Number Of Ingredients 8

Ingredients

20 small okra pods
1 cup(s) buttermilk
3/4 cup(s) all purpose flour
1/4 cup(s) cornmeal
1 teaspoon(s) baking powder
1/2 teaspoon(s) salt and pepper
- a few dashes of hot sauce.
- oil for deep fryer

Steps:

I use my cast iron deep fryer for this.You can use any deep fryer. Maintain oil temp between 325 and 350. Clean okra and remove stems. Dry okra, In a shallow bowl add the buttermilk,a few dashes of hot sauce and okra set a side for at least a 1/2 hour.
In another dish mix,all dry ingreadents.(I add a little red pepper flakes also.Mix very well. remove okra from buttermilk and roll in cornmeal,flour mix. Drop into hot oil(be very carful so as not to get burnt) Fry 3-5 minutes. Turning once. Drain on papper towl...

Ingredients

1 tablespoon vegetable oil
5 cloves garlic, minced
5 fresh red chili peppers, chopped
10 uncooked shrimp - peeled, deveined, and cut in half
10 fresh okra pods, sliced diagonally
1 teaspoon belacan (Malaysian chili-shrimp paste)
2 teaspoons light soy sauce
2 tablespoons water

Steps:

Heat the vegetable oil in a wok or skillet over medium-high heat; cook and stir the garlic until fragrant, about 1 minute. Stir in the red chilies, shrimp, okra, and belacan, and cook and stir until the chilies begin to soften and the shrimp start to turn opaque and pink, about 2 minutes. Pour in light soy sauce and water, and cook and stir until the okra are tender and sticky, 2 to 4 more minutes.

Add oil to the pressure cooker and choose "saute." Once the oil is hot, add the meat and sear it for a few minutes. Add onion and garlic and saute a few minutes longer.
Dissolve tomato paste into 3½ cups of hot water and stir in lemon juice. Pour into the pressure cooker and stir to incorporate the ingredients.
Next, add the diced tomatoes and okra, stir once more. Lock the cover into place and set the vent to "Seal." Select "Pressure Cook" and set the time to 20 minutes. Prepare the vermicelli rice while the okra stew is being cooked.
