Low-Fat Banana Oatmeal Chocolate Chip Muffins image

I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

3 large bananas, mashed
1/2 cup white sugar
1 egg, beaten
1 teaspoon baking soda
1 teaspoon baking powder
1 cup flour (you can use whole wheat for a change if you like)
1/2 cup rolled oats (instant is fine)
1/3 cup applesauce
1/2 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Add sugar to mashed bananas and mix.
  • Add beaten egg and mix.
  • In a separate bowl mix all dry ingredients.
  • Add dry ingredients to the banana mixture and mix well.
  • Mix in applesauce.
  • Add chocolate chips and Stir.
  • Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
  • Bake for 20-25 minutes at 350.
  • Enjoy!

1 1/2 teaspoons baking powder

2 large eggs
1/4 cup canola oil
1/4 cup milk
3 bananas, mashed
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with paper or silicone liners, or lightly spray with cooking spray.
  • In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, and salt.
  • In another bowl whisk together the eggs, oil, milk, and mashed bananas.
  • Pour the wet ingredients into the dry and stir until just combined. Fold in the chocolate chips.
  • Divide the batter between the muffin cups, they will be quite full.
  • Bake for 16-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

1 ½ cups whole wheat flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ cup semi-sweet chocolate chips
2 large eggs
½ cup unsweetened applesauce
¼ cup skim milk
1 cup mashed banana

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
  • Stir whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips together in a bowl. Make a well in the center. Whisk eggs in a separate bowl until frothy; mix applesauce, skim milk, and banana into eggs. Pour moist ingredients into well made in dry ingredients; stir just to moisten. Batter will be lumpy. Fill prepared muffin cups about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of several muffins comes out clean, 16 to 18 minutes. Cool in pan for 5 minutes before removing to finish cooling on wire racks.

1 ½ cups all-purpose flour
¾ cups old fashioned rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon salt
2 large eggs
½ cup sugar
½ cup brown sugar
½ cup canola oil, (or another flavorless oil, or even coconut oil)
2 teaspoons vanilla extract
1 cup mashed bananas, (about 2 large or 3 medium)
1 cup chocolate chips, ((milk, dark, a mix of both, whatever you like!))

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  • Whisk together the flour, oats, baking soda, powder, salt and cinnamon in a bowl.
  • In a large bowl, whisk together the eggs and sugars until combined. Whisk in the oil and vanilla extract until combined. Whisk in the mashed bananas.
  • Stir in the dry ingredients with a spoon until just combined - do not overmix. Stir in the chocolate chips.
  • Fill the muffin tins about ¾ of the way full. Bake the muffins for 18 to 20 minutes, or until set in the center. Let cool before serving!
