GRANDMA'S NO-ROLL-CRUST CHOCOLATE PIE
I like this because I'm not very good with rolling out pie crusts and the prep time and cook time are fast when you need something on the run. I also wanted to share the recipe because it's very old. My grandma said this has been passed on for a very long time. I have added the chocolate pudding and Cool Whip to make it an even faster recipe.

GRANDMA'S CHOCOLATE PIE
It's just NOT the holidays without Grandma Klepper's Chocolate Pie. This has been at the dinner table for more years than I could count. Now it's at my table every Thanksgiving :) Enjoy!

Steps:
- Make Pie crust first. Place flour and sugar in a food processor. Pulse. Add about half of the butter. Pulse. Add the rest of the butter. Pulse until the mixture turns into coarse crumbs. Through the feed tube, slowly add the ice water and pulse until the dough gathers up into a ball. If it doesn't after a few seconds, add a few more drops of ice water until it does. Take the dough and flatten it into a disc and place it on a sheet of floured plastic wrap. Refrigerate for about 30 minutes.
- while waiting on the crust to chill.. bring all your ingredients on a stove top to a easy boil (leaving out marshmellows) Stirring always (careful not to burn your pudding)slowly add marshmallows once pudding mix is well combined, whisk til completely melted.
- Remove crust from fridge,You will need a 9-inch deep dish pie plate, sprayed with a little Pam and some pie weights or dried beans. Preheat the oven to 375 degrees F. Roll out the pie dough between two sheets of plastic wrap until it's a little larger than your pie dish. Transfer to the pie dish (the easiest way to do this is to roll up the sheet of dough around the rolling pin, transfer the rolling pan to the pie plate and unroll). Gentle press the dough down into the pie plate. Crimp the edges decoratively and dock the bottom of the dough with a fork or your fingers. Line the pie with a sheet of tin foil. Place either pie weights or dried beans in the pie plate. Gentle press down the pie weights so they fill in the bottom of the plate. Bake for 15 minutes. Take pie out of oven and gently remove the sheet of tin foil with the pie weights. Place pie back in oven and back for another 15 minutes. Check the pie dough and, if you see any large bubble forming, spear it with a knife tip.
- Once crust is completely cooked and cooled, place pudding mixture into pie pan. Set in fridge until ready to serve, right before serving, spread whipped topping onto the top of your pie, and shave Hershey's candy bar, onto the top of the pie, slice and serve!!!!! I hope you enjoy my family's tradition with your family and friends!!!!!

GRANDMA'S CHOCOLATE PIE
Probably the easiest chocolate pie recipe you will find, this one is a big winner with everyone who tries it. My Grandma served it every time she made pies for dessert and there were never any leftovers. I use store bought pie crusts, but my Grandma made them from scratch.

MY GRANDMA'S CHOCOLATE PIES
My grandma didn't measure anything so this is as close as I could get. I never said it was a healthy recipe. It can be made without the evaporated milk and using low fat or skim milk and using margarine instead of butter but please use real vanilla and a good quality cocoa. You might have to adjust the cornstarch or cocoa depending on how thick or chocolaty you like your pies. I make 2 of these pies for every church covered dish meal and never get to bring a slice home. Oh yes...you can cook the filling in a large double boiler to avoid scorching it, it just takes longer.

Steps:
- Stir together sugar, cornstarch, salt and cocoa in a heavy 3 quart boiler.
- Beat egg yolks with milk and stir into dry ingredients.
- Add butter that has been cut into small cubes and cook over medium heat, stirring constantly until mixture thickens and just begins to "bubble".
- You must stir constantly or this filling will scorch.
- Remove from heat and stir in vanilla and pour into baked pie shells and let cool some.
- Make a meringue from the 6 egg whites, cream of tarter and sugar.
- Spread on top of pies and brown in the oven at 325°F.
- Remove pies from oven when meringue is nicely brown.
- Let cool at least 30 minutes before you attempt to cut these pies.
- Let the kids or dear hubby have the pot and stirring spoon to lick clean.
