CHEESY SWEET AND SAVORY SPUDS



Cheesy Sweet and Savory Spuds image

I always have my friends begging me to know what I put in my mashed potatoes. These get all the taste buds going!

6 Yukon Gold potatoes, peeled and cubed
2 sweet potatoes, peeled and cubed
2 tablespoons butter
½ cup heavy cream
1 tablespoon chicken bouillon granules
1 ⅔ tablespoons brown sugar
2 teaspoons black pepper
2 cups shredded Monterey Jack cheese

Steps:

  • Place the potatoes and sweet potatoes in a large pot with enough water to cover. Bring to a boil. Cook about 15 minutes, until tender but firm. Remove from heat, and drain.
  • Preheat the oven broiler.
  • In a large bowl, mash the potatoes. Gradually mix in butter, heavy cream, chicken bouillon, brown sugar, and pepper. Transfer the mixture to a medium baking dish, and top with Monterey Jack cheese.
  • Broil uncovered in the preheated oven 10 minutes, or until the cheese is melted and lightly browned.

I came up with this recipe as a great way to make potatoes new and exciting. They come out tender, crispy, and full of flavor.

2 pounds potatoes, cubed
2 tablespoons dried minced onion
2 ½ teaspoons dried parsley
1 ½ teaspoons garlic powder
1 teaspoon seasoned salt
¼ teaspoon fresh-ground black pepper
2 ½ tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the potatoes, minced onion, parsley, garlic powder, seasoned salt, pepper, and olive oil in a large bowl; toss together until potatoes are evenly coated. Spread potatoes in an even layer on a baking sheet lined with aluminum foil.
  • Bake for 20 minutes in the preheated oven; flip the potatoes and continue to bake until tender, 20 to 25 minutes.

4 large russet potatoes, peeled, and diced to 3/4 to 1 inch
1 large yellow onion, preferably Vidalia, chopped
3 -4 tablespoons bacon drippings
salt
pepper

Steps:

  • Rince spuds in cold water and drain well.
  • Heat Bacon drippings in lg. skillet or electric skillet over medium heat.
  • Add potatoes and saute until potatoes begin to brown. Add onions and seasonings and stir to combine. Cover and watch closely stirring occasionally until potatoes are tender. Adjust seasonings to taste.
  • Serve with you favorite beans and cornbread.
