CHOCOLATE DOUGHNUT HOLES

Chocolate Doughnut Holes image

Provided by Food Network Kitchen

Time 5h

Yield About 5 dozen

Number Of Ingredients 18

2 1/2 cups all-purpose flour, plus more for dusting
3/4 cup Dutch-process cocoa powder
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter, at room temperature
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 teaspoon finely grated orange zest
3/4 cup sour cream
Nonstick cooking spray
Vegetable oil or shortening, for frying
4 ounces semisweet chocolate, chopped
1/2 cup heavy cream
1 tablespoon light corn syrup
1/2 teaspoon pure vanilla extract
Orange and black nonpareils, for decorating

Steps:

  • Make the doughnut holes: Whisk the flour, cocoa powder, baking powder, salt and cinnamon in a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until smooth, about 3 minutes. Beat in the eggs, one at a time, then beat in the vanilla and orange zest until light and fluffy, about 2 more minutes. Reduce the speed to low and gradually beat in the flour mixture, alternating with the sour cream, until a sticky dough forms, about 2 minutes. Cover the dough with plastic wrap; refrigerate at least 3 hours or overnight.
  • Coat a baking sheet with cooking spray. Heat 2 inches of vegetable oil in a large pot over medium-high heat until a deep-fry thermometer registers 340 degrees F. Meanwhile, roll out the dough until 1/2 inch thick on a floured surface. (The dough will be sticky.) Cut out rounds using a 1-inch-round cookie cutter, dipping the cutter in flour each time. Place the rounds on the prepared baking sheet.
  • Set a rack on another baking sheet. Working in batches, carefully fry the doughnut holes until puffed and browned, 30 seconds per side. Transfer to the rack using a slotted spoon or wire strainer.
  • Make the glaze: Line a baking sheet with parchment paper. Put the chocolate in a small heatproof bowl. Bring the heavy cream to a boil in a small saucepan and immediately pour over the chocolate; cover and let stand 5 minutes. Whisk until the chocolate is melted and smooth, then whisk in the corn syrup and vanilla. Set aside until cooled and thickened, about 5 minutes. Dip the doughnut holes in the glaze, transfer to the prepared baking sheet and sprinkle with nonpareils. Let sit at least 1 hour before serving.

RACHEL GOOD'S GLAZED POTATO DOUGHNUTS

Rachel Good's Glazed Potato Doughnuts image

Categories     Potato     Side     Fry     Boil

Yield makes about 36

Number Of Ingredients 13

8 ounces russet potatoes, peeled and sliced
1/4 cup warm water, plus 6 tablespoons water
1 tablespoon active dry yeast
1 cup milk, scalded
1/4 cup solid vegetable shortening
3/4 cup granulated sugar
1 teaspoon salt
2 large eggs, lightly beaten
5 cups all-purpose flour, plus more, if needed, for the dough and work surface
2 quarts vegetable oil, plus more for the bowl
4 cups confectioners' sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon

Steps:

  • Have ready 2 parchment-lined baking pans. Place the potatoes in a small saucepan, cover with cold water, and bring to a boil over high heat. Cook until tender, about 15 minutes. Drain in a colander. Pass the potatoes through a potato ricer or food mill and into a medium bowl; set aside.
  • Place 1/4 cup warm water in a small bowl; sprinkle with the yeast, stir gently, and let stand until creamy, 5 to 10 minutes. Using an electric mixer fitted with the paddle attachment, combine the milk, shortening, 1/4 cup sugar, and salt. Let stand until cooled to just warm. Add the yeast mixture, reserved potatoes, and eggs; beat until combined.
  • Switch to the dough hook. Add 5 cups flour, and mix on medium-low speed until combined, adding more flour if necessary, until a smooth and elastic dough is formed, about 5 minutes. Transfer the dough to a large, lightly greased bowl; cover. Let stand in a warm place until the dough is doubled in size, about 55 minutes.
  • Transfer the dough to a lightly floured surface. Roll out to 1/2 inch thick. Using a 2 1/2-inch-diameter doughnut cutter, cut and place on prepared baking pans. Loosely cover with plastic wrap; let stand in a warm place until the dough has risen by about one-third, about 30 minutes.
  • Combine the confectioners' sugar, vanilla, and remaining 6 tablespoons water in a medium bowl, stirring until smooth; set aside. In a medium bowl, whisk together the remaining 1/2 cup granulated sugar and cinnamon until well combined; set aside.
  • In a large, low-sided saucepan over medium heat, heat the oil until a deep-fry thermometer registers 375°F. Drop the doughnuts into the oil; fry in batches until golden, 1 to 2 minutes per side. Transfer to several layers of paper towel to drain. Place the drained doughnuts on a wire rack set over a baking pan. Dip half the doughnuts in the glaze; return to the wire rack. Roll the remaining doughnuts in the cinnamon-sugar mixture until well coated.

AUNT KATHY'S OLD-FASHIONED POTATO DONUTS

Aunt Kathy's Old-Fashioned Potato Donuts image

As a child, my husband loved going to his Aunt Kathy's in hopes that she would be making his favorite old-fashioned potato donuts. These are light and flavorful. They are best served fresh and warm and enjoyed with a cup of hot coffee, tea, or cocoa. You can leave them plain, dust them with powdered sugar, white sugar and cinnamon, or drizzle them with a glaze.

Categories     Bread     Quick Bread Recipes

Time 2h20m

Yield 20

Number Of Ingredients 12

2 quarts vegetable oil for frying
1 cup white sugar
4 tablespoons shortening
1 cup milk
2 eggs
1 teaspoon vanilla extract
1 cup instant mashed potatoes
4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Beat sugar and shortening together in a bowl using an electric mixer until creamy. Add milk, eggs, and vanilla extract; stir well. Stir in mashed potatoes. Add flour, baking powder, salt, nutmeg, and cinnamon. Stir using a sturdy spoon, as mixture will be thick. Refrigerate dough for 1 hour so that dough will be less sticky and easier to work with.
  • Lightly flour a countertop and place plastic wrap on top of dough; roll out to desired thickness. Cut into strips or use a donut cutter to make traditional round donuts.
  • Lower donuts carefully into the hot oil in batches. Fry until 1 side is golden brown, 2 to 3 minutes. Turn and continue frying until other side is golden, about 2 minutes more. Transfer to a plate lined with paper towels to drain. Repeat with remaining donuts.
  • Transfer donuts to a wire rack to cool.

  • Combine yeast ingredients together in a small bowl. Allow to sit for 10 minutes and bubbles surface.
  • Add vinegar to milk in a small saucepan. Allow to sit for a few minutes until it begins to look curdled (do not worry!) Turn heat to medium, stirring frequently, until milk is very hot but not boiling. Milk will separate and look curdled but that is fine. Add butter and remove from heat. Pour in chocolate and vanilla and mix until well combined.
  • Add sugar and eggs to your stand mixer. Mix until well combined. On low speed, pour in cooled milk/chocolate mixture until combined. Pour in remaining water, ground pecans, potatoes, cocoa powder, and spices. Mix well.
  • Attach dough hook and on low speed, add ½ cup flour at a time until a nice, soft dough forms. Don’t worry if it is sticky, we will be rolling it in flour. If it is really sticky, add another ½ cup of flour until it is not overly sticky. But doughnut dough should have tackiness to it.
