OATMEAL RAISIN COOKIES - VEGAN
From Joy of Vegan Baking. These are AMAZING!! In this recipe, the eggs are replaced with ground flax seeds. When using ground flax seed to replace eggs in a baking recipe, the ratio is always 1 TBSP flax seed to 3 TBSP water. Ground flax seed has a bit of a nutty flavor and it is best used in recipes like pancakes, waffles, muffins, breads and oatmeal cookies, and as an added bonus, flax seeds are the most concentrated source of omega-3 fatty acids.

Steps:
- Preheat oven to 350 degrees.
- Spray cookie sheets with non stick spray.
- In a blender, or using a wisk, whip together the flax seed and water until thick and creamy.
- Cream together margarine, sugars, vanilla and flax seed mixture until well blended.
- I another bowl mix flour, oat bran, baking soda, baking powder, salt, cinnamon and nutmeg.
- Add to the wet ingredients, and mix until well blended and smooth.
- Stir in rolled oats and raisins until thoroughly combined.
- Use a tablespoon to scoop up dough and lighty press cookies to form about 1/2" thick rounds.
- Bake cokies until golden brown, about 12-15 minutes.
- Remove from oven and let cool 3 minutes on the cookie sheet before transfering to wire rack to cool.

VEGAN OATMEAL RAISIN COOKIES
This recipe comes from I.C.Moskowitz's and T.H.Romero's wonderful vegan baking book: "Vegan Cookies Invade Your Cookie Jar". These are super easy to make and great for gift giving. I hope youll enjoy them! :) Ive also posted a healthified version of these in case youre looking for something more wholesome.

Steps:
- In a large bowl use a fork to vigorously mix together the non-dairy milk and flax seeds. Add in the sugar and oil and mix for about 2 minutes until it reaches a caramel colour. Mix in vanilla extract.
- Sift in flour, spices, baking soda and salt. Fold in oatmeal and raisins.
- Drop dough in generous tbs onto a paper-lined (or greased) baking sheet, about 2 inches apart. Flatten the tops a bit.
- Bake for 10-12 minutes in the preheated oven at 350°F/180°C.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

- In a stand-up mixer, with the paddle attachment, cream together the vegan butter with brown and granulated sugars until thick and creamy, scraping down the sides as necessary. Add applesauce and vanilla extract and beat to combine. The dough may look curdled at this point.
- In a large bowl combine oats, flour, baking soda, cinnamon, and salt. With the mixer on low, add the dry ingredients to the butter/sugar mixer in 3 batches, scraping down the sides of the bowl between each batch. Mix until a uniform dough has formed. Add the raisins and mix until they are well incorporated.

- In a dry skillet, toast the walnuts over medium heat, stirring or tossing them frequently. Toast for 4-5 minutes or until they start to turn golden brown and become fragrant. Remove the walnuts from the pan immediately and transfer them into a food processor. Pulse until the walnuts form a fine crumb.
- Add the following to the food processor: 1 cup of the oats, the flour, coconut sugar, baking soda, salt, and cinnamon. Pulse to combine until all ingredients are a fine crumb.
- Add the maple syrup, nondairy milk, softened coconut oil, vanilla extract, and molasses if using, and process until the mixture is as smooth as you can get it, stopping to scrape down the sides as needed.
- Transfer the dough to a mixing bowl and stir in the other 1 cup of rolled oats. You should expect the dough to be a little sticky, but if it's too sticky to handle add another tablespoon of flour. Finally, fold in the raisins.
