Steps:

  • Bring a pot of water to a boil.
  • Cut hot dogs in half. To make the 'legs' of the octodog, make 3 cuts on 1 side of each hot dog, leaving about 1/3 the rounded top of the hot dog for the 'head'. Turn hot dog over and make 3 more cuts, so you have 8 'legs'.
  • Place the octodogs in the boiling water until cooked through and the 'legs' curl up, about 1 minute.

BRAISED OCTOPUS

1/2 cup extra-virgin olive oil
6 Garlic Cloves
12 small onions
2 cleaned octopus, about 1 1/2 pounds each
1 cup Taggascia olives
Peperonciono
2 Bay Leaves
Salt to taste
2 tablespoons chopped fresh Italian parsley

Steps:

  • Set the saucepan over low heat. Pour in 6 tablespoons of the olive oil. Scatter the onion in the bottom of the pan and add the garlic. Nestle the octopus on top of the onions. Scatter the olives over the octopus. Cover and let the octopus stew in its own juices for 1 hour.
  • Uncover the octopus, there should be a lot of liquid from the octopus in the pan. Cover and continue to stew over low heat until the octopus is very tender, about 45 minutes to 1 hour and 15 minutes more, depending on the size of the octopus. To test for doneness, stick a fork in the thickest part of the octopus, it is done if the fork slides out easily.
  • Remove the octopus from the pot and let cool slightly. Cut the octopus into 3/4-inch chunks, skin and all. Put the octopus chunks in the skillet and pour in the contents of the saucepan as well. Taste the sauce for salt (the octopus can be very salty) and add the salt, if needed. Get the sauce simmering rapidly over medium heat and stir in the parsley. You should have 2 cups or so of braising juices in the skillet. If there's much more than that, boil to reduce the sauce

1 lemon, halved, plus 1 lemon, halved
1 (3 pound) octopus, cleaned of beak and ink sac
3 tablespoons dried Greek oregano
1 tablespoon white wine vinegar
2 tablespoons Greek olive oil
1 teaspoon salt

Steps:

  • Bring a large pot of salted water to a boil. Squeeze in 1 lemon and add the rinds to the water. Holding the octopus with tongs, dip the octopus into the boiling water 3 or 4 times, until the tentacles begin to firm and curl. Then, submerge the octopus in the water and cook for 40 minutes, uncovered.
  • In a large bowl, mix the oregano, vinegar, oil, and salt together. Remove the octopus from the boiling water, place it into the oregano mixture, and let lightly marinate for a few minutes.
  • Heat the grill to medium high. Grill the octopus until browned and crisped on the edges, turning every 5 minutes for 15 minutes. Remove from the grill, place on a platter, and cut into pieces. Squeeze the lemon over the octopus and sprinkled with some dried oregano.

Steps:

  • Cut wieners lengthwise in half, starting each cut about 1 inch from 1 end of each wiener. Roll each wiener one-quarter turn and cut a second lengthwise cut, again starting about 1 inch from uncut end. (This will form the 4 legs of each octopus.) Use sharp knife or kitchen shears to cut each leg lengthwise in half, about 1 inch from uncut end, creating a total of 8 legs in each wiener. Poke 2 holes into the uncut portion of each wiener for the eyes.
  • Prepare Dinner as directed on package. Meanwhile, add wieners to separate saucepan of boiling water; cook as directed on package, watching each wiener turn into an octopus right before your eyes.
  • Spoon Dinner into 4 serving bowls; top each with a wiener octopus.

3 pounds cleaned octopus
1 bay leaf
4 thyme branches
20 peppercorns
1 teaspoon salt, plus to taste
1 head garlic, cut in half along its equator
3 lemons
3 tablespoons extra virgin olive oil
Freshly ground black pepper to taste
Minced parsley for garnish

Steps:

  • Combine octopus, bay leaf, thyme, peppercorns, 1 teaspoon salt, garlic and 1 lemon, cut in half, in saucepan along with water to cover. Turn heat to medium, cover, and bring to boil. Adjust heat so that liquid simmers slowly, and cook until octopus is tender, for 30 to 90 minutes, depending on whether you're using two smaller octopuses or 1 larger one (check for doneness with point of sharp knife). Drain, discarding everything but octopus. (You can prepare this 24 hours in advance up to this point; cover, and refrigerate octopus.) Set aside.
  • Start charcoal or wood fire, or preheat gas grill; fire should be quite hot. Grill rack about 4 inches from heat source. Cut octopus into large serving pieces, brush it with half the olive oil, and sprinkle it with salt and pepper. Grill it quickly until outside browns but inside is not dried out. Cut remaining lemon into wedges.
  • Brush octopus with remaining olive oil. Serve with lemon wedges, hot or at room temperature, garnished with parsley.
