AMISH COUNTRY DATE NUT PUDDING

Steps:
- Preheat oven to 350 degrees F. Prepare an 8-inch square or 9-inch round baking pan by spraying with non-stick baking spray. Line the bottom with a fitted piece of parchment paper and spray paper.
- Put chopped dates into a mixing bowl. Add 1 teaspoon baking soda and 1 cup boiling water. Stir occasionally and let set until cooled. The dates will turn into a chunky puree.
- When cool, add sugar, butter, egg, vanilla, and salt. Mix well to combine. Add the flour and mix to combine. Add the nuts and stir to combine.
- Pour into prepared baking pan and bake until a toothpick inserted into the center of cake comes out clean, about 30 minutes.
- Let cool somewhat. Best eaten warm. Top with Pecan Praline Sauce and whipped cream.
NUTTY PUDDING SURPRISE
This wonderful no-bake (crust needs baking) pie is perfect for holidays or any celebrations throughout the year.

- Preheat oven to 350 F degrees F. Spray a 9x13 inch baking dish with cooking spray.
- In a mixing bowl, mix the crust ingredients (nuts, white sugar, flour and butter) together and press the mixture into the prepared baking dish. Bake for 20 minutes.
- Prepare the vanilla pudding using half of the milk.
- Prepare the chocolate pudding using the remaining milk.
- In another mixing bowl, combine the cream cheese, powdered sugar and one cup of whipped cream. Mix until light and fluffy.
- Into the cooled pie crust, spread the cream cheese mixture over the crust evenly. Top with the chocolate pudding over the cream cheese and then add the vanilla pudding. Spread the remaining whipped cream over the pudding mixture and sprinkle with the chocolate shavings.
- Refrigerate for a minimum of two hours. Serve on chilled plates.

- Preheat oven to 350°. Place flour in a small bowl; cut in butter until crumbly. Stir in 1/2 cup walnuts. Press onto bottom of an ungreased 13x9-in. baking dish. Bake until light golden brown, 12-15 minutes. Cool completely on a wire rack., In a small bowl, beat cream cheese and confectioners' sugar until smooth; fold in 1 carton whipped topping. Spread over crust. In a large bowl, whisk milk and pudding mix for 2 minutes. Gently spread over cream cheese layer. Top with remaining whipped topping. Sprinkle with chocolate chunks and remaining walnuts. Refrigerate until cold., Cut into bars. Just before serving, drizzle with chocolate syrup.

OLD FASHIONED DATE PUDDING
My mother-in-law always whipped up this old-fashioned dessert at Thanksgiving and Christmas. My husband and I enjoy the chewy dates and sweet thick syrup drizzled on top. It's impossible to resist a second helping.

- In a saucepan, bring 1 cup brown sugar and water to a boil. Cook and stir for 3 minutes. Remove from the heat and add butter; set aside. In a bowl, combine the flour, baking powder, salt and remaining brown sugar. Stir in milk until smooth. add dates and walnuts., Pour hot brown sugar syrup into an 8-in. square baking dish. Spoon batter over syrup. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center of cake topping comes out clean. Serve warm with whipped cream.
