OATMEAL BREAKFAST COOKIES RECIPE (ONE BOWL)
This Oatmeal Breakfast Cookies Recipe is my kids' favorite breakfast cookie recipe. The cookies are egg-free, with dairy-free and vegan options. Stir together the dough in one bowl for this easy recipe. This is a great recipe for kids to help with in the kitchen!

Steps:
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats.
- In a bowl, stir together the flaxseed and water. Let it sit for 3 minutes.
- Add the applesauce, honey, cinnamon, vanilla, baking soda and salt. Stir together until everything is well mixed.
- Add the oats and whole wheat flour and stir to mix them in.
- Stir in the chocolate chips or other mix-ins.
- Use a spoon to scoop tablespoon-sized balls of dough and place them on the baking sheet. You can place them close together because the cookies will not spread.
- Bake the cookies for 10-11 minutes, until they are slightly golden brown.

- Preheat oven to 325 degrees Fahrenheit.
- In a large bowl, combine all the ingredients together
- With a large ice cream scoop or ¼ cup measurer, scoop out cookie dough and place it on a parchment lined baking sheet.
- Flatten each cookie with a spoon. They do not flatten on their own, so they need to be flattened before baking.
- Bake for 15-18 min or until edges are slightly brown.

- Grind 2 1/4 cups oats in a food processor to yield 2 cups ground oats. Add walnuts, raisins, flax seeds, cinnamon, baking powder, and salt. Stir in remaining 1 cup oats. Stir thoroughly with a spoon, but do not grind further.

- Position the racks in the upper and lower third of the oven. Preheat the oven to 375 degrees F. Line two large baking sheets with parchment paper.
- Combine the oats, peanuts, strawberries, pepitas, flour, baking soda and salt in a medium bowl and mix well. In a stand mixer fitted with the paddle attachment, beat the peanut butter with the sugar until smooth. Beat in the eggs one at a time. Beat in the vanilla.
- With the machine on low speed, gradually add the dry ingredients and mix until incorporated. Turn the machine off and add the strawberry preserves all at once. Mix on low speed just until the preserves are swirled into the dough, about 5 seconds; do not over mix.
- Scoop the dough onto the prepared baking sheets with a 3-tablespoon cookie scoop, making 20 cookies and leaving 2 inches between each. Press down on the cookies with a fork to flatten them slightly.
- Bake until the cookies are slightly risen and very lightly browned on the edges, 13 to 15 minutes; rotate the baking sheets halfway through baking. Let cool before serving.
OATMEAL RAISIN BREAKFAST COOKIES
Lately I struggle to eat breakfast in the morning. These are so yum and three of them keep me full until lunch easily. I got the base recipe from Eatingwell.com but tailored it to my own tastes.

Steps:
- Mix tahini and apple sauce together with an electric beater.
- Add brown sugar and mix well for 1-2 minutes.
- Add the whole egg and keep mixing.
- Add the egg white and vanilla essence and mix well
- In a seperate bowl wisk all the dry ingredients together.
- Add raisins and nuts.
- Add the dry ingredients to the wet ingredients stirring until just moist.
- Scoop onto a cookie sheet and flatten with a fork.
- Bake at 375 F for 12-16 minutes each or until just golden.
CHUNKY BREAKFAST COOKIES
Steps:
- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and egg yolk. In another bowl, mix oats, flours, baking soda and salt; gradually beat into creamed mixture. Stir in remaining ingredients., Shape 1/4 cupfuls of dough into balls; flatten to 3/4-in. thickness. Place 2 in. apart on ungreased baking sheets., Bake 13-15 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool. Serve warm or at room temperature. To reheat, microwave each cookie on high for 15-20 seconds or just until warmed. Freeze option: Freeze unbaked cookies in a freezer container, separating layers with waxed paper. To use, place dough portions 2 in. apart on ungreased baking sheets; let stand at room temperature 30 minutes before baking. Bake as directed, increasing time by 1-2 minutes.

- Preheat the oven to 350. Don't grease the baking sheets.
- Put the shortening, sugars, coffee, and egg in a mixing bowl and beat until smooth and blended. Add the oats, flour, salt, and baking soda. Stir very well so the dough is well mixed.
- Spread the All Bran cereal out on a piece of waxed paper. This is a sticky dough, so wet your fingers with cold water before pinching off about 2 tablespoons of dough at a time and rolling it in the All Bran. Don't worry if you can't get a heavy coating of cereal on each piece of dough; if just a little of the All Bran sticks, it will give a nice texture to the cookies.
- Place the dough pieces about 1 1/2-inches apart on the baking sheets. Bake 12-15 minutes. Remove from the oven and cool on racks.
