4 cups fat-free, less-sodium chicken broth
1/2 teaspoon dried Italian seasoning
1/2 teaspoon black pepper
2 (15.8-ounce) cans Great Northern beans, drained and rinsed
1 (6-ounce) bag fresh baby spinach leaves

Steps:

  • Heat a large saucepan coated with cooking spray over medium-high heat. Add carrots, onion, garlic, and kielbasa; sauté 3 minutes, stirring occasionally. Reduce heat to medium; cook 5 minutes. Add the broth, Italian seasoning, pepper, and beans. Bring to a boil, reduce heat, and simmer 5 minutes. Place 2 cups of the soup in a food processor or blender, and process until smooth. Return the pureed mixture to pan. Simmer an additional 5 minutes. Remove soup from heat. Add the spinach, stirring until spinach wilts. 1 cup baby carrots, halved
1 cup chopped onion
2 garlic cloves, minced
7 ounces turkey kielbasa, halved lenghtwise and cut into 1/2-inch pieces
4 cups fat-free low-sodium chicken broth
1/2 teaspoon dried Italian seasoning
1/2 teaspoon black pepper
2 (15 7/8 ounce) cans great northern beans, drained and rinsed
1 (6 ounce) bag fresh baby spinach leaves

Steps:

  • Heat a large saucepan coated with cooking spray over medium-high heat.
  • Add carrots, onion, garlic, and kielbasa and saute 3 minutes, stirring occasionally.
  • Reduce heat to medium and cook 5 minutes.
  • Add broth, seasoning and beans.
  • Bring to a boil, reduce heat, and simmer 10 minutes.
  • Place two cups of soup in a blender, process until smooth.
  • Return the pureed mixture to pan and simmer an additional 5 minutes.
  • Remove soup from heat.
  • Add the spinach, stirring until spinach wilts.
  • Enjoy.

1 tablespoon olive oil
1 large onion, chopped
5 cloves garlic, minced
2 carrots, chopped
1 stalk celery, chopped
4 cups vegetable broth
1 large potato, chopped
2 bay leaves
1 tablespoon dried basil
1 teaspoon sea salt
½ teaspoon ground black pepper
1 pinch ground thyme
2 (15 ounce) cans great Northern beans, rinsed and drained

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir onion and garlic in hot oil until the onion is tender, about 5 minutes.
  • Stir carrots and celery into the onion mixture. Pour vegetable broth into the stockpot; add potato, bay leaves, basil, sea salt, pepper, and thyme. Bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer until the vegetables are beginning to soften, about 20 minutes.
  • Stir beans into the soup; continue simmering until the beans are hot and tender, about 20 minutes more.

1 cup baby carrots, chopped
1 cup onion, chopped

4 cups chicken broth
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
2 (15.8-ounce) cans great northern beans, drained and rinsed
1 (6-ounce) package baby spinach

Steps:

  • Spray a large stockpot with non-stick vegetable spray; heat over medium-high heat. Add Kielbasa, carrots, onion and garlic; sauté for 3 minutes, stirring occasionally. Reduce heat to medium; cook for 5 minutes. Add broth, seasonings and beans. Bring to a boil; reduce heat and simmer for 5 minutes. Place 2 cups of soup in a blender or food processor. Process until smooth; return processed soup to pan. Simmer for an additional 5 minutes; remove from heat. Add spinach, stirring until it wilts.
