NOW THAT'S WHAT I'M TALKIN' ABOUT! BAKED BEANS
The sauerkraut may come as a surprise, but being of part German heritage with ancestry going back into Kentucky, everyone who can identify with that will taste these and say "That's what I'm talkin' about!" I have adapted the recipe for low carb/diabetic (part of my ancestry as well), but feel free to use regular versions of ketchup, molasses/honey, or brown sugar. I bought my sugar-free molasses syrup online (naturesflavors.com) I don't know where I'd be without it!

- Bake, uncovered at 375F for 25-35 minutes or until thick and hot.

OVERNIGHT OLD FASHIONED BAKED BEANS
This is the first recipe I tried to make baked beans from scratch. It has been a favourite for 20 + years.

Steps:
- Wash beans, place in medium bowl, cover with cold water and refigerate overnight.
- Drain beans, place in saucepan and cover with 6 cups hot water, bring to boil.
- Reduce heat, simmer covered 40 minutes or till tender.
- Preheat oven to 300°F.
- Drain beans, reserve 2 cups liquid.
- Place beans in 2 quart bean pot or casserole with tight fitting lid.
- Mix together all other ingredients (except pork), add bean liquid and stir to combine.
- Add pork to beans, mix in well.
- Pour liquid ingredients over beans and stir well, be sure liquid covers beans.
- Cover and bake 5 hours.
- Stir every hour, if bean dry out add small amounts of boiling water as needed.
- Note: preparation time doesn't include overnight refrigeration.

- In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

OLD TIME BAKED BEANS
These are the beans my French-Canadian mother used to make. She never measured anything making these so I've estimated the amounts. These taste great with fresh bread. A good dish to keep in mind for pot-lucks. You can add pork or weiners to it if you like. Bacon strips on top work well.

Steps:
- Soak beans overnight in water, then boil until tender (not mushy) Note: Soaking is not mandatory but it reduces boiling time.
- Drain water and put beans in a large heavy pot or crock.
- (5 liter Corningware works well) Add all ingredients together and mix.
- Add enough water to cover beans.
- Cover and bake at 325 degrees for about 6 hours.
- Check beans while they are baking to add water to ensure they do not go dry.

- Brown meat and saute onion together on medium high heat in a frying pan.
- After the ground beef is cooked through, drain the grease well.

SUPER AWESOME BAKED BEANS
Everywhere I have taken this dish, it's all people talk about! It's the only way I do baked beans anymore! When it's just DH and I, I use only 1 can and 2 quart dish. I hope the measurements are right...I always just eyeball everything! I don't like my baked beans as sweet as most people, so feel free to add more brown sugar to taste! Enjoy!

Steps:
- In a bowl, combine HALF of the chopped BACON and the french fried onions. Set aside.
- In a greased 13x9 casserole dish, combine remaining ingredients and mix well. (Taste mixture -- you might want more brown sugar or salt/pepper).
- Bake uncovered at 350 degrees for 20 minutes.
- Sprinkle french fried onion and bacon mixture all over beans. Return to oven and bake 5-10 minutes until golden brown.
