Steps:
- Preheat oven to 350 degrees with the rack in the middle position.
- Melt the butter in a large microwave safe bowl.
- Add the brown and white sugars and let cool a bit.
- Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
- Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
- With a spatula spread dough evenly into a greased 8x8 baking pan.
- Bake at 350 for 25- 30 minutes.
- Cut into bars when cool.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
- Beat butter, brown sugar, and white sugar in a bowl until creamy; beat in eggs until smooth. Stir pudding mix into creamed mixture, followed by vanilla extract. Whisk flour, baking soda, and salt together in a separate bowl and stir flour mixture into moist ingredients. Mix oats and chocolate chips into dough. Press dough into prepared baking pan.
- Bake in the preheated oven until lightly browned, about 25 minutes. Let cool before cutting into squares.

One of my favorite cookie bar recipes! These are gooey and moist (as long as they are not overbaked), and I love the combination of ingredients, sweet and somewhat spicy! I found the recipe on a travel and lodging directory. It is a specialty recipe of the Creekside Inn Bed and Breakfast in Paradise, Pennsylvania.

- In a small bowl, combine flour, baking soda and spices; set aside.
- In a large bowl, mix butter and brown sugar.
- Beat in the eggs and vanilla.
- Gradually add flour mixture and oats alternately while mixing on low speed.
- Stir in the raisins and chocolate chips by hand.
- Spread mixture into a greased 13x9-inch baking pan.
- Bake at 350° for 25-30 minutes (until almost firm, but still slightly soft in center).
- When cool, cut into bars.

- In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in sour cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into eggs; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in raisins. Cool to room temperature without stirring., Meanwhile, in a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. , Firmly press 3-1/2 cups of crumb mixture into a greased 13-in. x 9-in. baking pan. Spread with raisin filling.
