If you've come here looking for the sweet orangey stuff, click the Back button. This is authentic salad dressing as the French would have. Dancer and another poster have similar recipes, but mine is a variation and a damned good one if you ask me. WELL worth a try since it is so simple and I am sure you'll make it many times if you give it a try. The recipe may be doubled or tripled. Very salty and tangy.

2 teaspoons tomato paste
1 1/2 teaspoons sugar
1 teaspoon finely grated onion
1 teaspoon dried mustard
3/4 teaspoon paprika
Pinch of sweet smoked paprika
1/4 teaspoon coarse salt
1/4 teaspoon celery seed
Freshly ground pepper
4 1/2 teaspoons red-wine vinegar
1 1/2 teaspoons fresh lemon juice
1/2 cup canola oil

Steps:

  • Whisk the tomato paste, sugar, onion, mustard, paprikas, salt, and celery seed in a medium bowl; season with pepper. Whisk in the vinegar and lemon juice. Add the oil in a slow, steady stream, whisking until emulsified. Alternatively, puree all ingredients except the oil in a blender. With the machine running, add the oil in a slow, steady stream; blend until emulsified. Use the dressing immediately.

1 clove garlic, halved

¼ cup white wine vinegar

Steps:

  • In a small bowl mix the vinegar and salt and let stand a few minutes. Add the pepper and slowly whisk in the oil. Taste for acid and salt and add more if too bland. Stir to blend before using, or store in a jar with a tight lid and shake well before using.

  • Add 1 teaspoon curry powder and blend well.

  • Add 3 tablespoons heavy cream or sour cream and blend well.
  • Fruit Salad French Dressing.
  • Use lemon juice instead of vinegar and add 1/3 cup honey. Blend well.
  • Blue Cheese Dressing.
  • Add 3 tablespoons crumbled blue cheese. Blend well.
  • Cumberland Dressing.
  • Add 1 tablespoon heavy cream, 1 tablespoon currant jelly, and 1/4 teaspoon grated lemon rind. Mix until well blended.
  • Chiffonade Dressing.
  • Add 1 tablespoon minced parsley, 2 tablespoons minced red pepper, 1 tablespoon minced onion, and 2 hard-boiled eggs, chopped fine. Blend all ingredients well.

This is absolutely the best tasting French dressing I've ever had, and it's the one dressing that everyone in my family will eat, so I've been making only this one for months now. I shared the recipe with a friend of mine who used to live in France. She told me that one would never find such a dressing in France (I think because of the sugar in it) so I named it "Not French Dressing." She tried it anyway, and her family also liked it, even if it's not REALLY French. I've also made this with apple cider vinegar, and you can use whatever lighter oil you prefer - or use all olive oil, though, if you do, the oil will probably get semi-solid in the refrigerator. You can also reduce the amount of sugar if you find it a bit too sweet for your taste.
