This is a very simple and excellent recipe. Goes great over pasta.

2 tablespoons unsalted butter
4 cloves garlic, chopped
1 ½ pounds large shrimp - peeled and deveined
½ cup tequila
½ cup chopped fresh cilantro
salt and pepper to taste

Steps:

  • Melt butter in a large skillet over medium heat. Saute garlic until light brown. Place shrimp in the pan, and cook for 3 minutes.
  • Pour in tequila, and season with cilantro, salt, and pepper. Cook for 2 more minutes.

I used to visit my friend Teresa in Brownsville, TX. We would cross the border to this open air vendor/food stand to eat this. The cook did not or could not hide her ingredients, so we know what was put in this dish. You can serve this with rice, beans, or make it into wraps. The ingredients are very forgiving, so feel free to increase or decrease the amount stated.

¼ cup butter
3 cloves garlic, chopped
1 ½ pounds medium shrimp - peeled and deveined
4 tablespoons tequila
3 tablespoons fresh lime juice
½ teaspoon salt
¼ teaspoon chili powder
¼ cup chopped fresh cilantro
1 lime, cut into wedges

Steps:

  • Melt the butter in a large skillet over medium heat. Add the garlic; cook and stir for about 30 seconds. Add shrimp; cook until they start to turn pink, about 3 minutes. Pour in the tequila and lime juice and season with salt and chili powder. Simmer until the liquid has evaporated, about 3 more minutes. Pour shrimps on a plate and garnish with cilantro. Serve with lime wedges.

1 1/2 pounds large shrimp in shell (21 to 25 per pound), peeled and deveined
1 teaspoon kosher salt
2 tablespoons unsalted butter
1/2 cup white or reposado tequila
3/4 cup crema or sour cream
1 scallion, thinly sliced
Accompaniment: rice

Steps:

  • Toss shrimp with kosher salt and 3/4 teaspoon coarsely ground pepper.
  • Heat butter in a 12-inch heavy skillet over medium-high heat until foam subsides, then sauté shrimp, turning, until pink and just cooked through, 3 to 5 minutes. Reduce heat and add tequila, then increase heat to medium-high. Tilt skillet over gas burner to ignite tequila (or ignite with a long match; use caution, as flames may shoot up high). Cook, shaking skillet gently once or twice, until flames subside. Remove from heat and stir in crema. Serve sprinkled with scallion.

2 tablespoons canola oil
1/4 cup diced green chilis
1 jalapeno pepper, minced
1/2 cup pickled cactus pieces, coarsely chopped (nopalitos)
1/4 cup minced onion
3 ounces tequila
1 tablespoon lime juice
1/2 cup orange juice
2 tablespoons neufchatel cheese
1 tablespoon egg substitute
1 teaspoon turbinado sugar
1/2 teaspoon salt

Steps:

  • Heat a skillet over medium high heat.
  • Add enough canola oil to coat, then add chiles, jalapeno, cactus, and onion.
  • Saute until onion starts to become transparent.
  • Turn off heat.
  • In a blender, combine tequila, lime juice, orange juice, cheese, egg substitute, sugar, and salt.
  • Blend until smooth.
  • Add blended mixture to skillet and reheat over low flame, stirring constantly.
  • Simmer (continuing to stir) until juice starts to thicken.
  • Serve over meat of your choice.

FOR THE MARINADE:
1/3 cup tequila
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lime juice
1 tablespoon minced garlic
1 tablespoon minced jalapeño pepper, with seeds
1 teaspoon ground coriander
1/2 teaspoon freshly ground black pepper
1 1/2 pounds large shrimp (32 shrimp), peeled and deveined
kosher salt
2 fresh limes, cut into wedges

Steps:

  • FOR THE MARINADE: In a small bowl whisk together the marinade ingredients. Place the shrimp in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 30 to 45 minutes. Remove the shrimp from the bag and discard the marinade. Thread the shrimp onto skewers and season with salt. Grill over Direct High heat until the shrimp are just opaque in the center and firm to the touch, 2 to 4 minutes, turning once halfway through grilling time.
