OIL FREE GRANOLA RECIPE
This homemade granola recipe is an easy way to get a nutritious breakfast or snack! This version is oil free. It makes a great snack to take to work, or pack in school lunches! This version is made with old fashioned rolled oats, pumpkin seeds, walnuts, dried cranberries, and maple syrup.

Steps:
- Heat a medium sized skillet to medium heat. Pour oats into pan and toast for about 3-5 minutes. Toss the oats around with a wooden spoon or silicone spatula being sure not to burn the oats..
- Add walnuts and pumpkin seeds to pan. Continue to toast mixture for another 3-5 minutes. Toss the mixture around being sure they don't burn.
- Stir in cinnamon and salt.
- Reduce heat to low; add maple syrup and stir constantly until maple syrup is absorbed and mixture becomes dry, about 3 minutes. If you want your granola to have clusters, be careful not to over mix. If you prefer a muesli or cereal texture, stir to break up any clusters.
- Pour granola mixture onto a baking sheet to cool.
- When granola has cooled, add dried fruit and/or any other toppings.

AQUAFABA GRANOLA (OIL-FREE!)
An easy-to-make vegan, gluten-free granola made oil-free thanks to aquafaba! Just 9 ingredients and simple methods required. A delicious, naturally sweetened breakfast or snack!

- Preheat oven to 325 degrees F (162 C) and line one baking sheet (or more as needed) with parchment paper.
- To a large mixing bowl, add the oats, nuts, coconut, chia seeds, coconut sugar, salt, and cinnamon. Stir to combine.
- Add aquafaba (chickpea brine) to a mixing bowl and use an electric mixer to whip into loose peaks (see photo). This can take up to 10 minutes, usually 5. (If it has trouble blending, add a little cream of tartar to help peaks form.)
- Add maple syrup and vanilla (optional) to the aquafaba and beat for 30 seconds more. Pour the aquafaba mixture over the dry ingredients and fold to coat (see photo).
- Spread the mixture evenly onto a parchment-lined baking sheet(s) and bake for 28-35 minutes (or until fragrant and deep golden brown). Stir a bit near the halfway point and flip the pan around to ensure even baking.
- Let cool completely. Then add dried fruit (optional) and toss. Place in a container that has an airtight seal and it should keep for 2-3 weeks at room temperature. Store in the freezer up to 3 months (sometimes longer).

- Preheat the oven to 375F.
- Combine all the ingredients in a mixing bowl.
- Stir to evenly coat all the dry ingredients.
- Spread on a baking pan lined with parchment paper.
- Press it into a rectangle about 1/4 inch thick.
- Bake for 10 mins at 375F until the edges are just staring to brown. Do not stir it.
- Remove from the oven. Let it cool for at least 30 mins before stirring or moving or touching.
- Then break apart into chunks.
- Store in an airtight container for up to 5 days.

- Preheat the oven to 320ºF or 160ºC.
- Mix the dry ingredients in a big bowl (rolled oats, chopped almonds, chopped dates, Goji berries, sunflower seeds and ground cinnamon).
- In a saucepan, heat the wet ingredients (water, vanilla extract and maple syrup) for about 2 minutes. Pour over the dry ingredients and mix well.
- Spread the granola onto a baking tray and bake for 25 minutes or until golden brown, stirring every 10 minutes to get a more crumbly granola.
- Remove from the oven and allow the granola to cool completely. Store in an airtight container at room temperature for up to 3 weeks.

- Preheat oven to 350˚F and line a baking sheet with parchment paper.
- Put all the dry ingredients into a large bowl and mix everything together.
- Pour the wet ingredients evenly over the dry oat mixture and toss until everything is well covered and combined.
- Spread the granola evenly over the baking sheet and bake for 35-40 minutes until its golden. But, be careful not to let it burn. Gently toss the granola halfway through the cooking process.
- Once the granola is done baking remove it from the oven let it cool for 15-20 minutes.
- Store in airtight container or jar until you're ready to enjoy.

- Mix oats and salt in a bowl, then set aside.
- Whiz water, honey, walnuts, and vanilla in a blender until smooth.
- Pour contents of blender into dry ingredients.
