Cardamom has such a delicate flavor. I've been making coffee cakes with this interesting spice for years, and now I found a use for it in waffles. More often than not, my family will request these waffles instead of plain ones.-Ruth Andrewson, Leavenworth, Washington

Number Of Ingredients 10

1 cup all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon ground cardamom
Dash salt
2/3 cup 2% milk
2/3 cup sour cream
1/4 cup butter, melted
2 eggs, separated
Honey or syrup

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, cardamom and salt. In a small bowl, combine the milk, sour cream, butter and egg yolks; stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown (waffles will be soft). Serve with honey or syrup.

1 cup fat-free milk
3/4 cup reduced-fat sour cream
1/2 cup packed brown sugar
1 tablespoon butter, melted
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the first seven ingredients. In another bowl, whisk the eggs, milk, sour cream, brown sugar, butter and vanilla. Stir into dry ingredients just until combined., Bake in a preheated waffle iron according to manufacturer's directions until golden brown.

1/2 teaspoon ground cardamom
1/2 teaspoon lemon zest
1/4 teaspoon kosher salt
1 cup all-purpose flour
1 teaspoon ground cardamom
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/4 teaspoon baking soda
1/2 cup whole milk
1/2 cup plain whole-milk yogurt
6 tablespoons grapeseed oil
2 large eggs, separated
1 tablespoon sugar
Unsalted butter, for cooking
Lightly toasted and finely ground pistachios
Seasonal fruit, such as pomegranates and diced pear
Good-quality maple syrup
Fresh mint leaves

Steps:

  • For the lemon butter: Add the butter, cardamom, lemon zest and salt to a bowl. Mix until combined. Turn out onto a piece of plastic wrap and roll into a log. Refrigerate until it hardens, at least 2 hours.
  • For the waffles: Combine the flour, cardamom, baking powder, salt and baking soda in a bowl and whisk together. Mix the milk, yogurt, grapeseed oil and egg yolks together in another bowl. Whisk the egg whites with the sugar in another bowl until nearly stiff peaks form.
  • Combine the flour mixture with the milk and yogurt mixture, then fold in the egg whites.
  • Preheat the oven to 200 degrees F. Preheat a waffle iron and line a baking tray with a wire rack.
  • Grease the waffle iron with a little butter. Cook waffles according to the waffle iron instructions. Remove to the prepared baking tray. Place in the oven until all the waffles are made and ready to eat.
  • For serving: Stack 2 waffles and top with a 1/2-inch-thick piece of lemon butter. Sprinkle with ground pistachios, top with seasonal fruit and drizzle with maple syrup. Garnish with fresh mint and serve.

Yield Makes 3 or 4 large (7-by-7-inch) waffles

Number Of Ingredients 9

5 large eggs
1/2 cup sugar
1 cup all-purpose flour
1 teaspoon coarse salt
1/2 teaspoon ground ginger, cinnamon, or cardamom
1 cup sour cream
4 tablespoons (1/2 stick) unsalted butter, melted and cooled
Vegetable oil or extra melted butter, for the waffle iron
1 cup berries, fresh or frozen, heated before serving

Steps:

  • Beat the eggs and sugar together for 5 to 8 minutes. When the beater is lifted, it should trail a ribbon of batter.
  • Whisk together the flour, salt, and spice. With a spoon, alternately fold into the batter half of the flour mixture. the sour cream, and finally the remaining flour mixture. Lightly stir in the melted butter. Let the batter sit for 10 minutes.
  • Heat a nonstick or well-seasoned waffle iron to medium high. Brush lightly with oil or melted butter. Pour in 1 1/4 cups batter and cook until golden, 2 1/2 to 3 minutes per side for a stovetop waffle iron. An electric waffle iron will beep when ready. Serve with fresh berries or berry sauce on top.
