8 oz uncooked whole wheat linguine, broken in half
2 cups fresh broccoli florets
1 cup julienne-cut carrots (from 10-oz bag)
1 medium bell pepper, cut into bite-size pieces
2 tablespoons water
2 teaspoons canola oil
1/4 cup peanut butter
2 tablespoons rice vinegar or white vinegar
2 tablespoons reduced-sodium soy sauce
1/2 teaspoon ground ginger
1/8 teaspoon ground red pepper (cayenne)
3 medium green onions, chopped (3 tablespoons)
3 tablespoons chopped fresh cilantro

Steps:

  • Cook linguine as directed on package, adding broccoli, carrots and bell pepper during last minute of cooking; drain pasta and vegetables. Rinse with cold water until pasta and vegetables are cool; drain
  • In small bowl, gradually beat water and oil into peanut butter with wire whisk until smooth. Beat in vinegar, soy sauce, ginger and ground red pepper.
  • In large serving bowl, stir together pasta mixture, peanut sauce, onions and cilantro until well mixed.

¼ cup rice vinegar
1 tablespoon sesame oil
2 tablespoons sriracha sauce

3 cloves garlic, minced

¼ cup water
salt, for water
1 box whole grain linguine, or pasta of choice
1 cup large carrots, julienned
2 cucumbers, shaved using vegetable peeler
1 red bell pepper, thinly sliced into strips
1 yellow bell pepper, thinly sliced into strips
3 green onions, sliced
¼ cup chopped fresh cilantro
¼ cup peanuts, chopped

Steps:

  • In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, Sriracha, water, ginger, garlic, brown sugar, and water.
  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Drain and run under cold water to cool.
  • Combine pasta with the sliced vegetables in a large bowl.
  • Pour the dressing over the pasta and vegetables and mix well. Cover and chill for at least 1 hour, or overnight. To serve, garnish with chopped cilantro and peanuts.

1/4 cup reduced sodium soy sauce
2 tablespoons rice vinegar
3 tablespoons sesame oil
2 tablespoons brown sugar
1/4 teaspoon black pepper
1/4-1/2 teaspoon ground ginger
1/4-1/2 teaspoon hot sauce, I use red pepper flakes
sesame seeds, for garnish (optional)

Steps:

  • Bring a large pot of boiling water to a boil. Cook spaghetti noodles according to package directions; drain; rinse in very cold water and drain again.
  • Place cooled noodles in a large bowl and toss with the carrots, scallions, bell pepper slices and cilantro.
  • In a small bowl, whisk together the sauce ingredients until smooth.
  • Drizzle the sauce over noodles mixture; toss to coat well.
  • Serve room temp or cold.
  • Garnish with sesame seeds if desired.

½ cup creamy peanut butter
¼ cup hot water (or more as needed)
2 tablespoons soy sauce
2 tablespoons lime juice
½ teaspoon chili garlic paste
1 tablespoon brown sugar or honey
½ teaspoon minced garlic
½ cup slivered radishes (julienned, or cut into matchsticks)
½ cup sliced scallions (white and green parts)

Steps:

  • Cook pasta according to package directions.
  • While the noodles are cooking, put the peanut butter, water, soy sauce, lime juice, chili paste, brown sugar or honey, and garlic in a food processor or blender and process until smooth.

4 cups mix of red cabbage, carrots and radish, shredded or grated
1 red bell pepper, finely sliced
3 scallions, sliced
½ bunch cilantro, chopped (or sub basil and mint)
1 tablespoon (or less, or more) jalapeño, finely chopped
¼-½ cup roasted, crushed peanuts ( optional garnish)
3 thin slices ginger- cut across the grain, about the size of a quarter.
1 fat clove garlic
¼ cup peanut butter ( or sub almond butter!)
¼ cup fresh orange juice ( roughly ½ an orange)
3 tablespoon fresh lime juice ( 1 lime)
2 tablespoons soy sauce or GF Braggs Liquid Amino Acids (Note: Tamari will turn this unpleasantly dark)
3 tablespoons honey, agave, or maple syrup
3 tablespoons toasted sesame oil
½ -1 teaspoon cayenne pepper ( or a squirt of sriracha sauce)
½ teaspoon salt

Steps:

  • Cook pasta according to directions on package. ( See notes for rice noodles) Drain and chill under cold running water.
  • while noodles are cookig, blend the peanut sauce ingredients together using a blender until smooth.
  • Place shredded veggies, bell pepper, scallions, cilantro and jalapeño into a serving bowl. Toss. Add the cold noodles to the serving bowl and toss again. Pour the peanut sauce over top and toss well to combine.
  • Adjust the salt (to your liking), add chili flakes if you want, and serve, garnishing with roasted peanuts and cilantro and a lime wedge.

1/2 c mirin
1/2 c water
1/2 c loosely packed bonito flakes
3 Tb soy sauce
finely grated daikon
wasabi
shredded nori seaweed strips

Steps:

  • Bring a pot of water to a boil. Add soba noodles and cook according to package directions, about 4-5 minutes. Drain and cool with cold running water or ice.
  • Bring 1/2 c mirin and 1/2 c water to a boil. Simmer for 30 seconds to remove the alcohol. Turn off heat and add bonito flakes. Let sit for 10 minutes. Strain and add soy sauce.
  • Serve noodles and dipping sauce in separate dishes. Add garnishes as desired.

150 g brown rice noodles
1 cucumber
2 carrots
1/4 of a small red cabbage
200 g smoked tofu ( firm)
1/4 cup peanuts
1/2 cup chopped cilantro
2 tablespoon smooth peanut butter
2 1/2 tablespoon soy sauce (tamari for gluten-free)
1/2 tablespoon rice vinegar
1 tablespoon maple syrup
1 1/2 tablespoon sesame oil
1 tablespoon lime juice

Steps:

  • Following the packet instructions, soak the rice noodles in water until they are soft and ready to go in your salad.
  • Thinly cut or shred the carrots, cabbage and cucumber. Cucumber can be left a bit bigger as it's softer.
  • Heat some coconut oil in a pan and stir fry the tofu. When it starts to golden, add the soy sauce and maple syrup. Set aside to cool.
  • Toast the peanuts in a pan. Don't add any oil as they need to be toasted not fried. Set aside to cool.
  • In a small bowl, prepare the dressing mixing the smooth peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil and lime juice
  • Combine the fresh ingredients, tofu, peanuts and noodles in a big salad bowl. Add the peanut dressing and mix well until all the ingredients are incorporated.
  • Add chopped cilantro on the top and your salad will be ready to serve.

Set a colander over a flat bowl. We are using these, in turn, for the snow peas, julienned carrots, julienned bell pepper and soba noodles.
  • While waiting for the water to boil, whisk all ingredients together. Taste and season with kosher salt as needed – amount depends on saltiness of peanut butter, and whether you used tamari or light soy sauce (former is typically saltier than the latter). It should taste salty, since it will be used to coat noodles. If you made it ahead and it’s a bit thick upon taking it out of the fridge, add a splash of boiling water and whisk until loose again.
  • Add a bunch of ice cubes into the large bowl of water. Once the pot of water comes to a boil, add a generous amount of salt (as if salting for pasta) and add sugar snap peas. Blanch 3-4 minutes until tender but still retaining crispiness. Do not dump out the water: Use tongs or a handle mesh strainer to transfer sugar snap peas into the ice bath. Once cool, transfer into colander to drain.
