PENANG NYONYA SWEET AND SOUR FISH
I was goggling for a simple Penang fish recipe and I found this from Rasa Malaysia, Penang Nyonya Cooking. Eh... to my surprise, this is a Penang dish and this steamed sweet sour fish is not new to me and others too. I used to prepare this steamed fish and sometimes I would just deep fry the fish but use the same sauce. It is simple and very appetizing. Give this a try if you haven't and you would not regret. For deep fried, sometimes I added apples to the sauce and it's yummy. Will post this fried

Steps:
- Steam the fish until cooked, about 10 to 15 minutes. Remove, discard the water and set aside. To prepare the gravy, heat up 2 tablespoons of oil in a wok. Add onion and chili. Stir-fry for 1-2 minutes or until soft. Add preserved soy bean paste and stir-fry until fragrant over low heat. Add tomato,chili sauce, tomato sauce, light soy sauce, apple cider vinegar, salt, sugar and water. Bring to a slow boil. Add cornstarch solution and stir quickly for a few more minutes. Pour the gravy over the steamed fish. Serve with steamed rice.

An excellent, traditional sweet and sour sauce. It is great served with meatballs, with tempura, or even over rice!

SIMPLE SWEET AND SOUR SAUCE
This is a simple sweet and sour sauce with nice depth of flavor. You can use it for marinating chicken and pork or for a dipping sauce. Goes great with meatballs for something a little different. For a zesty kick, add some bottled hot pepper sauce.

- Stir pineapple chunks with juice, 3/4 cup water, rice vinegar, ketchup, brown sugar, soy sauce, and Worcestershire sauce together in a saucepan; bring to a boil, reduce heat to low, and cook at a simmer until the pineapple is tender, about 20 minutes.
- Pour pineapple mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Return mixture to saucepan and bring to a simmer.
- Whisk cornstarch and 2 tablespoons water together in a bowl until smooth; stir into the sauce. Increase heat to medium. Cook and stir sauce until thick, 2 to 3 minutes.

GRILLED SKATE WINGS WITH NONYA SWEET-AND-SOUR SAUCE

- 1. Preheat the grill to high.2. Cut the skate wings crosswise (in the same direction as the bones) into 1-inch strips. Butterfly each strip by cutting it in half lengthwise as far as, but not through, the bottom piece of skin. Spread the halves open, then set the strips aside while you prepare the basting mixture.3. Combine the coriander, curry powder, cloves, chile, water, Worcestershire sauce, salt, and pepper in a bowl and whisk until smooth (see Note).4. When ready to cook, preheat a fish or vegetable grate (if using) for 5 minutes, then oil it or the grill grate. Arrange the skate pieces on the hot grate and grill until nicely browned on the bottom, 2 to 4 minutes. Using a long spatula, carefully turn the pieces over and brush each with 1 to 2 tablespoons of the Nonya Sweet-and-Sour Sauce. Grill until browned on the second side and the meat flakes easily when pressed with a finger, 2 to 4 minutes longer.5. Using the spatula, transfer the skate to serving plates or a platter and serve immediately.Serves 4Note: This makes a wonderful basting liquid for any type of seafood it will keep for weeks in the refrigerator.

- Stir water, sugar, ketchup, pineapple, vinegar, red pepper flakes, soy sauce, steak sauce, and hot sauce together in a saucepan over medium heat. Remove 1/2 cup of the sauce to a small bowl; whisk cornstarch into the sauce in the bowl. Bring the sauce in the saucepan to a boil, stir the sauce with the cornstarch into the boiling sauce. Cook, stirring occasionally, until thickened, about 15 minutes. Remove from heat and allow to cool slightly before using.

NONYA SWEET-AND-SOUR SAUCE

Combine the shallots, chiles, lemongrass, garlic, oil, 1/3 cup lime juice, the orange juice, 2 tablespoons sugar, 1 1/2 tablespoons soy sauce, 1 teaspoon salt, and the turmeric in a blender and process until almost smooth the sauce should remain a little chunky.2. Transfer the mixture to a small, heavy saucepan and cook over medium heat until slightly reduced, nicely browned, and richly flavored, 15 to 20 minutes, stirring frequently. Stir in the coconut milk and simmer the sauce until thick and creamy, about 5 minutes longer. Remove from the heat and taste for seasoning, adding salt, sugar, soy sauce, or lime juice as necessary the sauce should be a little sweet, a little tart, and very aromatic.3. If not using immediately, cool the sauce to room temperature, then transfer to a clean jar and store, tightly covered, in the refrigerator. It will keep for several weeks.Makes 1 1/2 to 2 cups
