This is my husband's favorite breakfast treat and the ultimate comfort food. It's warm, filling and always a hit when I serve it to guests. -Karen Schroeder, Kankakee, Illinois.

3 cups quick-cooking oats
1 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
2 large eggs, lightly beaten
1 cup fat-free milk
1/2 cup butter, melted
3/4 cup chopped peeled tart apple
1/3 cup chopped fresh or frozen peaches
1/3 cup fresh or frozen blueberries
Additional fat-free milk, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. Combine eggs, milk and butter; add to the dry ingredients. Stir in apple, peaches and blueberries. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, until a knife inserted in center comes out clean, 35-40 minutes. Cut into squares. Serve with milk if desired.

3 cups Quaker® Oats (Quick or Old Fashioned, uncooked)
2 tablespoons brown sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
⅛ teaspoon salt
1 cup nonfat milk
1 teaspoon vanilla extract
2 egg whites, beaten
6 tablespoons finely chopped apple with peel

Steps:

  • Heat oven to 350 degrees F.
  • In large bowl, stir together oats, brown sugar, baking powder, cinnamon, and salt. Combine well. In separate bowl stir together milk, vanilla, and egg whites. Add to oat mixture. Stir to combine well. Let stand about 5 minutes until liquid is absorbed.
  • Coat 6 muffin pan cups with nonstick spray. Portion oat mixture evenly into cups. Top each with 1 tablespoon apple, pressing lightly.
  • Bake 20 minutes or just until firm. Let stand in pan on wire rack 5 minutes. Serve warm or at room temperature. Refrigerate or freeze leftovers. Reheat in microwave oven on High 30 seconds to 1 minute or until heated as desired.

I took this out of my latest Easy Home Cooking magazine. It's a Quaker oatmeal recipe. I have been looking for an easy breakfast for my two little ones and this looks like a winner. I think any low fat yogurt would do nicely depending on the fruit you choose. Can't wait to try it!

3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 (8 ounce) container low-fat vanilla yogurt (or plain)
2 egg whites, lightly beaten
2 tablespoons vegetable oil
2 tablespoons nonfat milk
2 teaspoons vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups oats (quick or old fashioned)
1 cup diced dried mixed fruit (or raisins or dried cranberries)

Steps:

  • Heat oven to 350°F
  • In large bowl combine sugars, yogurt,egg whites, oil, milk and vanilla; mix well.
  • In medium bowl combine flour baking soda, cinnamon and salt; mix well.
  • Add dry ingredients to wet mix; mix well.
  • Stir in oats and dried fruit.
  • Spread dough onto bottom of ungreased 13x9 baking pan.
  • Bake 28-32 minutes or until golden brown.
  • Cool completely on wire rack.
  • Cut into bars.
  • Store tightly covered.

1/2 cup chopped fresh strawberries
1/2 cup chopped kiwi

Steps:

  • Mix yogurt and drink mix until blended; spoon over oats in 2 cereal bowls.
  • Refrigerate overnight.
  • Top with fruit just before serving.

I posted this recipe for DeSouter and want to share it here, too. It is an excellent and healthy breakfast bar. Enjoy it.

3 cups rolled oats
1 cup whole wheat flour
2 cups apple juice (no sugar)
1 teaspoon cinnamon
1/2 cup raisins
1 teaspoon vanilla
1 cup warm water
2 mashed bananas
1/4 cup dried apple, chopped
1/2 cup mixed fruit, diced
1/4 cup walnuts, chopped

Steps:

  • Mix oats, flour and apple juice in a large bowl until lumps are gone. Stir in cinnamon and raisins.
  • Mix vanilla in warm water; add to oat mixture; mix well. Stir in bananas, diced apples, fruit medley and walnuts.
  • Let stand 15 minutes and mix again.
  • Spray an 8 inch square pan with cooking oil and lightly flour pan.
  • Bake at 325ºF. for 1 hour. Cool and cut in bars.
  • NOTE: you can add 2/3 cup applesauce instead of the two mashed bananas, if you like.

Steps:

  • In a bowl, combine the first seven ingredients.
  • Store in an airtight container for up to 1 month.
  • To prepare oatmeal: In a deep microwave safe bowl, combine 1/2 cup oatmeal mix and 3/4 cup water.
  • Microwave, uncovered on high for 1 minute; stir.
  • Cook 30-60 seconds longer or until bubbly.
  • Let stand 1-2 minutes.
