1/2 cup ricotta cheese
1/4 cup parmesan cheese, Grated
1/2 cup plain yogurt
1/2 cup fresh parsley, Chopped
1 tablespoon margarine, softened
1 tablespoon fresh basil, Chopped
2 cloves garlic, minced
1/2 teaspoon black pepper
1/2 cup walnuts, Chopped (about 2 oz)

Steps:

  • GARNISH: cherry tomatoes or broccoli florets, more grated Parmesan cheese, and sprinkling of freshly ground black pepper, optional.
  • Boil a large pot of water; cook pasta until al dente.
  • While pasta is cooking, in bowl of food processor, place ricotta, yogurt, margarine, garlic, walnuts, and chhese; process till smooth.
  • Stir in remaining ingredients.
  • When pasta is done, drain well.
  • Toss with sauce.
  • Top with garnishes and serve immediately.
  • VARIATIONS: - when sauce is tossed with pasta, add steamed vegetables such

This Campanelle with Walnuts, Ricotta, and Lemon dish tastes great at room temperature, and the recipe can easily be doubled or tripled to feed a crowd.

1/2 cup plus 2 tablespoons extra-virgin olive oil
4 large garlic cloves
Coarse salt and freshly ground pepper
1 pound campanelle pasta
1 cup packed fresh flat-leaf parsley leaves, divided, plus 2 tablespoons finely chopped parsley stems (from 1 small bunch)
2 heaping tablespoons finely grated lemon zest (from 3 large lemons)
4 ounces walnuts, toasted well and roughly chopped (1 1/4 cups)
1 cup fresh ricotta cheese

Steps:

  • Heat oil in a medium pan over medium heat until shimmering. Meanwhile, very thinly slice garlic with a mandoline (you should have 1/4 cup). Add to oil, and cook, stirring constantly, until garlic is pale golden brown and crisp, about 3 minutes. Drain garlic chips in a sieve set over a large bowl (reserve oil). Spread garlic chips on paper towels; season with salt.
  • Bring a large pot of salted water to a boil. Cook pasta until just barely al dente. Drain. Add pasta to oil, and toss. Partially cover, and let cool at least 20 minutes and up to 1 1/2 hours.
  • Roughly chop 3/4 cup parsley leaves, and add them with parsley stems, lemon zest, and walnuts to pasta. Toss to combine. Dot with cheese, and season with salt and pepper. Toss gently to combine, being careful not to fully incorporate cheese. Garnish with remaining parsley leaves, and serve with garlic chips.

salt
1 cup ricotta cheese, at room temperature
4 tablespoons soft butter
1 tablespoon walnut oil
1/3 cup walnuts, finely chopped
1/2 cup fresh grated parmesan cheese
parmesan cheese (to garnish)
1 cup milk or 1 cup pasta water
1 tablespoon snipped chives
1 tablespoon finely chopped chervil or 1 tablespoon parsley
fresh ground pepper

Steps:

  • Bring large pan of water to boil for pasta and add salt to taste.
  • If pasta is dried, add it at this time.
  • If it's fresh, wait until you've put together sauce ingredients.
  • Roughly mix ricotta cheese, butter, walnut oil, 1/4 cup walnuts and grated parmesan cheese.
  • Thin with half-and-half, stir in herbs and season with salt and pepper.
  • Transfer mixture to wide skillet.
  • About the time pasta is done, gently warm sauce over low flame.
  • Cook and drain pasta and add it directly to pan with ricotta mixture.
  • Toss everything together well, then place in heated bowl.
  • Scatter remaining walnuts over pasta and sprinkle with grating of parmesan cheese and plenty of ground pepper.
