freeze in plastic containers or ice cube trays.

1 (3 pound) beef chuck roast

A Quick and Easy Stove Top Recipe for Boneless Pork Ribs, With S image

This is an easy to prepare New Year's Day dinner of pork with sides of sauerkraut and mashed potatoes that is a tradition for many.

2 lbs boneless pork ribs
2 1/4 ounces dry rub seasonings
1 quart sauerkraut
3 5/8 ounces instant mashed potatoes

Steps:

  • For more than 60 plus years I have ate pork ribs and sauerkraut with mash potatoes on New Year's Day. The sauerkraut and pork always cooked for many hours whether by stove top or in the crock pot (8 to 12 hours on low) until the meat fell off the bones, and the bones were bleached white from the overcooking. At time of serving, the stove top or crock pot still contained quarts of fluid. As usual, we all thought the meat and kraut tasted great because this was the way it had always been. However, the meat was tough and dried out even though it was submerged in liquid. Now I know from some studying of cooking that all the nutrients had been boiled off. In addition, all the pork fat liquefied and now coated all the meat and sauerkraut you put on your plate. Once again we assumed this was normal. (This liquefied fat solidifies when cooled and is the thick whitish goo you remove from your pot before washing.).
  • Since retiring and as a hobby I have been studying the science of cooking and discovered, years after the fact, that the USDA says fresh pork is safe to eat at an internal temperature of 145 degrees; a point where it still contains many of its nutrients. Based on this I came up with the following recipe.
  • Remove the pork from the refrigerator about an hour prior to cooking. This time I used 2.01 lbs. of pork loin country style boneless ribs.
  • Pat the meat dry on both sides and place on a cutting board.
  • Coat both sides of the meat with the dry rub of your choosing and rub in with your fingers. I use a pre-packaged rub that you can normally purchase for less than a dollar. This way you do not have to deal with mixing up a batch of rub from multiple spice jars.
  • If it is a slab of a two rib set cut them apart and also complete the partial cut between each rib.
  • Turn each rib on its side and push them together on the cutting board so they hold each other up.
  • Apply the dry rub to this side, then flip over and do the opposite side. Do not feel obligated to use the entire package of rub. Some of these rubs can be quite potent, so only use the amount you and your family are comfortable with.
  • Depending upon your local room temperature let the meat sit out for 30 to 45 minutes to let the spices absorb into the meat. Do not let the meat sit out very long if your room is already warm. As an alternative, you may also place the meat back into the refrigerator for a little while.
  • While this is going on pour your 1-qt. jar of sauerkraut (un-drained) into at least a 2-qt pan. If you do not care for the tartness of sauerkraut then drain and rinse it before placing in the 2-qt pan. Cover the kraut completely with water and simmer. On a gas stove the flame should be barely visible at the burner. Cook it for about 45 minutes; if you like it to be very soft. Check the kraut frequently to insure it does not boil dry.
  • To cook the pork, pre-heat a large skillet with high sides that has a non-stick coating and also a lid. Heat the skillet with lid on for about five minutes over a medium heat. DO NOT ADD ANY COOKING OR OLIVE OIL TO THE SKILLET. You will normally smell the skillet when it gets very hot. Now it is ready.
  • Place all the ribs into the skillet and rapidly brown all four sides; approximately five to ten seconds each side. Then immediately turn down the heat until the flame is barely visible at burner level and cover the skillet. Note, since there is no oil in the skillet when you are browning the pork it will not splash grease all over your stove top and the meat will not stick due to the non-stick coating.
  • The meat should reach 140 to 145 degrees in ten to fifteen minutes. Monitor the meat closely every five to eight minutes using a digital thermometer. Turn off the heat when the temperature reaches 140 degrees; do not let the meat go past 145 degrees. Even though the heat is off the meat will continue to cook and rise in temperature. While the meat is resting make a package of your favorite instant potatoes which take about five minutes. For this meal I used a package seasoned with roasted garlic. You may also make mashed potatoes from scratch just start them earlier in order that the meat, kraut, and potatoes are all done at the same time. Now just serve, enjoy, and wait for the compliments.
