- Preheat oven to 350 degrees F (175 degrees C).
- Core each apple making a large well in the center and arrange apples on a rimmed baking sheet.
- Mix oats, brown sugar, and cinnamon together in a bowl; cut in butter until evenly combined. Spoon 1/4 of the oat mixture into each apple.
- Bake in the preheated oven until apples are tender and filling is bubbling, about 30 minutes.

BAKED APPLES WITH OATMEAL AND YOGURT

- Preheat the oven to 375 degrees F. Cut off the top third of each apple. With a small knife, and working from the top of each apple, carefully carve out a large "bowl," including the core, about 2 inches in diameter. Rub the cut part with lemon and put the apples into a 9-inch square baking dish. Dice the carved-out parts of the apples, without the seeds, and set aside. Melt the butter in a small saucepan, and then whisk in 4 tablespoons of the muscovado sugar, the cinnamon and pepper and cook until smooth. Brush the inside of the apples with the butter mixture. Pour the apple cider into the bottom of the baking dish. Cover the dish with foil and bake until the apples are tender, about 30 minutes. Remove the foil and bake for 5 minutes longer. Transfer the apples to a platter. Carefully strain the cooking liquid into a small saucepan and bring it to a boil. Cook until it is reduced and thickened, about 5 minutes. While the apples are baking, stir the hot milk, remaining muscovado sugar, reserved chopped apples and orange zest into the warm oatmeal and cook for a few minutes. Divide the oatmeal among the baked apples. Top each apple with a dollop of yogurt and drizzle the reduced cider over the top.

APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

- Preheat oven to 350 degrees F (175 degrees C).
- Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.
- Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the apples to the edges of the baking dish. Pat the topping gently until even.

OATMEAL APPLE DESSERT
This is a healthy alternative to fruit pie made with traditional pie crust. The oatmeal is in the bottom, the recipe is unique, unlike a cobbler or crisp. It has minimal fat, sugar, and flour. The oatmeal gives a nutty taste. This is not tremendously sweet. The recipe originated with my mom. I always use Macintosh apples because they are most juicy and I like a slight tart taste.

Steps:
- Mix the first five ingredients using your hand to a crumbly texture. Keep working the mix till the ingredients are integrated well. Grease a 9X9 metal baking pan, pour in the mix and press the mix tightly to the bottom. Be sure to fill the corners, leave no gaps, and try to get the mix slightly up the sides.
- Peel, core and thin slice the apples. Place apples on top of mix and press down slightly. Depending on the size of apples you may need to adjust the count to fill your pan to the top.
- Mix the water, cornstarch, 1/4 cup brown sugar and cinnamon. Bring to a boil to thicken and pour carefully and uniformly over the apples.
- Melt 1 T butter and mix with pecans. sprinkle very lightly with salt to taste.
- Sprinkle buttered chopped pecans on top.
- Bake at 325 degrees for one hour. This dish is best the next day.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
- In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
- Bake in the preheated oven for 40 to 45 minutes, or until golden brown.

- Preheat oven to 350 degrees.
- Spray at 9 x 13-inch baking dish with non-stick spray.
- Peel apples and slice into wedges and sprinkle with cinnamon.
- In sauce pan combine cornstarch, cold water and sugar. Heat on medium high heat to a boil stirring continually. Mixture will become a thick syrup. Remove from heat.
- Mix flour, brown sugar, oatmeal and butter together by hand. Press half of mixture into the bottom of the prepared pan. Place apples evenly on top. Pour syrup over apples. Then top with remaining oatmeal mixture to make crumbs.
- Bake for 50 minutes.

My twin girls can give me double trouble when I try to feed them breakfast. But whenever I make this recipe, they always have big helpings. They also like to help pick the apples from the trees in our own backyard.
