2 boxes Betty Crocker™ cinnamon streusel muffin mix
1 cup chopped peeled apple
1 cup shredded carrot
1 cup chopped walnuts
1 cup flaked coconut
1/2 cup vegetable oil
4 eggs
2 cans (8 oz each) crushed pineapple in juice, undrained
1 cup powdered sugar
2 to 4 teaspoons water

Steps:

  • Heat oven to 400°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray. In large bowl, stir together both muffin mixes, apple, carrot, walnuts and coconut. In medium bowl, stir together oil, eggs and pineapple; stir into muffin mixture. Spread in pan. Sprinkle with streusel (from muffin mixes).
  • Bake 43 to 45 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
  • In small bowl, mix powdered sugar and enough of the 2 to 4 teaspoons water until smooth and thin enough to drizzle. Drizzle over warm cake.

The from-scratch biscuit base is scone-like in its buttery texture and tastes great on its own, but when topped with sweetened whipped cream and sugared strawberries, it's simply divine. If you have other fresh berries on hand, you can use your favorite combination to top the shortcake base. This dessert will be your new party favorite.

3 1/2 cups Gold Medal™ all-purpose flour
1/2 cup granulated sugar
5 teaspoons baking powder
1/2 teaspoon salt
1 cup cold butter, cut in pieces
2 eggs, slightly beaten
2 cups heavy whipping cream
1 quart (4 cups) strawberries, sliced
1/4 cup granulated sugar
2 cups heavy whipping cream
1/3 cup powdered sugar
1 teaspoon vanilla

Steps:

  • Heat oven to 400°F. In large bowl, stir the flour, 1/2 cup granulated sugar, baking powder and salt until blended. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs.
  • In small bowl, beat eggs and 2 cups whipping cream just until blended. Stir into flour mixture until mixture forms a soft dough. Using lightly floured fingers, pat and press dough in bottom of 15x10x1-inch ungreased pan.
  • Bake 16 to 20 minutes or until golden brown. Cool completely, about 1 hour.
  • Meanwhile, in large bowl, mix strawberries and 1/4 cup granulated sugar; stir occasionally.
  • When ready to serve, in chilled large bowl, beat Topping ingredients with electric mixer on medium-high speed until stiff peaks form. Spread top with whipped cream. Using slotted spoon, spoon sugared berries over top. Cut into 4 rows by 4 rows. Store covered in refrigerator.

1 tablespoon distilled white vinegar
2 teaspoons vanilla extract
⅓ cup vegetable oil
1 cup water
¼ cup butter
¼ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch square pan.
  • Sift together the flour, 1 cup of the sugar, 1/4 cup of the cocoa, the soda, and the salt. Stir in the vinegar, oil, water, and 1 teaspoon vanilla. Beat until smooth. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Let cake cool. Then spread chocolate icing over top.
  • To Make Chocolate Icing: Combine 1 cup of the sugar, 1/4 cup of the cocoa, the milk, and the butter or margarine. Boil for 1 minute. Stir in 1 teaspoon vanilla and continue stirring until partially cool. Spread over cake.

1 (8 ounce) package cream cheese, softened
4 cups powdered sugar
1 pint whipping cream, whipped
2 (16 ounce) cans cherries, raspberry or 2 (16 ounce) cans strawberry pie filling

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour two 9X13" baking pans.
  • Prepare cake according to package directions, and pour half of cake batter in each pan.
  • Bake for 20 minutes or until cake tests done.
  • Remove from oven and cool.
  • Whip cream cheese and powdered sugar together till fluffy.
  • Add whipped cream.
  • Spread mixture onto both cakes.
  • Spread pie filling on top of cream cheese layer.
  • Refrigerate until ready to serve.

2/3 cup(s) cocoa
1 teaspoon(s) salt
2 teaspoon(s) baking soda
1 teaspoon(s) vinegar

TO TOP THE CAKE:
2 box(es) instant chocolate pudding
3 cup(s) milk
1 package(s) cool whip

Steps:

  • Mix dry ingredients in a large bowl. Make 3 holes (1 large and 2 small). In 1 hole put 1 teaspoon vinegar, in 1 hole put 2 teaspoons vanilla, in last hole put 1 cup oil. Pour 2 cups cold water over all and mix. Pour into greased pan 14 x 10 x 2. Bake at 350 degrees for 30 to 35 minutes. Mix 2 packages of instant chocolate pudding with the 3 cups of milk(if it seems too thick you can add another 1/2 cup of milk). When set(you can put this in the refrigerator for 30 minutes to help if you are in a hot area), spread on cooled cake in pan. Cover with Cool Whip....you can then fancy it up with sprinkles,chopped nuts,shaved chocolate,mini chocolate chips,etc...if you would like to.
